In the early years of his career, he was often cast in the role of a charismatic villain, most notably in Scream 2 (1997), Go (1999) and The Girl Next Door (2004). He later became better known for his two television roles as western lawmen; Sheriff Seth Bullock in Deadwood (2004–2006) and Deputy U.S. Marshal Raylan Givens in Justified (2010–2015).
Olyphant was born in Honolulu, Hawaii but moved to Modesto, California at the age of two. His parents are J.V. Bevan Olyphant, who worked as vice president of production at Gallo Winery, and Katherine (née Gideon). He has an older brother, Andrew, and a younger brother, Matthew. His parents divorced when Olyphant was a teenager; both remarried. His father later moved to Arizona, where he owns an extensive cattle ranch.
Olyphant is a descendant of the Vanderbilt family of New York. His paternal fourth great-grandfather was family patriarch Cornelius Vanderbilt and his third great-grandfather was William Henry Vanderbilt, who doubled the family's railroad fortune. Olyphant's great-great-grandmother was socialite Emily Thorn Vanderbilt, his great-grandmother was socialite Emily Vanderbilt Sloane and his granduncle was music producer John Hammond. The surname Olyphant is of Scottish origin. Grange Hill is a British television children's drama series originally made by the BBC. The show began its run on 8 February 1978 on BBC1, and was one of the longest-running programmes on British television when it ended its run on 15 September 2008. It was created by Phil Redmond who is also responsible for the Channel 4 dramas Brookside and Hollyoaks; other notable production team members down the years have included producer Colin Cant and script editor Anthony Minghella.
After 30 years, the show was cancelled in 2008 as it was felt by the BBC that the series had run its course.
The drama was centred on the fictional comprehensive school of Grange Hill in the (equally fictitious) borough of North London called "Northam" (although when filming moved to Liverpool in 2003, it ceased to have any specific location), and follows the lives of the students as they progress through school. The series was to have originally been called "Grange Park", which would go on to be used as the name of the school in another Redmond creation, the Channel 4 soap opera Brookside (1982–2003).

August's debut film was 1999's critically acclaimed Go, for which he also served as co-producer and second unit director.
In 1998, August acquired the film rights to Daniel Wallace's Big Fish. His adaptation became the 2003 Tim Burton film of the same name and earned August a 2003 BAFTA Award nomination for Best Adapted Screenplay.

I bet he feels like an elephant
Shaking his big grey trunk for the hell of it
You know, that you're dreaming about being loved by him
Too bad your chances are slim
And it's not like Mr Shock to get shy
When my eskimo is on top
He's got friends but you get the feeling
That they wouldn't care too much if he'd just disappear
Here comes
He pulled the mirrors off his cadillac
Because he doesn't like it looking like he looks back
Somebody grabbed his collar
He cried the whole way home
