Recipe 1 -
Munnar Chicken Curry
Ingredients
chicken – 2 pieces
coconut (roasted) – ½ cup
dried red chilly (for roasting & grinding) – 3 nos
oil – 3 spn
mustard – 1 tsp
garlic (chopped)- 2 tsp
ginger (chopped)- 2tspn
green chilly (chopped)- 4 nos
curry leaves- as required
garam masala (not powdered)- as required
dried red chilly – 3 nos
big onion (sliced)- 1 big
tomato (small pieces)- 2 small
ginger – garlic paste – 1 tbsp
turmeric powder – ¼ tspn
red chilly powder -1tsp
coriander powder -1 1/2tsp
garam masala- ½ tsp
pepper powder- ½ tsp
salt, water -as required
thick coconut milk- 1 cup
boiled tea leaf -1/4 cup
Directions
1.
Grind the coconut and dried chilly.
2.
Heat oil in a pan and splutter the mustard.
3.Saute the garlic, ginger, green chilly, curry leaves respectively.
4.Saute again with garam masala, red chilly, big onion, tomato and ginger-garlic paste.
5.Add turmeric powder,chilly powder,coriander powder and garam masala powder
6.Saute it with grinned coconut.
7.Add the chicken pieces into it.
8.Mix it with the boiled tea water.
9.
Cook it for 10 min with adequate water.
10.Add pepper powder and salt.
11.Add coconut milk and turn off the stove.
12.Lightly spread coconut oil on the top.
Recipe 2 -Kozhy Ada
Ingredients
bone less chicken – 5 big pieces
garam masala – 1 tspn
ginger-garlic paste -1 tspn
turmeric powder -1/
4 tspn
green chilly – 6 nos
kashmiri chilly powder -1 tbspn
curry leaves – 5 nos
scraped coconut (grind) – 1 cup
Directions
1.Grind the chicken with all ingredients.
2.
Spread the mix lightly on a banana leaf,like ada shape.
3.Heat a clay pot
4.
Fold the leaf and place it in the pot.
5.
Cover it with another banana leaf.
6.
Let it be cook for 10 mins.
