In the Munchies Guide to the Basque Country, host Irene Peralta explores the culinary offerings of one of the world’s greatest food destinations. With over 40 Michelin-starred restaurants serving a population the size of Bucharest, the passion for gastronomy here is tangible. They’re as proud here of their home cooks as they are of their celebrity chefs, and MUNCHIES is here to discover Basque cuisine in all its strange and delicious forms—from crystallized fish scales to hake chin jelly, it promises to be a real treat.
In Episode 1, “Old and New,” Irene starts with a traditional feast at one of San Sebastian’s most historic gastronomic societies: Txokos, a Basque institution for hundreds of years. Then she zooms into the 21st century to meet gastronaut Eneko Atxa, three-star-Michelin chef-patron of ultra-sustainable restaurant Azurmendi, visiting his Willy-Wonka-style lab, kitchen, and greenhouse.

As Wrocław and Donostia San Sebastián will be sharing the title of the European Capital of Culture in 2016, it was deemed a good opportunity to unravel the untold stories of both cities. Therefore, the Polish counterpart organised BASK - the open lab of Basque culture that took place between 20-23th of June in the revitalised backyard in Ruska Street. The event aimed at shedding light on the mystery of Basque language and traditions in the context of the Polish city of intricate history. The refurbished space served not only as an open studio for workshops led by artists, designers and linguists; there were also film screenings and concerts.
The name of the event - BASK- is a Polish word for Basque. According to Kasia Zielińska, co-ordinator of the event, it was the difficulty of exploration of the history of this nation and its language that inspired the project of art actions in the public space of Wrocław. As Zielińska says, „the mystery of the Basque origins and character created unusual pleasure in making conjectures, tentative stories and alternative scenarios". Therefore, the organisers researched the subject, but rather than reproduce exactly every detail, BASK activities aimed at creative interpretation of some of the ideas of what the concept of Basque involves.
During the project participants had an opportunity to participate in illustration, fashion design, cooking and Basque language workshops. During those days one could also watch Ivan Zulueta's movies and enjoy themselves at the parties with Basque-inspired music. All these classes and events were free of charge. It is also worth noting that BASK project made use of the facilities created during furniture design workshops that took place earlier in June 2013.
According to Zielińska, the most popular workshops were fashion design classes inspired by the style and achievements of the Basque fashion designer Cristóbal Balenciaga. Participants created their own clothing and accessories, making use of new and recycled materials, including fabrics and elements not typical for fashion. Unusual connections brought attention to the realms of recycling, costumes and offbeat approches to fashion design.
Another very popular workshops were GASTROBASK dedicated to the Basque cuisine. Jedzeniadorzeczy.pl - two passionate chefs from Wrocław strove to present the phenomenon of food from Euskadi. Despite its deceptive simplicity of ingredients there are a few restaurants in San Sebastián with three Michelin Stars. Michał Wacław and Łukasz Wasyliszyn comment that the "new Basque cuisine" has been successful precisely due to its respect for tradition combined with openness. In the workshop in Wrocław participants learnt more about pintxos and the way they are consumed in Euskadi. „It's very different to what we are accustomed to in Poland", says Zielińska, „but people really liked Basque food we prepared here in Wrocław".
Many spectators attended screenings of Ivan Zulueta's films. A cinematic collage of short films was accompanied with live music played by duet of Pleq and Thomas Mreńca. Artists had to face the unclear and often far from feature films content of Basque's works. Ambient, often murky melodies of Pleq interwove with the sounds of Mreńca's violins, introducing the viewer to dreamlike series of images. By building a special mood music offered a key to reading of Zulueta's movies. Zielińska: „people of Wrocław were amazed and we hope we will be able to offer another edition of the Basque culture lab in the future".

Spain's Basque country has long been on the culinary map of excellence.
But it's not only professional chefs that mark the gastronomic landscape of the region.
At Bilbao's 'Big Week' fiesta, passionate amateur chefs compete to be the best at whipping up traditional dishes.
STORYLINE
The gastronomy of the Basque country has long been held in high esteem by cooks and chefs from across Spain and beyond.
That's because in the Basque country food is more than just fuel - it's a true passion.
Here is Bilbao, daily cooking competitions are being held by amateur cooks from the region as part of the city's annual 'Big Week' fiesta.
The dish for today's competition is one of Basque cuisine's classics: 'Bacalao a la Vizcaina' - that's salted cod in a traditional, spicy sauce made from peppers, tomatoes and onions.
The method calls for a steady hand and plenty of patience to get the best out the delicate, desalted cod as it is briskly deep fried.
Although the objective is to make the best dish possible, amateur cook Javier Fernandez says Basque people are always happy when they are eating.
The bar restaurant Iruna is one of Bilbao's most famous.
