2 cups pineapple juice
1 cup brown sugar

Check out this snack I whipped up in the LBEB Kitchen today, it's guaranteed to kick your taste buds into full gear: Roasted bacon with maple syrup, cinnamon, and fresh brewed Kimera Koffee. With a little bit of salt, sweet, bitter, fat and protein in each bite, you'll get a rich taste of some of the flavors that built America.

150ml Maple Syrup
2tbs. BBQ Rub
Preparation:
Put the maple syrup into a bowl, season with the BBQ Rub (we used Hamburg Gunpowder from Ankerkraut) and mix well.
Peel the bananas, and cut them into 5 equal bite-sized pieces. Place the bananas in the marinade and let them chill in the fridge for 1 hour.
Halve the bacon strips, wrap each banana chunk with a piece of bacon and fix with toothpicks.
Put the bacon wrapped bananas on a baking tray and bake them for 15 minutes at 180°C / 356° F. After ten minutes, glaze them with the remaining marinade and cook for another 10 minutes.
Enjoy and stay tuned!

Preheat oven to 140°C fan-forced. Whisk the egg whites and cream of tartar in large bowl of an electric mixer. Gradually add the sugar until it has dissolved and the mixture is thick and glossy. Fold in cornflour and vinegar. Drop large spoonfuls of the mixture on trays. Make an indent in top of each with back of spoon. Bake at 110°C fan-forced and for 1 hour. Cool in oven with door ajar. Combine sugar, water, vanilla and lemon juice in a medium saucepan. Cook, stirring over low heat until the sugar dissolves. Increase heat, bring to the boil without stirring, and boil for 4-6 minutes until syrup reduced slightly. Put nectarines and peach in a bowl, pour over the syrup. Dollop cream on top of cooled pavlovas. Spoon over stone fruit and syrup.
Prep mins: 20 minutes
Cook mins: 40 minutes, plus cooling time
Servings: 10 individual pavlovas
Ingredients
6 egg whites, at room temperature
½ teaspoon cream of tartar
1½ cups Homebrand caster sugar
1 tablespoon Homebrand cornflour
1 teaspoon Homebrand white vinegar
Double thick cream, to serve
Syrup
1 cup Homebrand caster sugar
¼ cup water
1 teaspoon vanilla bean paste, optional
2 teaspoons fresh lemon juice
3 nectarines, cut into 1cm dice
1 peach, cut into 1cm dice
Directions:
1. Preheat oven to 140°C fan-forced. Line two oven trays with baking paper. Draw 5x10cm rounds on each sheet baking paper then turn paper pencil side down.
2. Whisk the egg whites and cream of tartar in large bowl of an electric mixer until stiff peaks form. Gradually add the sugar a spoonful at a time (this should take about 10-12 minutes) until it has dissolved and the mixture is thick and glossy. Fold in cornflour and vinegar using a large metal spoon.
3. Drop large spoonfuls of the mixture on the prepared trays, using rounds as a guide, allowing room for spreading. Make a indent in top of each with back of spoon, (this is to hold the topping).
4. Place trays in oven, reduce oven temperature to 110°C fan-forced and bake for 1 hour. Turn the oven off and leave the oven door ajar. Leave to cool for at least 1 hour.
5. Meanwhile, make the syrup. Combine sugar, water, vanilla and lemon juice in a medium saucepan. Cook, stirring over low heat until the sugar dissolves. Increase heat, bring to the boil without stirring, and boil for 4-6 minutes until syrup reduced slightly. Put nectarines and peach in a bowl, pour over the syrup. Stir to combine. Stand until ready to serve.
6. Dollop cream on top of cooled pavlovas. Spoon over stone fruit and syrup.
Tip1: To check if the sugar has dissolved properly into the egg white, grab some of the mixture between your fingers and rub them together. If you can feel grains, you need to keep whisking.
Tip2: You can pipe these into little meringue nests using a 1cm star nozzle on the baking tray if you like
Tip3: Rub the bowl of the mixer with the cut side of a lemon to ensure it is free of fat. Separate the eggs individually to avoid any yolks. If there is any yolk in your white they will not whip.

Lynn demonstrates how to make Crock Pot Ham. A great idea for dinner and leftovers for great sandwiches or casseroles.
7 pound ham, already cooked
2 cups pineapple juice
1 cup brown sugar
½ cup maple syrup
Unwrap ham and place in Crock Pot. (I always spray my Crock Pot with cooking spray)
Rub ham with brown sugar on all sides.
Pour pineapple juice and maple syrup over the ham.
Cover and cook for 4-5 hours on low.
About an hour before serving, baste with the juices over the ham.
Remove and let it rest for 10 minutes before carving.

Country Style Spare Ribs smoked on my Weber Smokey Mountain with Peach wood chunks. Glazed with homemade Peach Bhut Jalokia infused sauce. Made for some awesome tasting medium heat country style pork ribs.
I rubbed these ribs down with Bad Byrons Butt Rub and smoked them on the grates for 3 hours at 250 deg. then I put them in a deep aluminum pan poured a cup of apple juice in and covered the pan with foil. I let them cook for one hour then I sliced 2 Peach Ghost Peppers in half and put them in a shallow pan with a little bit of olive oil and some kosher salt. I set the pan in my smoker for about an hour, just long enough to get some smoke on them then I started making my glaze. I blended my ingredients and my 2 ghost peppers for 3 minutes then poured them in a pan and slowly, on low to medium heat I warmed my sauce, constantly stirring. Do not let this come to a boil.
After the 5th hour of being on the smoker I removed my ribs from the deep pan and put them on a pizza pan and brushed generously with my glaze and then put them back on the smoker for 1 more hour.
My glaze is a recipe I got from Myron Mixon's cookbook.
1 cup of light corn syrup
*1 cup of vinegar sauce
18 oz jar of Peach Preserves
* The vinegar sauce is made with:
2 cups cider vinegar
1 cup ketchup
1/2 your favorite hot sauce
2 tbls salt
2 tbls coarsely ground black pepper
1 tbls red pepper flakes
1/2 cup sugar
You can store this sauce in masonry jars for up to a year. It makes 4 cups.

2 ounces (1/4 cup Morton or Diamond Crystal coarse kosher) salt
2 teaspoons pink curing salt #1
4 tablespoons coarsely ground black pepper
4 bay leaves, crumbled
1 teaspoon freshly grated nutmeg
1/4 cup brown sugar or honey or maple syrup
2 tablespoons juniper berries, lightly crushed (optional)
5 to 10 sprigs fresh thyme (optional)
Rub a fresh pork belly with the ingredients above and let cure in a nonreactive container,glass or plastic for 5-7 days depending on how salty you want the bacon. Keep in fridge.
Rinse the pork belly with cool water. Place in a preheated oven 200 degrees until you reach an internal temp of 150 degrees.
Move to a smoker,use fruit or nut woods like apple or hickory. I do not recommend Mesquite for bacon. Smoke for 2-3 hours using a cold smoke method. I use a big chief smoker because it only imparts the smoke and does not cook the bacon further. If you use a warm smoker skip the oven and be sure you reach an internal temp of 150.
Let the bacon rest in the fridge for a day or two before you slice it, this makes the flesh firm and easier to slice uniformly.
Tip- if the bacon is too salty it can be blanched before frying it.

【材料】
栗‥‥500g
グラニュー糖‥‥約1kg
ラム酒‥‥60cc
【Ingredients】
500g chestnuts
1kg granulated sugar (approx)
60cc rum
【作り方】
1、座に包丁を食い込ませ、皮をめくるようにしてむく。残った座をむく。
2、ボウルに水を入れ、大さじ2杯の小麦粉を加えて混ぜ溶かす。
3、鬼皮をむいた栗を入れ、一晩漬ける。
4、栗を水でよく洗い、熱湯に30秒つける。
5、皮むきゴム手袋(ムッキー)を手にはめ、栗を持って水で流しながら軽くこする。
6、水を少量流しながら、貝殻スポンジでこする。
7、もう一度小麦粉を水に溶き、もう一晩栗を浸ける。
8、筋を竹串で取る。貝殻スポンジで残った渋皮をこすり落とす。
9、栗をよく洗って水を張ったボウルに浸ける。
10、栗を数個ガーゼに置き、くるくるねじってくるみ、両端を縛る。
11、鍋に栗と水を入れ、火にかける。沸騰直前になったら弱火にして、90分煮る。
12、栗の頭が出るようなら、お湯を足して煮る。
13、栗と煮汁を分けて、煮汁の重さを測り、同量の砂糖を準備する。
14、【1日目】煮汁を鍋に戻し、砂糖を加えて煮溶かし、熱い砂糖液の中に栗を入れる。キッチンペーパーで落としブタをし、このまま一晩置いておく。
15、【2日目】翌日砂糖を73g加える。沸騰させないように温め直し、砂糖を溶かす。さらに一晩置く。香りづけにラム酒を30cc入れる。3日~8日まで同じ手順を繰り返します。最後の方でラム酒をもう一度、30cc入れておきます。
16、【9日目】今日は結晶の塊が、たくさんできたので、仕上げに入ります。弱火で栗の芯まで熱く煮る。
17、熱いうちにゴム手袋などをし、ハサミでガーゼを切り、栗を取り出す。
18、油をぬった金網にのせて、半日~1日乾燥させる。
19、アルミホイルに包む。保存期間は冷蔵庫で2週間、冷凍庫で2~3ヶ月。
【Recipe】
1、Peel the hard shell of chestnuts. Remove the bottom.
2、Place chestnuts in a bowl and pour some water. Add 2 tabs flour and mix well.
3、Put chestnuts into the bowl and let it sit overnight.
4、Rinse chestnuts and put a few chestnuts in hot water for 30 seconds.
5、Using vegetable peeling gloves, rub chestnuts to remove inner skins.
6、Peel the membranes with a peeling sponge under running water.
7、Dissolve flour in water once again. Put chestnuts into a bowl and let them soak overnight again.
8、Remove the thick muscles with a bamboo skewer. Any pieces of membrane remaining can be easily removed with a peeling sponge.
9、Rinse chestnuts well and soak them in water.
10、Put some chestnuts on a cooking gauze. Twist the gauze and tie the ends together.
11、Place the chestnuts into a large saucepan and cover with water.
Bring to a boil and simmer very gently for 90 minutes.
12、Add hot water so the liquid always covers chestnuts while cooking.
13、Remove chestnuts from the water. Weight the liquid on a scale. Prepare sugar of 100% weight of liquid.
14、【The first day】Return the water to the pan. Add 734g granulated sugar and heat until melted. Add the chestnuts to the hot sugar syrup. Lay a cooking paper in the pan and leave to stand overnight.
15、【The second day】Add 73g sugar and heat slowly to dissolve the sugar. Add 30cc rum again. You will need to repeat this process several more times.
16、【The ninth day】When you can see a lot of sugar crystals, they're done. Warm syrup over low heat until thoroughly heated.
17、Cut gauze with scissors and take chestnuts out of gauze.
18、Place chestnuts on aoiled wire rack to dry. Let stand until coating is dry, about for a day.
19、Wrap each chestnut in a aluminum foil. They will keep for 2 weeks in the fridge or 2-3 months in the freezer.

The mixes are from artists who are firmly into their niche, to provide the best representation from across the spectrum. I hope you enjoy!
Chester's Rednote burst onto the scene around early 2012 with his huge remix of mala's 'Changes'. Since then he has experimented with different styles of bass music, mainly under the alias 'Toukan'; leaving his hallmark on many genres, ranging from house, garage and techno and collaborating with producers such as Minzo and Conform.
Now Rednote has officially come back to his roots in 140, releasing a three track EP titled 'Skeptics EP' on Dubtastic Records, and gaining big support from the likes of FatKidOnFire.
His guest-mix showcases a wide variety of differing styles of the deeper side to bass music. Rednote educates us, as he focuses on the warmer sounds, occasionally throwing in some of the heavy hitters, like Youngsta & Seven's; 'Masai Mara'. In a lot of ways, I think the mix reflects the inspirations in his productions; the deeper, and often tribal inspired tracks.

How to make Maki Sushi Roll
【材料】
寿司海苔‥‥4枚、きゅうり‥‥1本、桜でんぶ‥‥大さじ4
●酢飯
米‥‥2.5合、昆布‥‥5cm角、米酢‥‥45ml、砂糖‥‥25g、塩‥‥12g
●卵焼き
卵‥‥3個、砂糖‥‥大さじ2、塩‥‥一つまみ、油‥‥適量
●しいたけの旨煮
干ししいたけ‥‥6枚、もどし汁‥‥1カップ、砂糖‥‥大さじ3、みりん‥‥大さじ1、醤油‥‥大さじ1
●かんぴょうの煮物
かんぴょう‥‥15g、水‥‥150ml、砂糖‥‥大さじ1と1/2、みりん‥‥大さじ1、醤油‥‥大さじ1
●焼きアナゴ
焼きアナゴ‥‥2本、砂糖、みりん、醤油‥‥各大さじ1
【Ingredients】
4 sheets nori seaweed、1 cucumber、4 Tbsp sakura denbu
●for Sushi Rice
2.5 cups of rice (180ml cups)、5cm kombu kelp、45ml rice vinegar、25g sugar、12g salt
●for Rolled Omelette
3 eggs、2 Tbsp sugar、1 pinch of salt、oil for cooking
●for Shiitake Mushrooms
6 dried shiitake mushrooms、1 cup of the shiitake soaking water、3 Tbsp sugar、1 Tbsp mirin、1 Tbsp soy sauce
●for Gourd Ribbons
15g dried gourd ribbons、150ml water、1.5 Tbsp sugar、1 Tbsp mirin、1 Tbsp soy sauce
●for Anago Eel
2 grilled anago eel fillets、1 Tbsp sugar、1 Tbsp mirin、1 Tbsp soy sauce
【作り方】
1、米を洗い、炊飯器にいつもより少ない水加減をし、昆布を入れて炊く。
2、合わせ酢を弱火にかけ、砂糖を溶かしておく。
3、炊き立てのご飯をボウルに移し、合わせ酢を入れてしゃもじで切るように混ぜる。うちわであおぐ。
4、卵と砂糖と塩をボウルに入れて泡がたたないように混ぜる。
5、卵焼き器を温め、油をふく。卵液の1/3量を流し入れて広げ、半熟状態になったら手前に折りたたむ。
6、巻いたものを、向こう側に寄せる。空いた所を油でふき、再び卵液を流し込む。これをもう一度繰り返す。冷ましてから4本の棒状に切る。
7、しいたけは水につけて戻し、軸を落とす。鍋に調味料とシイタケを入れ、煮汁がほとんどなくなるまで煮含める。粗熱がとれたら細切りにし、軽く汁気を絞る。
8、かんぴょうは塩でもみ洗いし、たっぷりのお湯で10分ゆでる。流水にさらし、水気をしっかり絞る。
9、鍋に煮汁の材料を合わせ、かんぴょうを入れ、煮汁が少なくなるまで煮る。海苔の幅に合わせて切る。
10、焼きアナゴは頭を落とし、細長く切る。鍋に煮汁の材料を合わせ、焼きあなごを入れて弱火で煮詰める。
11、きゅうりは縦に4等分に切る。
12、巻きすに海苔を置き、酢飯を海苔の上に広げる。
13、具材を置く。巻いて形をととのえる。
14、残り3本も同様にして巻く。
15、1本を8等分し、器に盛る。
【Directions】
1、Wash rice carefully, place rice, water and kombu in a cooker bowl and cook. (Use less water than usual.)
2、Heat gently and stir together all sushi vinegar ingredients.
3、Transfer hot rice to a large bowl. Pour sushi vinegar over, and mix rice by cutting motion, then cool it by fanning.
4、Gently beat eggs, sugar, salt together in a bowl.
5、Heat a tamagoyaki pan. Use paper towels to grease the pan thoroughly. Pour 1/3 of the egg mixture to the pan. When it's half cooked, roll it over towards you.
6、Move the egg to the far side. Grease empty space again, and add another 1/3 of the egg mixture. Repeat one more time. Cut it lengthwise into 4 strips.
7、Wash and soak shiitake until soft. Remove the stems. Combine sauce ingredients, add shiitake and simmer. Slice shiitake thinly and lightly wring out excess moisture.
8、Rub kampyo with salt to clean and boil in ample water for 10 minutes. Wash kampyo and squeeze out the excess water.
9、Combine sauce ingredients, add kampyo and simmer over low heat. Cut kampyo into strips the length of a maki sushi roll.
10、Cut eel fillet into 2 strips lengthwise. Combine sauce ingredients, add anago and simmer over low heat.
11、Cut cucumber lengthwise into 4 pieces.
12、Place a nori sheet on a bamboo mat and spread rice on the nori.
13、Lay filling ingredients in a nice line. Roll up the bamboo mat, pressing it forward and shaping the nori to create the roll.
14、Repeat with remaining ingredients.
15、Cut each roll into 8 portions. Arrange on serving plates.

14、Repeat with remaining ingredients.
15、Cut each roll into 8 portions. Arrange on serving plates.
