Continue to cook over medium heat until amber in color. Whisk in butter to combine. Over low heat, stir in peanuts. Remove from heat and stir in baking soda. Pour mixture onto a cookie sheet lined with parchment paper. Cool at room temperature for 20 minutes before breaking into pieces and serving. Hi. My name is Katie Rosenhouse and today I am making brittle. I'm starting with about three quarters of a cup of granulated sugar right in my pot. I'm going to add about a quarter cup of corn syrup. This is going to keep my caramel from crystallizing. What that means is that any little bits of sugar that are on the sides of the pan could harden up my caramel and make it really gritty. That's going to keep everything nice and smooth. I'm just going to add a little bit of water. We'll mix those around and then I'm going to bring it over to the stove and just cook it until it's a nice amber caramel color. So my caramel is a really nice amber golden color. You can see how beautiful that is. So while it is still nice and bubbly, I'm just going to add in about a tablespoon of softened butter, a little bit of kosher salt, and about a pinch or two of baking soda. And what that baking soda is going to do is puff everything up and everything's going to bubble and we are going to have a really beautiful crispy brittle. You can see already that everything is activating. So before it sets up too quickly I'm going to add in peanuts. You can add any kind of nuts that you like. You can toast them; you don't have to toast them but you can load them up in there and then straight onto a cookie sheet with a piece of parchment paper. And while it's still nice and warm I'm just going to take my spatula and I'm just going to scoot everything around to even it out a little bit. Be careful not to burn yourself. You could sprinkle a little extra sea salt if you like. And then what I'm going to do is just let this cool for a minute or two. So now my brittle is nice and cool. You can see it is really firm to the touch. And you can see all of that baking soda kind of deflated back down all those air bubbles and all of the peanuts are showing through. So I have a really nice brittle that's ready to be cracked. So you can do this with a hammer, you can do this with your hands or you can just kind of do that and break up nice shards of brittle. And that is it. So you get a real nutty salty sweet snack. And that's how you make brittle.
