The Food Patrol gets to tag along with McAllen's chief health inspector for a behind-the-scenes look at his work.
Lupe Flores is known to be a pro when it comes to keeping the public safe.
He knows inspections are the primary line of defense against dirty dining.
Action 4's Ryan Wolf meets up with the inspector during a follow-up visit at Dejarvis Taco off South 10th Street and Dallas in McAllen.
Flores checks some of the 27 areas on an inspection as outlined by the Texas Food Establishment Rules.
He believes proper hand-washing is most critical to public health.
"It's important to wash your hands especially using the restroom and all that," he said.
Categories of inspection include temperature, personnel and facility requirements.
Insect and rodent contamination only account for 3 demerits each.
Flores says he will still shut a restaurant down with either violation because they can the contamination can harbor disease.
"If we find somebody with roaches or rodents we try to close them immediately and ask them to take corrective action," he explained.
Flores doesn't buy the excuse he often hears on Food 4 Thought from a restaurant owner or management who claims roaches are everywhere and not a big deal.
He says it's a restaurant's obligation to do routine pest control.
"I see it all the time on TV where they say 'well, they have them everywhere,'" he explained. "Well, I'm in restaurants all the time and some are bad, others, I look... And I don't find any."
Inspectors are like the cops of kitchens.
Tickets can be issued to repeat health code offenders.
Flores doesn't take that responsibility lightly.
"It's important because it's food safety and somebody could get sick," he said.
He also knows some restaurants will try to butter up to inspectors by offering free food or drinks.
Flores avoids any potential conflict by not accepting anything.
The city also rotates inspectors semi-annually.
"We're in one area and then we get switched to another area so you don't get to familiar with the business owner," Flores explained.
Restaurant owners who are ticketed face potential hefty fines.
But Flores knows there's another unwritten penalty for those who can't keep it clean.
"Food 4 Thought, I think, has opened eyes," he said. "I've seen where the program picks up a business and it can also bring it down. If you want to be on the up and up, keep your restaurant in shape."
Dejarvis Taco makes good on housekeeping and equipment corrections.
Flores likely won't return for another couple of months.
But the job of an inspector is never done, as the quest to keep it clean continues at every kitchen across the city.

Newham food hygiene officer Matt investigates 'beds in restaurants' - the alarming practice of workers sleeping in kitchens. He has found 12 cases of people living in kitchens in the past few years. Jenny, from the Chartered Institute for Environmental Health, says that anyone sleeping in a kitchen presents a health risk to any customer.
It is estimated that there are more than one million cases of food poisoning every year in the UK. And almost half of these are the result of dodgy cooking by family and friends. Chris visits the Brixton home of Dave and Rich, who are cooking that Great British favourite, a roast lamb dinner, for their friends.
Our resident expert Ben casts his eye over the kitchen and offers advice on how to cook the lamb and vegetables safely. Lamb can contain E. coli on its surface but properly searing the outside of the meat will kill any bacteria on the surface.
But when Ben inspects the fridge he finds cheddar cheese which is way past its sell-by date, mouldy mushrooms and a bag of salad which is swimming in water, all of which need to be binned.
Matt visits a farmers' market in Taunton, Somerset, along with Carol, the head of training at the Chartered Institute of Environmental Health. Matt meets some of the stallholders and quizzes them on the lengths they go to in order to store and sell their produce safely.
And he visits a farm in Devon, where artisan producer Donna has been rearing her pigs for nine years. She also makes pork salamis which are dried and not cooked. Matt tries his hand at making a salami sausage and learns about the ingredients Donna uses to preserve the meat.

Environmental health officer
Environmental Health Officers (also known as Public Health Inspectors) are responsible for carrying out measures for protecting public health, including administering and enforcing legislation related to environmental health and providing support to minimize health and safety hazards. They are involved in a variety of activities, for example inspecting food facilities, investigating public health nuisances, and implementing disease control. Environmental health officers are focused on prevention, consultation, investigation, and education of the community regarding health risks and maintaining a safe environment.
EHOs bring to the position an understanding of microbiology, risk assessment, environmental science and technology, food science, as well as the skills and knowledge related to the tracking and control of communicable disease. They must also have strong investigative skills and a thorough understanding of the application of legislation related to public health and the environment. Working in partnership with Government Ministries (such as Health, Agriculture and Environment), local municipalities, businesses, community groups, other agencies and individual members of the community, the EHO plays a major role in protecting public health.

Larry the Cable Guy
Daniel Lawrence "Larry" Whitney (born February 17, 1963) known by his stage name and character Larry the Cable Guy, is an American stand-up comedian, actor and former radio personality. Despite his stage name, he has never worked for a cable company.
He was one of the members of the Blue Collar Comedy Tour, a comedy troupe which included Bill Engvall, Ron White, and Jeff Foxworthy (with whom he has starred on Blue Collar TV).
Larry has released seven comedy albums, of which three have been certified gold by the RIAA for shipments of 500,000 copies. In addition, he has starred in three Blue Collar Comedy Tour–related movies, as well as in the films Larry the Cable Guy: Health Inspector, Delta Farce, and Witless Protection, as well as voicing Mater in the Cars franchise. Whitney's catchphrase: "Git-R-Done!" is also the title of his book.
On January 26, 2010, the TV channel History announced that it was ordering a series starring Whitney called Only in America with Larry the Cable Guy, in which he would explore the country and immerse himself in different lifestyles, jobs and hobbies. The first episode of the series aired on February 8, 2011. The series finale aired August 28, 2013.

Jenny, from the Chartered Institute for Environmental Health, says that anyone sleeping in a kitchen presents a health risk to any customer. It is estimated that there are more than one million cases of food poisoning every year in the UK. And almost half of these are the result of dodgy cooking by family and friends. Flores checks some of the 27 areas on an inspection as outlined by the Texas Food Establishment Rules.

"It's important to wash your hands especially using the restroom and all that," he said.
Categories of inspection include temperature, personnel and facility requirements.
Insect and rodent contamination only account for 3 demerits each.
Flores says he will still shut a restaurant down with either violation because they can the contamination can harbor disease.
"If we find somebody with roaches or rodents we try to close them immediately and ask them to take corrective action," he explained.
Flores doesn't buy the excuse he often hears on Food 4 Thought from a restaurant owner or management who claims roaches are everywhere and not a big deal.
He says it's a restaurant's obligation to do routine pest control.
"I see it all the time on TV where they say 'well, they have them everywhere,'" he explained. "Well, I'm in restaurants all the time and some are bad, others, I look... And I don't find any."
Inspectors are like the cops of kitchens.

Flores doesn't take that responsibility lightly.
"It's important because it's food safety and somebody could get sick," he said.

And he visits a farm in Devon, where artisan producer Donna has been rearing her pigs for nine years. She also makes pork salamis which are dried and not cooked. Matt tries his hand at making a salami sausage and learns about the ingredients Donna uses to preserve the meat.

"We're in one area and then we get switched to another area so you don't get to familiar with the business owner," Flores explained.
Restaurant owners who are ticketed face potential hefty fines.
But Flores knows there's another unwritten penalty for those who can't keep it clean.
"Food 4 Thought, I think, has opened eyes," he said. "I've seen where the program picks up a business and it can also bring it down. If you want to be on the up and up, keep your restaurant in shape."
Dejarvis Taco makes good on housekeeping and equipment corrections.
Flores likely won't return for another couple of months.
But the job of an inspector is never done, as the quest to keep it clean continues at every kitchen across the city.

Newham food hygiene officer Matt investigates 'beds in restaurants' - the alarming practice of workers sleeping in kitchens. He has found 12 cases of people living in kitchens in the past few years. Jenny, from the Chartered Institute for Environmental Health, says that anyone sleeping in a kitchen presents a health risk to any customer.
It is estimated that there are more than one million cases of food poisoning every year in the UK. And almost half of these are the result of dodgy cooking by family and friends. Chris visits the Brixton home of Dave and Rich, who are cooking that Great British favourite, a roast lamb dinner, for their friends.
Our resident expert Ben casts his eye over the kitchen and offers advice on how to cook the lamb and vegetables safely. Lamb can contain E. coli on its surface but properly searing the outside of the meat will kill any bacteria on the surface.
But when Ben inspects the fridge he finds cheddar cheese which is way past its sell-by date, mouldy mushrooms and a bag of salad which is swimming in water, all of which need to be binned.
Matt visits a farmers' market in Taunton, Somerset, along with Carol, the head of training at the Chartered Institute of Environmental Health. Matt meets some of the stallholders and quizzes them on the lengths they go to in order to store and sell their produce safely.
And he visits a farm in Devon, where artisan producer Donna has been rearing her pigs for nine years. She also makes pork salamis which are dried and not cooked. Matt tries his hand at making a salami sausage and learns about the ingredients Donna uses to preserve the meat.
