My mother passed down her macaroni and cheese recipe to me about 20 years ago. I have made my own tweaks since then to create what is now known as my Ultimate Five-Cheese Macaroni and Cheese. Made with a blend of sharp cheddar, Monterey Jack, mozzarella, Pecorino Romano, and parmesan cheeses, this dish has become a favorite of every single person who has tasted it. Yes, this recipe is a little labor intensive, but it is well worth it!

I normally cook this dish in glass. For this video, it was cooked in my Lodge 3-quart enameled cast iron Dutch oven. I have also had success with cooking this dish in a regular, ‘well-seasoned’ cast iron skillet. If cooked in glass, increase your temperature to 400 degrees. Also, the deeper your dish, the longer it will take to cook. If your dish is shallow, it will take less time. So, you may want to do a test run to be sure of the appropriate times for your cookware.

Many foreigners do find Filipino Macaroni Chicken Salad very interesting. Because it is not common! Here in the States, you will see either a Chicken Salad or Macaroni Salad but not Chicken "and" or "with" Macaroni Salad!
In the Philippines, this is very common during parties and special gatherings with families. Here in our home, we never go out of Filipino Macaroni Chicken Salad especially during Christmas and Thanksgiving Day! The entire family just love it!
1 Pack of Macaroni Pasta (elbow)
1/2 lb Chicken Breast (cooked, cut into small cubes) - with this recipe, I did not shred the cooked chicken
2 Cups of Mayonnaise (or up to you!)
1 Big Can Pineapple Slices (cut into chunks!)
1 Teaspoon Brown Sugar
Optional: (which I did not include on this recipe because of our kids' choices!)
1/2 Cup Raisins
3 Tablespoon Sweet Pickles
1/3 Cup Minced Onions
Pepper and Salt to Taste

Macaroni is a variety of moderately extended, dry pasta made with durum wheat. Macaroni noodles normally do not contain eggs, (although they may be an optional ingredient 1) and are normally cut in short, hollow shapes; however, the term refers not to the shape of the pasta, but to the kind of dough from which the noodle is made. Although home machines exist that can make macaroni shapes, macaroni is usually made commercially by large-scale extrusion. The curved shape is caused by the different speeds on either side of the pasta tube as it comes out of the machine. The name derives from Italian "maccheroni", although today this name has fallen into disuse, in favor of more popular names "rigatoni" or "tortiglioni".
According to legend, macaroni was brought to Italy by Marco Polo, returning to Venice from China in 1292. This hypothesis has long been disproved, since it seems that macaroni was already used in Italy at least a century before, like pasta in general; Moroccan geographer Muhammad al-Idrisi who lived in Sicily, witnessed the existence of macaroni in Sicily and in particular in Trabia.

Filipino Macaroni Chicken Salad Pinoy Style
Many foreigners do find Filipino Macaroni Chicken Salad very interesting. Because it is not common! Here in the States, you will see either a Chicken Salad or Macaroni Salad but not Chicken "and" or "with" Macaroni Salad!
In the Philippines, this is very common during parties and special gatherings with families. Here in our home, we never go out of Filipino Macaroni Chicken Salad especially during Christmas and Thanksgiving Day! The entire family just love it!
1 Pack of Macaroni Pasta (elbow)
1/2 lb Chicken Breast (cooked, cut into small cubes) - with this recipe, I did not shred the cooked chicken
2 Cups of Mayonnaise (or up to you!)
1 Big Can Pineapple Slices (cut into chunks!)
1 Teaspoon Brown Sugar
Optional: (which I did not include on this recipe because of our kids' choices!)
1/2 Cup Raisins
3 Tablespoon Sweet Pickles
1/3 Cup Minced Onions
Pepper and Salt to Taste
