Fabian Stumm
Fabian Stumm (born in 1981) in Germany, studied acting at the Lee Strasberg Theatre and Film Institute in New York City.
He played a leading role in the 2013 mystery thriller Bela Kiss: Prologue by Lucien Förstner and appeared in the award winning Second World War drama Lore by Australian director Cate Shortland. Other credits include Posthumous with Brit Marling and Jack Huston, 56, which was nominated for the prestigious Max Ophüls Award and the David Foster Wallace adaptation Neon Aura.
In 2009 he joined artist Keren Cytter's performance company D.I.E NOW on their international tour. His next collaboration with Cytter, the two-hander Show Real Drama, met with great success, the Houston Chronicle calling it "intriguing (...) Susie Meyer and Fabian Stumm bring humor, angst, and yes - real drama." The production was invited all around the world from London, Rome and New York City to Shanghai, Beijing and Seoul.

Chasselas
Chasselas or Chasselas blanc is a wine grape variety grown in Switzerland, France, Germany, Portugal, Hungary, Romania and New Zealand. Chasselas is mostly vinified to be a full, dry and fruity white wine. It is also suitable as a table grape, grown widely for this purpose in Turkey.
History
Theories of its origin vary. Pierre Galet believes it is a native Swiss variety.
In 1940, Chasselas was crossed with Silvaner to produce the white grape variety Nobling.
Wine regions
Widely grown in the cantons of Switzerland where it has several regional synonym names, the main one being Fendant in the Valais canton. It is considered an ideal pairing for raclette or fondue. Chasselas is also known as Perlan in the Mandement district of Geneva. In 2009, it was Switzerland's second most grown grape variety at 4,013 hectares (9,920 acres).
In Germany with 1,123 hectares (2,770 acres), it is almost exclusively grown in the wine region of Baden under the name Gutedel.
In France it is mostly grown in the Loire region where it is converted into a blend with Sauvignon blanc called "Pouilly-sur-Loire". California and Australian growers know this variety under the alias names of Chasselas Dore or Golden Chasselas.

Fabian Forte
Fabiano Anthony Forte (born February 6, 1943), professionally known as Fabian, is an American singer and actor.
Forte rose to national prominence after performing several times on American Bandstand. He became a teen idol of the late 1950s and early 1960s. Eleven of his songs reached the Billboard Hot 100 listing.
Early life
Fabian Forte is the son of Josephine and Dominic Forte; his father was a Philadelphia police officer. He is the oldest of three brothers.
Discovery
Forte was discovered in 1957 by Bob Marcucci and Peter DeAngelis, owners of Chancellor Records. At the time, record producers were looking to the South Philadelphia neighborhoods in search of teenage talents with good looks.
Marcucci was a friend of Fabian's next door neighbor. One day, Fabian's father had a heart attack, and, while he was being taken away in an ambulance, Marcucci spotted Fabian. Fabian later recalled:
However, when Fabian's father returned from hospital, he was unable to work, so when Marcucci persisted, Fabian and his family were amenable and he agreed to record a single.

So Chasselas, we can make such different wines with this variety. It's a really old variety and what I really like is that Chasselas releases the terroir of the soil because the variety is quite neutral. It's not too acidic, not too intense. So we can really feel the region, when we blind taste the Chasselas we can feel the different spots. That's what I like in the Chasselas, not a technological Chasselas. Subtle wines, quite fresh, with a good fatness and easy to drink. Good Chasselas for me is a really drinkable Chasselas.
Excellent, and because of its neutrality, or its subtlety, in terms of yeast, in terms of barrels, or ageing, what do you do to preserve that purity?
This variety, because the variety is quite light, it doesn't really like barrels, it doesn't really like the different method. In my point of view, the vats, the big foudre, is probably one of the best ways. Otherwise the tanks also, and when we release the yeast we also have to be very careful. Because the wine is neutral, if we really release too much the lees, we feel the lees too much. So that's probably one of the most difficult wines that we produce because the Chasselas doesn't support reduction, doesn't support oxidation. We have to match the vinification with a lot of accuracies.
So neutrality is not easy?
It's not easy, no. Because it's subtle. It's not a demonstrative variety.

Fabian Kowallik, besser bekannt als „Exiled Medic“, ist Gesundheits-Influencer, Buchautor und eine polarisierende Figur auf Social Media. Nachdem er als Kind seinen Vater an Krebs verlor, begann für ihn eine lebenslange Suche nach Antworten zu Gesundheit und Ernährung. Ein abgebrochenes Medizinstudium, ein Master in Ernährungswissenschaften und Jahre in der Lebensmittelindustrie haben ihn geprägt und zu einem scharfen Kritiker gängiger Praktiken gemacht. Heute hat er sich mit der Mission „Die Welt heilen“ eine riesige Community aufgebaut, die ihm bei seiner Reise zwischen Aufklärung und Kontroversen folgt.

Fabian Stumm
Fabian Stumm (born in 1981) in Germany, studied acting at the Lee Strasberg Theatre and Film Institute in New York City.
He played a leading role in the 2013 mystery thriller Bela Kiss: Prologue by Lucien Förstner and appeared in the award winning Second World War drama Lore by Australian director Cate Shortland. Other credits include Posthumous with Brit Marling and Jack Huston, 56, which was nominated for the prestigious Max Ophüls Award and the David Foster Wallace adaptation Neon Aura.
In 2009 he joined artist Keren Cytter's performance company D.I.E NOW on their international tour. His next collaboration with Cytter, the two-hander Show Real Drama, met with great success, the Houston Chronicle calling it "intriguing (...) Susie Meyer and Fabian Stumm bring humor, angst, and yes - real drama." The production was invited all around the world from London, Rome and New York City to Shanghai, Beijing and Seoul.

So Chasselas, we can make such different wines with this variety. It's a really old variety and what I really like is that Chasselas releases the terroir of the soil because the variety is quite neutral. It's not too acidic, not too intense. So we can really feel the region, when we blind taste the Chasselas we can feel the different spots. That's what I like in the Chasselas, not a technological Chasselas. Subtle wines, quite fresh, with a good fatness and easy to drink. Good Chasselas for me is a really drinkable Chasselas.
Excellent, and because of its neutrality, or its subtlety, in terms of yeast, in terms of barrels, or ageing, what do you do to preserve that purity?
This variety, because the variety is quite light, it doesn't really like barrels, it doesn't really like the different method. In my point of view, the vats, the big foudre, is probably one of the best ways. Otherwise the tanks also, and when we release the yeast we also have to be very careful. Because the wine is neutral, if we really release too much the lees, we feel the lees too much. So that's probably one of the most difficult wines that we produce because the Chasselas doesn't support reduction, doesn't support oxidation. We have to match the vinification with a lot of accuracies.
So neutrality is not easy?
It's not easy, no. Because it's subtle. It's not a demonstrative variety.
