How To Cook A Perfect Steak
- Always let your meat reach room temperature. This assures it will cook evenly.
- If cooking in 2 stages (grilling then oven) be sure to start with a hot pan, AND pre-heat your oven to 450. It may seem very hot, and it is. You don’t want to steam the meat, you want to roast it.
- Be generous with your salt and pepper, the meat can take it.
- Only turn the meat over once, this again helps with even cooking. And NEVER squeeze the steak down on the pan, this doesn’t cook it quicker, it does however release all that beautiful juice.
- Sear approx. 90 seconds per side then slide into your pre-heated oven. To reach medium with a 1 inch thick steak you’ll roast it for around 5 minutes.
- ALWAYS let your meat rest for 5 minutes. It wont get cold, don’t worry about that. By resting the juices redistribute throughout the steak giving it that gorgeous even pink shade that steak restaurants create so well.
- Trim both the tenderloin and sirloin off the bone. Slice in 3rd of an inch pieces. Enjoy on its own or with a dollop of your favourite mustard!

A steak (from Old Norse steik, "roast") is generally a cut of meat or fish cut perpendicular to the muscle fibers, or of fish cut perpendicular to the spine. Meat steaks are usually grilled, pan-fried, or broiled, while fish steaks may also be baked.
Steak can also be meat cooked in sauce (cf. steak and kidney pie) or minced meat formed into a steak shape (cf. Salisbury steak, hamburger steak).
Without qualification, the word "steak" generally refers to beefsteak. Steaks from other animals are usually qualified as, e.g., 'swordfish steak' or 'venison steak'.
The more tender cuts of beef, from the loin and rib, are cooked quickly, using dry heat, and served whole. Less tender cuts from the chuck or round are cooked with moist heat or are mechanically tenderized (cf. cube steak). Steak can be cooked to a level of very rare, rare, medium rare, medium, medium well done, or well done.
For fish, steaks are cut perpendicular to the spine and include bones. In North America, fish usually cooked as steaks include swordfish, halibut, and tuna. Other fish often cooked as steaks include salmon and mahi-mahi, though they are also frequently cooked as fillets or whole.

Marc Forgione is one of the Iron Chefs competing on Food Network's Iron Chef America and owner of restaurant Marc Forgione in New York City. He was born on December 16, 1978, and raised in Bellerose, New York. Chef Forgione competed on and won season three of The Next Iron Chef in 2010.
Marc began his career at the age of 16, joining his father, Larry Forgione, in the kitchen at An American Place. Marc fully embraced his father's livelihood and has built on his unique culinary foundation to carve out an identity of his own. Marc is related to Francesco Forgione, a Catholic saint, who is a great, great uncle of his father Larry.
Marc opted for a traditional four-year education at the University of Massachusetts at Amherst, where he graduated from the School of Hotel and Restaurant Management. He spent his summers working the line at restaurants in New York, with chef Kazuto Matsusaka. These stints would lay the groundwork for Marc's post-collegiate toils, again alongside his father at An American Place and later under Patricia Yeo at AZ. When Yeo and celebrated chef Pino Maffeo opened Pazo, they took Marc along to serve as sous chef at the short-lived eatery. When Laurent Tourondel set out to develop his flagship, BLT Steak, he recruited Marc as his sous chef.

How To Cook A Perfect Steak - Always let your meat reach room temperature. This assures it will cook evenly. - If cooking in 2 stages (grilling then oven) be sure to start with a hot pan, AND pre-heat your oven to 450. It may seem very hot, and it is. You don’t want to steam the meat, you want to roast it. - Be generous with your salt and pepper, the meat can take it. - Only turn the meat over once, this again helps with even cooking. And NEVER squeeze the steak down on the pan, this doesn’t cook it quicker, it does however release all that beautiful juice. - Sear approx. 90 seconds per side then slide into your pre-heated oven. To reach medium with a 1 inch thick steak you’ll roast it for around 5 minutes. - ALWAYS let your meat rest for 5 minutes. It wont get cold, don’t worry abou... -

Cook the best steak of your life by simply changing the way you think about searing a steak. Flip the script and cook the steak in reverse. How To Cook A Perfect Steak
- Always let your meat reach room temperature. This assures it will cook evenly.
- If cooking in 2 stages (grilling then oven) be sure to start with a hot pan, AND pre-heat your oven to 450. It may seem very hot, and it is. You don’t want to steam the meat, you want to roast it.
- Be generous with your salt and pepper, the meat can take it.
- Only turn the meat over once, this again helps with even cooking. And NEVER squeeze the steak down on the pan, this doesn’t cook it quicker, it does however release all that beautiful juice.
- Sear approx. 90 seconds per side then slide into your pre-heated oven. To reach medium with a 1 inch thick steak you’ll roast it for around 5 minutes.
- ALWAYS let your meat rest for 5 minutes. It wont get cold, don’t worry about that. By resting the juices redistribute throughout the steak giving it that gorgeous even pink shade that steak restaurants create so well.
- Trim both the tenderloin and sirloin off the bone. Slice in 3rd of an inch pieces. Enjoy on its own or with a dollop of your favourite mustard!

Hey everybody! It’s day 6 of my 2015 European Tour and in this video I’m STEAK Restaurant in Edinburgh, Scotland. Here I’ll be taking on their massive “Man vs Steak Beast Challenge! This giant 92 oz steak also comes with an additional five sides of your choice, making the challenge that much more difficult! Not only was this the biggest steak challenge that I’ve ever attempted, but at the cost of £160 ($250) if I lost, it was also going to be the most expensive! STEAK Restaurant’s Man vs Steak Beast Challenge:
– 92 oz (5.75 lbs) Aberdeen rump steak
– 5 small sides of your choice (20 oz)
– Everything weighs 112 ounces total

Cook the best steak of your life by simply changing the way you think about searing a steak. Flip the script and cook the steak in reverse.
Most steaks are cooked by first searing each side and then finishing (baking) in the oven. That method is a useful one and produces a steak that has the characteristic "bullseye" of doneness. But by simply baking first and searing last, the quality of the steak changes altogether. It'll be juicier. More tender. And more beautiful.
This technique is commonly used in restaurant kitchens around the world. Get that perfect edge-to-edge medium-rare that resembles steaks that have been cooked sous-vide. It's easier and cheaper than buying extra equipment.
Most people want that great, mouth-watering char on the outside of their steak. But that's the easy part. The hard part is knowing what's going on *inside* your steak. So focus instead on pin-pointing the exact internal temperature, and getting that outside sear later will be a piece of cake.
Dig it? Dig in.
*There have been some questions about the cut of meat used in this video. It is boneless ribeye.
You can use almost any tender cut of meat for this technique as long as it is sufficiently thick. After all, though this process mimics the sous vide method, it's very similar to a "roast beef" recipe. I recommend using ribeye or strip, either bone-in or boneless. You could even use a t-bone or porterhouse, but differences between the strip side and the tenderloin side could the mess with timing and result in overcooking.
