Ingredients
1 kg pork belly rinsed and pat dry
***Mix #1 to marinate the meat***
1 tsp salt
2 tsp sugar
1 tsp five-spice powder
½ tsp pepper
1 tbsp hoisin sauce/ketchup, optional
***Mix #2 for the skin***
2 tsp salt
1 tsp white vinegar

FAQ: Why are there bubbling/fizzing effect when Helen mixed salt and vinegar together, but it did not happen with mine?
Answer: The salt Helen used accidentally has baking soda (NaHCO3) in it (This was apparently added by the manufacturer to avoid clumping). It reacts with acid acetic in the vinegar and releases CO2 which causes bubbling effect. However this does not affect the roast pork. Even if your mix does not bubble, the recipe still works with most salt & vinegar.

Busy mum and food lover Rejina Sabur-Cross demonstrates how to cook the ultimate roast pork and have enough leftovers to make two more delicious dishes.
In this episode of the Ultimate Roast Guide, Rejina is cooking with a Pork shoulder joint weighing about 2 kilos. This should feed a family of four, with enough leftovers to prepare family meals on Monday and Tuesday.
Preparation:
Take your pork out of the fridge about 30 mins before roasting to bring it up to room temperature.
Rejina's tips for achieving the perfect crackling are a very hot oven and a completely dry rind.
If your meat hasn't been prepped for you, carefully score long lines across the fat with a sharp knife.
For a traditional pork roast, brush on a thick layer of oil, sprinkle with sea salt and rub in some chopped apple and sage.
Alternatively you can give your pork a Chinese twist, using a mix of sugar, five spice, soy and ginger.
Cooking:
Pre-heat your oven to 220 degrees Celsius or gas mark 7.
Cooking time for pork is usually calculated at 30 mins per 500 grams plus 30 mins.
After 30 minutes, turn the oven down to 190 degrees for a lovely even cook.
This one will be ready in 2 hours 20 mins: you can tell when it's cooked if the juices run clear.
Once thoroughly cooked, let the pork rest for 20 mins under a foil tent. This will give you time to make a delicious pork gravy.
Gravy:
Place your roasting tray on the hob and spoon off any excess fat.
Add table spoon of flour and stir well to bring out all the flavour captured in the tray.
Add stock, you can add wine if you like, and there you have a delicious pork gravy.
Carving:
Take your rested pork and remove the crackling from the meat with a carving knife.
Carve nice thick slices and serve with gravy and a crunchy apple sauce.
Leftovers:
Cool your leftover meat to room temperature and wrap in foil. These should last up to two days in the fridge.

Who doesn't like a crackling sound of crispy roast pork? I know i do.
On many occasion i have tried many ways to perfect this recipe. Sometimes it works and sometimes it doesn't. But, i found using air fryer increase the chances to success.
Choosing a good quality pork belly is quite important too.If the skin is too thin, it will never crispy. The idea is to get a slightly thick pork belly. The ingredients to make this pork belly are too simple, only about 5 ingredients. But, the hard work will be the poking.
You really need to spend more time poking the holes. Poke as many holes as possible but try not to penetrate too deep, stay near the skin.
Every time, i make this my family will finish it off in second.

The pig is one of the oldest forms of livestock, having been domesticated as early as 5000 BC. It is believed to have been domesticated either in the Near East or in China from the wild boar. The adaptable nature and omnivorous diet of this creature allowed early humans to domesticate it much earlier than many other forms of livestock, such as cattle. Pigs were mostly used for food, but people also used their hides for shields and shoes, their bones for tools and weapons, and their bristles for brushes. Pigs have other roles within the human economy: their feeding behaviour in searching for roots churns up the ground and makes it easier to plough; their sensitive noses lead them to truffles, an underground fungus highly valued by humans; and their omnivorous nature enables them to eat human rubbish, keeping settlements cleaner.

Who doesn't like a crackling sound of crispy roast pork? I know i do. On many occasion i have tried many ways to perfect this recipe. Sometimes it works and sometimes it doesn't. But, i found using air fryer increase the chances to success. Choosing a good quality pork belly is quite important too.If the skin is too thin, it will never crispy. The idea is to get a slightly thick pork belly. The ingredients to make this pork belly are too simple, only about 5 ingredients. But, the hard work will be the poking. You really need to spend more time poking the holes. Poke as many holes as possible but try not to penetrate too deep, stay near the skin. FAQ: Why are there bubbling/fizzing effect when Helen mixed salt and vinegar together, but it did not happen with mine?
Answer: The salt Helen used accidentally has baking soda (NaHCO3) in it (This was apparently added by the manufacturer to avoid clumping). It reacts with acid acetic in the vinegar and releases CO2 which causes bubbling effect. However this does not affect the roast pork. Even if your mix does not bubble, the recipe still works with most salt & vinegar.

In this episode of the Ultimate Roast Guide, Rejina is cooking with a Pork shoulder joint weighing about 2 kilos. This should feed a family of four, with enough leftovers to prepare family meals on Monday and Tuesday.
Preparation:
Take your pork out of the fridge about 30 mins before roasting to bring it up to room temperature.
Rejina's tips for achieving the perfect crackling are a very hot oven and a completely dry rind.
If your meat hasn't been prepped for you, carefully score long lines across the fat with a sharp knife.
For a traditional pork roast, brush on a thick layer of oil, sprinkle with sea salt and rub in some chopped apple and sage.
Alternatively you can give your pork a Chinese twist, using a mix of sugar, five spice, soy and ginger.
Cooking:
Pre-heat your oven to 220 degrees Celsius or gas mark 7.
Cooking time for pork is usually calculated at 30 mins per 500 grams plus 30 mins.
After 30 minutes, turn the oven down to 190 degrees for a lovely even cook.
This one will be ready in 2 hours 20 mins: you can tell when it's cooked if the juices run clear.
Once thoroughly cooked, let the pork rest for 20 mins under a foil tent. This will give you time to make a delicious pork gravy.
Gravy:
Place your roasting tray on the hob and spoon off any excess fat.
Add table spoon of flour and stir well to bring out all the flavour captured in the tray.
Add stock, you can add wine if you like, and there you have a delicious pork gravy.
Carving:
Take your rested pork and remove the crackling from the meat with a carving knife.
Carve nice thick slices and serve with gravy and a crunchy apple sauce.
Leftovers:
Cool your leftover meat to room temperature and wrap in foil. These should last up to two days in the fridge.
