RAGI BISCUIT
Ingredients
½ cup finger millet (ragi)flour
Oil for greasing
½ cup whole wheat flour
1 teaspoon baking powder
½ cup chilled butter
½ cup powdered sugar
Few drops vanilla essence
Milk as required
Method
1. Preheat oven at 180ºC. Grease a baking tray with some oil.
2. Heat millet flour in a non-stick pan and roast on low heat till fragrant. Remove from heat and cool.
3. Sieve together wheat flour, roasted millet flour and baking powder into a bowl and mix well.
4. Roughly chop chilled butter, add to flour mixture and mix well. Sieve powdered sugar into it. Add vanilla essence and some milk, mix and knead into a soft dough. Cover with cling film and refrigerate for 20 minutes.
5. Dust a worktop with some flour, place the dough and roll out to make a thin sheet. Cut the sheet into roundels using a medium size cookie cutter and put them on the greased tray.
6. Place the baking tray in preheated oven and bake for 12-15 minutes. Remove from heat and cool.
7. Serve.
Preparation Time: 30-35 minutes
Cooking time: 15-18 minutes

Ragi mudde, or ragi ball, is one of the outstanding food, because it is nutritious and is said to prevent diabetes or help manage it. Ragi is also said to aid weight loss and is believed to give other health benefits. All these traits of this dish would make you keen to know how to make soft ragi mudde.
You may want to prefer the soft ragi mudde over its regular counterpart, because the first is easily digestible.
What are the ingredients of soft ragi mudde? Good news, here again, as ragi mudde or ragi ball needs only three items. These are ragi flour, water and salt.
TIP: Add a handful of methi seeds to per kilogram of ragi, when you take it to the mill to get the ragi flour. Methi is said to help in the easier digestion of ragi mudde.

Ragi Masala Oats Dhokla recipe is a healthy preparation of the traditional sooji dhokla that is made with just semolina. In this Ragi Masala Oats Dhokla recipe I have combined the ragi flour, also known as the finger millet flour along with semolina (rava) and masala oats. Dhokla's get its flavors and delicious textures from the sesame and mustard seasoning and this recipe does juts that. Its a super simple recipe that can be served along with Green Chutney and also Idli Milagai Podi. I even send this as a school lunch box as well and the kids love it
Note: You can also use any other millet flour like the pearl millet flour (bajra), jowar, finger millet flour to this recipe to make it nutritious.

Makes: 4 to 5 servings
Total Time: 30 Minutes
Ingredients
1 cup ragi flour | finger millet flour
1 cup rava | fine semolina
1 cup oats (I used the saffola brand) | you can also use plain quick oats
1 cup yogurt
1 teaspoon enos fruit salt or 1/2 teaspoon baking powder
1 tablespoon oil
a teaspoon of oil for seasoning
1 sprig of curry leaves, finely chopped
1 teaspoon mustard seeds
1 tablespoon sesame seeds
salt to taste
a small bunch of finely chopped coriander leaves
Method
Prepare a steamer filled with water and grease the dhokla plates. Keep aside.
Combine the ragi flour, rava, oats, yogurt and a little salt in a large mixing bowl. Add a little water at a time to make a thick batter (approximately 1- 1/2 cups). Allow the mixture to rest for 5 minutes.
Stir in the enos fruit salt and pour the dhokla batter into the greased dhokla plates
Preheat a steamer with water and place the dhokla batter for steaming. Steam on high heat for about 10 minutes until a tester inserted in the center comes out clean.
Once steamed, remove the Ragi Oats Dhokla from the steamer and keep aside for 5 minutes.
Heat oil in a pan; add in the mustard seeds, sesame seeds and curry leaves and allow it to crackle. Turn off heat and pour the seasoning over the dhokla's and cut them into squares or diamonds.
Serve the Ragi Masala Oats Dhokla with Green Chutney and also Idli Milagai Podi for breakfast or pack it for the school lunch box
