Did the nargisi kofte (egg wrapped in mince so that when it is cut it resembles the petals of the nargis flower) inspire the Scotched Eggs, or vice versa? Is the aloo tikki inspired by the cotoletta/cutlet/croquette, made of lamb, veal and fish?....

Light meals. Most of the pizzas we relish tend to have a fat (almost obese) crust, and are strewn with the most unlikely of vegetable combinations ... Beginning with the antipasti, dishes like ‘Insalata di asparagi bocconcini alle olive’ are worth a try ... A lighter dish is the ‘Cotoletta di pollo alla parmigiana’ – the spaghetti pomodoro is to die for as it is accompanied by chicken parmigiana and mozzarella ... ....

But I spent too much time working in restaurants to deliver conscience-free slammers, so my default mode is to look, like an overfed Pollyanna, for things to make us glad ... Still, as I munch my way through a cardboardy cotoletta alla Palermitana (basically an even duller version of the ubiquitous breaded veal), I’m trying to think positive ... If there's a problem with classic breaded cutlet/escalope dishes like wiener schnitzel and cotoletta alla milanese, it's that they're too elegant. The meat - generally veal - is tender and well trimmed, and if a cook isn't careful it can be on the dry side. It can also be bland. The real appeal lies in the crisp breadcrumb coating and in the flavor of the frying fat - which in a perfect world will be clarified butter ... ....
