Souring is a cooking technique that uses exposure to an acid to effect a physical and chemical change in food. This acid can be added explicitly (for example, in the form of vinegar, lemon juice, lime juice, etc.), or can be produced within the food itself by a microbe such as Lactobacillus.

Souring is similar to pickling or fermentation, but souring typically occurs in minutes or hours, while pickling and fermentation can take a much longer time.

David Usher (born April 24, 1966) is a British-born Canadian singer-songwriter. Formerly the frontman for the alternative rock band Moist, he embarked on a solo career beginning in 1997 and has released seven solo albums to date.

David Usher was born in Oxford, England to a Thai Buddhist, artist Samphan Usher, and a Jewish Montrealer, Dan Usher, who is a professor of economics at Queen's University. He has lived in various places such as Malaysia, New York City, California and Thailand since early childhood, before his family settled in Kingston, ON. He attended high school at Kingston Collegiate and Vocational Institute. Usher attended Simon Fraser University in Burnaby, British Columbia, majoring in political science. His degree would later influence his music career. Usher is a humanist, and has been involved in such causes as War Child Canada, White Ribbon Campaign and Amnesty International. Usher is featured in the acclaimed 2001 MuchMusic special Musicians in the WarZone, a humanitarian documentary produced by War Child Canada, directed by filmmaker Liz Marshall. In it Usher journeys to the northern border of Thailand to visit a large Burmese refugee community.

Martin Lee (born 8 June 1938), QC, SC, JP, is a Hong Kong political activist, lawyer and former legislator. He was the founding chairman (1994–2002) of the Democratic Party in Hong Kong. He was a directly-elected Member of the Legislative Council of Hong Kong (LegCo) for the Hong Kong Island geographical constituency. Professionally he is a barrister-at-law, the first on the order of precedence of Senior Counsels in Hong Kong.

Lee has been prominent figure of the Hong Kong democracy movement on the international stage, especially in the United States. He is a controversial figure in Hong Kong. To human rights activists he has been labelled the "Father of Democracy" in Hong Kong. To Beijing officials, he has been labelled a "running dog of the colonialists".

After being a member of the Legislative Council for 23 years, Lee announced on 27 March 2008 that he would not seek re-election when his term ended in September of that year.

Lee was born in Hong Kong, the sixth of seven children, and raised in Guangzhou, China. He is the son of a former Kuomintang major general. After he graduated from Wah Yan College, Kowloon, Lee obtained his undergraduate BA degree in Philosophy at the University of Hong Kong. After graduation, he worked as a teacher for three years. He then studied law at Lincoln's Inn in London.

Stephen Ira "Steve" Cohen (born May 24, 1949) is the U.S. Representative for Tennessee's 9th congressional district, serving since 2007. He is a member of the Democratic Party. Tennessee's 9th district includes almost three-fourths of Memphis. Cohen is Tennessee's first Jewish congressman.

Cohen was born in Memphis, Tennessee on May 24, 1949, the son of Genevieve (née Goldsand) and pediatrician Morris David Cohen. He has two older brothers, Michael Corey and Martin D. Cohen. He is a fourth-generation Memphian, and is a grandson of Jewish immigrants from Lithuania and Poland. His immigrant grandfather owned a newsstand. Cohen contracted polio when he was five, and the disease caused him to shift his attention from sports to politics at an early age. When Cohen was eleven, John F. Kennedy made a campaign stop in Memphis, and Cohen took a picture of Kennedy sitting on a convertible. Cohen describes Kennedy as his political hero; the picture still hangs in his office. In 1961, Cohen’s family moved to Coral Gables, Florida where his father received a fellowship in psychiatry at the University of Miami. From 1964 to 1966, the Cohen family resided in Pasadena, California where Dr. Cohen had a fellowship in child psychiatry at the University of Southern California. Cohen, who attended Polytechnic School, returned to Florida in 1966 to graduate from Coral Gables High School before returning to Memphis where his father established his private psychiatry practice.

Jennifer Lynn Lopez (born July 24, 1969) is an American actress, businesswoman, dancer and recording artist. Often referred to as J.Lo, she is reportedly the highest earning actress of Latin descent.
