Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on YouTube.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Okonomiyaki med svamp, räkor & tonkatsusås
2 portioner
100 g vitkål, strimlad
100 g ostronskivling eller king oyster, skuren i bitar
3 ägg
1 dl vetemjöl
1 dl mjölk
1 nypa bakpulver
1 tsk salt
nymald svartpeppar
Topping
2 msk majonnäs eller QP majonäs
2 msk tonkatsusås
Kolstrimlor
1 dl msc certifierade räkor
2 salladslökar, finskurna
½ dl bonitoflingor
1 klippt noriark
Tonkatsusås
ca 1 dl
1/2 dl worchestershiresås
2 msk ostronsås
2 msk soja
2 msk mirin
1 msk risvinäger
1 msk tomatpure
1 msk ljus sirap eller honung eller björksocker
1 nypa chilipulver gärna shichimi togarashi

Koka alla ingredienser ca 10-15 minuter på mellan värme tills det tjocknar. Förvara i kyl, såsen klarar sig cirka 1 månad i kylen om den är väl förpackad.
Gör en pannkakssmet av mjöl, bakpulver, mjölk, ägg och salt. Blanda i kålen så att den blir mjuk i pannkakssmeten. Börja med att steka svampen gyllenbrun. Stek kålsmeten gyllenbrun på båda sidorna och toppa pannkakorna med tonkatsusås, majonnäs, salladslök, svamp, bonitoflakes och klippt nori.

キャベツ焼きを焼いて13年の店長の職人技は必見です。もっとも忙しい日には1日約3000枚も焼いたことがあるそうです。
100%国産の安心なキャベツを手入れの行き届いた包丁で1つずつリズミカルに千切りしています。機械でなく、人が切る事によってキャベツの甘みがでるようです。生地は“モチモチ”たまごは“フワッ”と美味しい大阪名物のキャベツ焼きです。
