A pickled cucumber (commonly known as a pickle in Australia, Canada, and the United States or generically as gherkins in the UK) is a cucumber that has been pickled in a brine, vinegar, or other solution and left to ferment for a period of time, by either immersing the cucumbers in an acidic solution or through souring by lacto-fermentation.
A gherkin is not only a pickle of a certain size but also a particular species of cucumber: the West Indian or Burr Gherkin (Cucumis anguria), which produces a somewhat smaller fruit than the garden cucumber (Cucumis sativus). Standard pickles are made from the Burr Gherkin, but the term gherkin has become loosely used as any small cucumber pickled in a vinegar brine, regardless of the variety of cucumber used.
Cornichons are tart French pickles made from small gherkins pickled in vinegar and tarragon. They traditionally accompany pâtés.
Brined pickles are prepared using the traditional process of natural fermentation in a brine which makes them grow sour. The brine concentration can vary between 20 g/litre to more than 40 g/litre of salt. There is no vinegar used in the brine of naturally fermented pickled cucumbers.

I grew this cucumber last year and will definitely grow it again this year. It was a great producer and I had cucumbers growing out my ears! It was a very rainy season last year, and it is possible that had something to do with the production. However, all reviews I have read agree this is the cucumber to grow for pickles. I also ate them fresh in salads and they were great too!
Just about all the seed companies sell this heirloom variety which has been around since the late 1800's.

Trellising pickling cucumbers. I wanted to try vertical gardening to save a bit of space and also to make the plants more manageable. I've not had a lot of luck growing cucs in the past, but these pickling cucumbers seem to be doing quite well and are working their way through the trellis I made for them.

Makes 3 1/2 cups
INGREDIENTS
3 cups white vinegar 1 1/2 cups sugar 2 teaspoons coarse salt 1/2 teaspoon mustard seed 1/2 teaspoon celery seed 2 to 4 small red chiles (optional) 1/8 teaspoon ground turmeric 1 1/2 cups fresh dill fronds (about 1 bunch) Prepared Vegetables
DIRECTIONS
STEP 1
In a medium saucepan, combine white vinegar, sugar, salt, mustard seed, celery seed, red chiles (optional), and ground turmeric. Bring to a boil, stirring to dissolve sugar. Arrange prepared vegetables and dill fronds in one or more jars. Pour hot brine into jar to completely cover vegetables and seal jar. Refrigerate until cool, about 2 hours (or up to 1 week).

Have you ever made pickles at home? You should -- it couldn't be easier. Today, I'm slicing cucumbers into chips (this is a great shape to use with sandwiches, but you can cut them however you like) and pickling them in a vinegar brine. These tangy vegetables will be ready to eat after a few hours and will last in your fridge for the rest of the summer. Make them today and enjoy!
Sarah's Tip of the Day:
When pickling, cucumbers with fewer seeds and thinner skins work best. Choose small Kirby cucumbers or larger European ones.

Makes 3 1/2 cups
INGREDIENTS
3 cups white vinegar 1 1/2 cups sugar 2 teaspoons coarse salt 1/2 teaspoon mustard seed 1/2 teaspoon celery seed 2 to 4 small red chiles (optional) 1/8 teaspoon ground turmeric 1 1/2 cups fresh dill fronds (about 1 bunch) Prepared Vegetables
DIRECTIONS
STEP 1
In a medium saucepan, combine white vinegar, sugar, salt, mustard seed, celery seed, red chiles (optional), and ground turmeric. Bring to a boil, stirring to dissolve sugar. Arrange prepared vegetables and dill fronds in one or more jars. Pour hot brine into jar to completely cover vegetables and seal jar. Refrigerate until cool, about 2 hours (or up to 1 week).

Went to the farmers market and picked up some great cucumbers and jalapeños. This is how I make dill pickles and pickled jalapeños. When properly done, they will have a shelf life of about 12 months. These taste way better than any store bought pickles, and the jalapeños are awesome.

How To Make Easy Dill Pickles! As Little as One Jar at a Time!!
Good recipe for home gardeners. No more waiting until you have enough cucumbers to do a huge recipe! This way you can make just one jar or many jars easily.
Follow amounts listed to be added to each jar. All amounts listed are to be added per jar.
Quart Jar:
2 Grape Leaves
2 Cloves Garlic (sliced)
2 t. Dill Seed
2 Heads Fresh Dill (or about 2t Dill Weed)
1 Tb Pickling or Corse Kosher Salt (non-iodized)
1/2 Cup White Vinegar (5% acidity)
Hot Water
PROCESS 12 Minutes
Pint Jar:
1 Grape Leaf
1 Clove Garlic (sliced)
1 t. Dill Seed
1 Head Fresh Dill (or about 1t Dill Weed)
1/2 TB Pickling or Corse Kosher Salt (non-iodized)
1/4 Cup White Vinegar (5% acidity)
Hot Water
PROCESS 10 Minutes
1/2 Pint Jar:
1 Small Grape Leaf

1/2 t. Dill Seed
1/2 Large or 1 Small Head Fresh Dill (or about 1/2t Dill Weed)

PROCESS 8 Minutes
DIRECTIONS:
Wash cucumbers well and cut off blossom end by about 1/4 inch. This is where the enzymes that make pickles too soft mainly is so trimming them will help the pickles stay crispy. If you cant tell which end is the blossom end its the lighter colored end. Prepare the cucumbers as you wish by leaving small ones whole for baby dills, cutting them in half length wise then each half in thirds or fourths length wise to make spears, slicing rounds for hamburger chips or chopping finely for dill relish. Start the jars by putting the leaf in the bottom first then the spices. You can also add peppercorns or red pepper flakes if you want them to be spicy. Next add the prepared cucumbers to the neck of the jars. Add the vinegar then enough HOT water to 1/4" from the top. Wipe the top rim of the jar(s) clean and place a sterilized NEW lid on each jar. Screw the ring band on and tighten. Place in water bath canner or stock pot with hot water in it. Make sure water level is at least one inch over the tallest jar. Bring canner to a boil. Count processing times from the time the water canner STARTS to come to a full rolling boil, not the time the jars are placed in the canner. Remove jars when time has been reached and cool on a towel on the counter. If they seal they are good for one year, if they don't put them in the fridge and use those ones first. They are good right away but are even better when they have been in the brine for a week. ENJOY!

Seed Review: Boston Pickling Cucumber - Helping Gardeners Plan their Garden
I grew this cucumber last year and will definitely grow it again this year. It was a great producer and I had cucumbers growing out my ears! It was a very rainy season last year, and it is possible that had something to do with the production. However, all reviews I have read agree this is the cucumber to grow for pickles. I also ate them fresh in salads and they were great too!
Just about all the seed companies sell this heirloom variety which has been around since the late 1800's.

Trellising pickling cucumbers. I wanted to try vertical gardening to save a bit of space and also to make the plants more manageable. I've not had a lot of luck growing cucs in the past, but these pickling cucumbers seem to be doing quite well and are working their way through the trellis I made for them.

【材料】
きゅうり‥‥5本
・ピクルス液の材料
穀物酢...200cc
水...100cc
砂糖...40g
赤唐辛子...1本
にんにく...1かけ
ローレル...1枚
粒黒こしょう...5~6個
クローブ...3個
【Ingredients】
5 cucumbers
・Pickling juice
200cc kokumotsusu, grain vinegar
100cc water
40g sugar
1 red chili peppers, dried
1 garlic clove
5~6 black pepper, whole
3 cloves
【下準備】
1、きゅうりはよく洗って両端を切り落とし、三等分してボウルに入れる。
2、塩大さじ2をまぶし、よくもみこむ。
3、水200ccを加えて混ぜ、塩を溶かす。
4、皿をのせておもしをし、冷蔵庫で一晩漬け込みます。
【Preparation】
1、Wash cucumber and cut the sides. Cut it into 3 pieces and place in a bowl.
2、Salt cucumbers (2 tbsp) and rub well.
3、Add water 200cc and stair well. Dissolve salt in water.
4、Press cucumbers under a plate. Soak overnight and place in the refrigerator.

1、きゅうりの水気をよくふき取る。
2、熱湯消毒して乾燥させた保存ビンに、きゅうりを詰めていきます。
3、赤唐辛子は軸を切り落として種を取る。
4、にんにくは薄切りにする。
5、ステンレスかホウロウなど酸に強い鍋に、ピクルス液の材料を全部入れて火にかける。沸騰したら弱火にして2~3分煮る。
6、冷ましたピクルス液をビンに注ぎます。きゅうりがすっかり浸かっているようにしましょう。
7、浮いてくるようなら小皿などで軽い重しをしましょう。しっかりふたをし、冷蔵庫で保存。
8、翌日から食べられます。保存期間は約2週間。
【How to make】
1、Wipe cucumbers dry with a paper towel.
2、Pack cucumbers into hot sterilized glass jar.
3、Cut the top off a red chili pepper and remove seeds.
4、Slice garlic thinly.
5、Heat pickling juice ingredients in a stainless steel saucepan. When the juce boils, cook over low heat for 2~3 minutes.
6、Pickling solution has cooled, pour it over the cucumbers in the jar. They must be covered by the solution.
7、If the cucumbers float, weigh them down with a clean plate. Seal the jar tightly with the lid. Store it in the refrigerator.
8、The pickles will be ready to eat the next day. The period of preservation is about 14 days.

【How to make】
1、Wipe cucumbers dry with a paper towel.
2、Pack cucumbers into hot sterilized glass jar.
3、Cut the top off a red chili pepper and remove seeds.
4、Slice garlic thinly.
5、Heat pickling juice ingredients in a stainless steel saucepan. When the juce boils, cook over low heat for 2~3 minutes.
6、Pickling solution has cooled, pour it over the cucumbers in the jar. They must be covered by the solution.
7、If the cucumbers float, weigh them down with a clean plate. Seal the jar tightly with the lid. Store it in the refrigerator.
8、The pickles will be ready to eat the next day. The period of preservation is about 14 days.

Fermented Dill Pickles - Hungarian fermented cucumber - Kovászos uborka
First variation:
4-6 lb. pickling cucumbers (this depends on your jar size)
1 gallon distilled water (because no chlorine)
12 tablespoons course salt or Himalayan salt
Do not use regular white ionized salt!
cabbage leaves for the top
1/2 tablespoon mixed whole mix black pepper
10-12 clove of garlic
1 bunch fresh dill
1/4 horseradish
Other variation:
1 gallon distilled water (because no chlorine)
8 tablespoons course salt or Himalayan salt
Do not use regular white ionized salt.
4 tablespoons citric acid
and the seasoning is up to your taste
either you put a slice of bread or cabbage leaves on top of pickles
Tips: First start mix the water with the salt. Than wash everything
and sanitize the jar or jars. For fomentation 73 F. is the best.
If you have leftover distilled water and salt mixture, save it for
the next time. You can make it with slice of bread (My Mom
made it that way) on top and other seasoning. Please make
both variation and make a note for the next time.
Both variation need 6-7 days for the right fermentation.

In this episode I will share with you what I am will be doing this year to grow container pickling cucumbers in my backyard. Growing cucumbers in containers is easy if you follow some of my tips. Have you ever made pickles at home? You should -- it couldn't be easier. Today, I'm slicing cucumbers into chips (this is a great shape to use with sandwiches, but you can cut them however you like) and pickling them in a vinegar brine. These tangy vegetables will be ready to eat after a few hours and will last in your fridge for the rest of the summer. Make them today and enjoy!
Sarah's Tip of the Day:
When pickling, cucumbers with fewer seeds and thinner skins work best. Choose small Kirby cucumbers or larger European ones.

Makes 3 1/2 cups
INGREDIENTS
3 cups white vinegar 1 1/2 cups sugar 2 teaspoons coarse salt 1/2 teaspoon mustard seed 1/2 teaspoon celery seed 2 to 4 small red chiles (optional) 1/8 teaspoon ground turmeric 1 1/2 cups fresh dill fronds (about 1 bunch) Prepared Vegetables
DIRECTIONS
STEP 1
In a medium saucepan, combine white vinegar, sugar, salt, mustard seed, celery seed, red chiles (optional), and ground turmeric. Bring to a boil, stirring to dissolve sugar. Arrange prepared vegetables and dill fronds in one or more jars. Pour hot brine into jar to completely cover vegetables and seal jar. Refrigerate until cool, about 2 hours (or up to 1 week).

Good recipe for home gardeners. No more waiting until you have enough cucumbers to do a huge recipe! This way you can make just one jar or many jars easily.
Follow amounts listed to be added to each jar. All amounts listed are to be added per jar.
Quart Jar:
2 Grape Leaves
2 Cloves Garlic (sliced)
2 t. Dill Seed
2 Heads Fresh Dill (or about 2t Dill Weed)
1 Tb Pickling or Corse Kosher Salt (non-iodized)
1/2 Cup White Vinegar (5% acidity)
Hot Water
PROCESS 12 Minutes
Pint Jar:
1 Grape Leaf
1 Clove Garlic (sliced)
1 t. Dill Seed
1 Head Fresh Dill (or about 1t Dill Weed)
1/2 TB Pickling or Corse Kosher Salt (non-iodized)
1/4 Cup White Vinegar (5% acidity)
Hot Water
PROCESS 10 Minutes
1/2 Pint Jar:
1 Small Grape Leaf
1/2 Clove Garlic (sliced)
1/2 t. Dill Seed
1/2 Large or 1 Small Head Fresh Dill (or about 1/2t Dill Weed)
3/4 t. Pickling or Corse Kosher Salt (non-iodized)
2 TB White Vinegar (5% acidity)
Hot Water
PROCESS 8 Minutes
DIRECTIONS:
Wash cucumbers well and cut off blossom end by about 1/4 inch. This is where the enzymes that make pickles too soft mainly is so trimming them will help the pickles stay crispy. If you cant tell which end is the blossom end its the lighter colored end. Prepare the cucumbers as you wish by leaving small ones whole for baby dills, cutting them in half length wise then each half in thirds or fourths length wise to make spears, slicing rounds for hamburger chips or chopping finely for dill relish. Start the jars by putting the leaf in the bottom first then the spices. You can also add peppercorns or red pepper flakes if you want them to be spicy. Next add the prepared cucumbers to the neck of the jars. Add the vinegar then enough HOT water to 1/4" from the top. Wipe the top rim of the jar(s) clean and place a sterilized NEW lid on each jar. Screw the ring band on and tighten. Place in water bath canner or stock pot with hot water in it. Make sure water level is at least one inch over the tallest jar. Bring canner to a boil. Count processing times from the time the water canner STARTS to come to a full rolling boil, not the time the jars are placed in the canner. Remove jars when time has been reached and cool on a towel on the counter. If they seal they are good for one year, if they don't put them in the fridge and use those ones first. They are good right away but are even better when they have been in the brine for a week. ENJOY!

2 tsp. (0.4 oz, 10 g) salt
3 Tbsp. (11 oz, 30 g) sugar
½ tsp. (0.1 oz, 4 g) Japanese karashi mustard*
3 Japanese or Persian cucumbers (9.2 oz, 261 g)
What you will also need:
1 seal-able zipper storage bag (gallon size)
Note:
*You can substitute with Chinese mustard powder or Colman’s English mustard which are made from a hot, yellow variety of mustard seed same as Japanese mustard.

I grew this cucumber last year and will definitely grow it again this year. It was a great producer and I had cucumbers growing out my ears! It was a very rainy season last year, and it is possible that had something to do with the production. However, all reviews I have read agree this is the cucumber to grow for pickles. I also ate them fresh in salads and they were great too!
