Ingredients:- 1 whole chicken cut up 3 cups basmati rice washed and soaked for 20 minutes 2 cups sliced onion 2 cups chopped tomato 1 hot or sweet green pepper sliced 4 sliced garlic gloves 3 Tbsp tomato paste 3 dried lemon (poked ) 1 big cinnamon stick A few whole pepper corns A few cloves A few cardamom 3 bay leaves 2 Tbsp kabsa spices (from Middle eastern store) 6 cups water 1/2 cup oil 1 Tbsp salt one large pot Steps: 1-Heat oil in a large pot and over medium heat then add onion and fry for a few minutes until the onion is light brown. 2-Add garlic, the whole spices and dry lemons and mix for a few minutes. 3-Add chicken pieces and kabsa spices and mix well. Brown the chicken pieces from all sides. 4-Add chopped tomato, green pepper and tomato paste and cook for a few minutes. 5-Add about 6 cups of water and bring everything to boil stage on high heat. At this point add salt to your taste. 6-Lower the heat and cook for 40 minutes. 7-Take out the chicken pieces when they are cooked and put them under the broiler for a few minutes to crisp the chicken skin 8-Bring the liquid to boil on high heat then add the rice and mix. Cover and bring everything to the boiling stage then lower the heat to the low degree. The liquid should above the rice by 1/4 inch. You may need to add more water. Cook the rice for about 20 to 25 minutes. 9-Put the rice in a big serving platter then top it with chicken pieces and garnish with toasted or fried almond, fried raisins and boiled eggs.
