Jinli street features some of Chengdu's most famous street foods. We came to shoot the Sichuan foods that tourists eat, and let me tell you, the food wasn't bad (not quite as amazing as some other lesser known places, but still good), in particular, the stinky tofu was pretty nice.

My good friend Chuchu came along for the eating experience. We sampled 6 snacks on the street. The Dan dan noodles were OK, but the stinky tofu ended up being quite nice, apart from the slight slight stench that it gave off, it was very satisfying, mostly from the garlic chili sauce it was soaked in.
We also sampled Yi Gen Mian (One noodle) , which was basically a really long noodle with a knot in the end in a classic spicy beef noodle soup broth with lots of cilantro.
All the snacks were delicious. The San Da Pao (three cannons) glutinous rice balls soaked in red sugar were nice too, and very fun to watch being made.
All in all, the Sichuan foods found here at Jinli street were fun to try and fun to film. I would recommend coming here if you are on a short trip to Chengdu and want to experience some quick street snacks without having to source out every single location. Everything was mostly pretty good. The best part about Jinli is the atmosphere and the fun of walking through a rebuilt old street with a classic China feel.

How to make Sichuan (Szechuan) Dan Dan Noodles.
Hope you enjoy this delicious noodle dish from my hometown Sichuan. For vegetarians, skip the ground pork and only use preserved vegetable.
Ingredients:
6 oz fresh noodles (or dried noodles)
3 oz spinach

Noodles in Szechuan are a staple food that can be enjoyed on almost every street. Come for a taste with me at a famous noodle joint here in Chengdu.

Here in Chengdu, I found this local noodle joint that serves up some really specific and unique noodles. The menu was on the wall and you just choose what you want and pay for them upfront.
I ordered 3 bowls:
1) The house minced pork noodles which were full of bean paste, sesame, chilies, and of course the freshest hot boiled noodles cooked to perfection. They had a strong sesame flavour which was really nice!
2) The specialty classic beef noodle soup, the 特使红烧牛肉面. It was a little spicy because this is Szechuan and wow it was nice!
3) The minced beef with red/green pepper noodles. These were SPICY, really SPICY! They were painfully enjoyable. Each bite got hotter and hotter and by the end of the bowl I was so happy but also in a lot of pain, and they also turned out to be my favourite in the end, winning over the sesame flavoured noodles.
4) I also ordered a bowl of steamed egg custard, and the fenzhengrou (Steamed spicy pork in rice flour) which were both really nice, the steamed egg custard was particularly smooth and enjoyable.
Overall this restaurant was a perfect representation of some of the noodles you can find in Szechuan. Although I did not have any DanDan noodles (担担面）, I can say that this meal is a perfect introduction to Chinese food and Chinese noodles in general. Spicy, strong hints of bean paste, cilantro, sesame, just beautiful flavours!

Dandan noodles or Dandanmian (traditional Chinese: 擔擔麵, simplified Chinese: 担担面) is a classic dish originating from Chinese Sichuan cuisine. It consists of a spicy sauce containing preserved vegetables (often including zha cai, 榨菜, lower enlarged mustard stem, or ya cai, 芽菜, upper mustard stems), chili oil, Sichuan pepper, minced pork, and scallions served over noodles.
Sesame paste is sometimes added, and sometimes replaces the spicy sauce, as in the Taiwanese and American Chinese-style of this dish. In this case, Dan Dan Mian is considered as a variation of Ma Jiang Mian (麻醬麵), sesame sauce noodles. In American Chinese cuisine, Dan Dan Mian is often sweeter, less spicy, and less soupy, and peanut butter is sometimes added.
The same sauce is frequently served over poached chicken (called Bon Bon or Bang Bang Chicken (棒棒鸡)), and on steamed, meat-filled dumplings in another Sichuan dish called suanla chaoshou. The corresponding Japanese dish is Tantan-men, a form of ramen (formally 担担麺, as in Chinese, but often written with 々, or with 坦 instead of 担 (radical is properly 手 but may be written 土), as in 担々麺、坦坦麺、 or 坦々麺).

Come for a taste with me at a famous noodle joint here in Chengdu. Please like: https://www.facebook.com/Foodrangin Here in Chengdu, I found this local noodle joint that serves up some really specific and unique noodles. The menu was on the wall and you just choose what you want and pay for them upfront. I ordered 3 bowls: 1) The house minced pork noodles which were full of bean paste, sesame, chilies, and of course the freshest hot boiled noodles cooked to perfection. They had a strong sesame flavour which was really nice! 2) The specialty classic beef noodle soup, the 特使红烧牛肉面. It was a little spicy because this is Szechuan and wow it was nice! 3) The minced beef with red/green pepper noodles. These were SPICY, really SPICY! They were painfully enjoyable. Each bite got hotter and hotter and by the end of the bowl I was so happy but also in a lot of pain, and they also turned out to be my favourite in the end, winning over the sesame flavoured noodles. 4) I also ordered a bowl of steamed egg custard, and the fenzhengrou (Steamed spicy pork in rice flour) which were both really nice, the steamed egg custard was particularly smooth and enjoyable. Overall this restaurant was a perfect representation of some of the noodles you can find in Szechuan. Although I did not have any DanDan noodles (担担面）, I can say that this meal is a perfect introduction to Chinese food and Chinese noodles in general. Jinli street features some of Chengdu's most famous street foods. We came to shoot the Sichuan foods that tourists eat, and let me tell you, the food wasn't bad (not quite as amazing as some other lesser known places, but still good), in particular, the stinky tofu was pretty nice.

My good friend Chuchu came along for the eating experience. We sampled 6 snacks on the street. The Dan dan noodles were OK, but the stinky tofu ended up being quite nice, apart from the slight slight stench that it gave off, it was very satisfying, mostly from the garlic chili sauce it was soaked in.
We also sampled Yi Gen Mian (One noodle) , which was basically a really long noodle with a knot in the end in a classic spicy beef noodle soup broth with lots of cilantro.
All the snacks were delicious. The San Da Pao (three cannons) glutinous rice balls soaked in red sugar were nice too, and very fun to watch being made.
All in all, the Sichuan foods found here at Jinli street were fun to try and fun to film. I would recommend coming here if you are on a short trip to Chengdu and want to experience some quick street snacks without having to source out every single location. Everything was mostly pretty good. The best part about Jinli is the atmosphere and the fun of walking through a rebuilt old street with a classic China feel.

My good friend Chuchu came along for the eating experience. We sampled 6 snacks on the street. The Dan dan noodles were OK, but the stinky tofu ended up being quite nice, apart from the slight slight stench that it gave off, it was very satisfying, mostly from the garlic chili sauce it was soaked in.
We also sampled Yi Gen Mian (One noodle) , which was basically a really long noodle with a knot in the end in a classic spicy beef noodle soup broth with lots of cilantro.
All the snacks were delicious. The San Da Pao (three cannons) glutinous rice balls soaked in red sugar were nice too, and very fun to watch being made.
All in all, the Sichuan foods found here at Jinli street were fun to try and fun to film. I would recommend coming here if you are on a short trip to Chengdu and want to experience some quick street snacks without having to source out every single location. Everything was mostly pretty good. The best part about Jinli is the atmosphere and the fun of walking through a rebuilt old street with a classic China feel.

Noodles in Szechuan are a staple food that can be enjoyed on almost every street. Come for a taste with me at a famous noodle joint here in Chengdu.

Here in Chengdu, I found this local noodle joint that serves up some really specific and unique noodles. The menu was on the wall and you just choose what you want and pay for them upfront.
I ordered 3 bowls:
1) The house minced pork noodles which were full of bean paste, sesame, chilies, and of course the freshest hot boiled noodles cooked to perfection. They had a strong sesame flavour which was really nice!
2) The specialty classic beef noodle soup, the 特使红烧牛肉面. It was a little spicy because this is Szechuan and wow it was nice!
3) The minced beef with red/green pepper noodles. These were SPICY, really SPICY! They were painfully enjoyable. Each bite got hotter and hotter and by the end of the bowl I was so happy but also in a lot of pain, and they also turned out to be my favourite in the end, winning over the sesame flavoured noodles.
4) I also ordered a bowl of steamed egg custard, and the fenzhengrou (Steamed spicy pork in rice flour) which were both really nice, the steamed egg custard was particularly smooth and enjoyable.
Overall this restaurant was a perfect representation of some of the noodles you can find in Szechuan. Although I did not have any DanDan noodles (担担面）, I can say that this meal is a perfect introduction to Chinese food and Chinese noodles in general. Spicy, strong hints of bean paste, cilantro, sesame, just beautiful flavours!

In Sichuan province, there is a large variety of different noodles to try. One of my favourite, even more so than the internationally famous Dan Dan noodles (dan dan mian 担担面) is the mixed sauce noodles with cowpeas, the jiangdoumian 豇豆面， they are top notch. Some of them are like Chinese street food, while others are in restaurants. Most of them are good. I found this place in Chengdu after biking around one night in search of the best noodles with a hungry stomach. I love watching the local Chinese cooking and getting to taste the noodles afterwards brings so much joy... -

Chinese noodles are said to be the best in the north of China, but I've found some amazing noodles here in Sichuan, in Southern China. In Sichuan province, there is a large variety of different noodles to try. One of my favourite, even more so than the internationally famous Dan Dan noodles (dan dan mian 担担面) is the mixed sauce noodles with cowpeas, the jiangdoumian 豇豆面， they are top notch. Some of them are like Chinese street food, while others are in restaurants. Most of them are good.
I found this place in Chengdu after biking around one night in search of the best noodles with a hungry stomach. I love watching the local Chinese cooking and getting to taste the noodles afterwards brings so much joy. Chinese cuisine is so diverse, and noodles are one of the staples. Each recipe is different, and in Chengdu, Sichuan, I've come to love noodles more than rice or even many of the stir fried dishes. There is beef noodle soup, dan dan noodles, dry chili paste mixed sauce noodles, spare rib noodles, sweet potato noodles with intestine, and a lot of them are really spicy. There are also many hand pulled noodle joints and blade-sheared noodles as well.

This week's recipe is "Dan-Dan Noodles". Once you get all the ingredients, it is not so hard to make dan-dan noodles. Enjoy the recipe;)
【INGREDIENTS】
30g soy meat
1 tbsp oil
2 tsp tien mien djan
2 tsp soy sauce
2g dried shiitake
2g kombu
160g water
160g soy milk
2 tbsp sesame paste
2 tbsp soy sauce
1 tbsp chili oil
1 tsp vinegar
1/4 tsp Chinese pepper
chinese noodles
pak choi
【INSTRUCTION】
1. put shiitake, kombu and water into a pan and bring to a boil.
2. Add all ingredients of the soup and warm it up(Don’t bring it to a boil.)
3. Boil soy meat and strain well.
4. Fry the soy meat and add tien mien djan and soy sauce. Set aside.
5. Boil pak choi for about a minute then boil Chinese noodles.
6. Put everything together into a bowl.

今週のレシピは、担々麺です。材料を集めるのが少し大変かもしれませんが、材料が揃っていれば作るのは非常に簡単です。あっさりしたスープが好みの場合は、スープには豆乳は使わないでねり白ごまの量を半分くらいに減らすと良いと思います。 ねぎ油や八角などを入れるとより本場っぽい雰囲気が出ますね。色々とアレンジができると思いますので、好みの味付けを探してみてくださいね。
【材料 1人分】
・ 大豆ミート 30g
・ 油 大さじ1
・ 甜麵醬 小さじ2
・ 醤油 小さじ2
・ 干し椎茸 2g
・ 昆布 2g
・ 水 160g
・ 豆乳 160g
・ 酢 小さじ1
・ 醤油 大さじ2
・ ねり白ごま 大さじ2
・ ラー油 大さじ1
・ 花椒 小さじ1/4（なければ入れなくても作れます）
・ 中華麺 1人前
・ チンゲンサイ 適量
【作り方】
《１》 干し椎茸、昆布、水を鍋に入れ一度沸騰させます。
《２》 スープの残りの材料を全て加え、弱火で温めます。（沸騰させると豆乳が分離しますので沸騰はさせないように）
《３》 大豆ミートに水を加え、一度沸騰させ、水気をよく切っておきます。
《４》 フライパンで大豆ミートを炒めます。甜麵醬と醤油を加え、水気がなくなったら火を止めます。
《５》 チンゲンサイを1分ほど茹で、同じ熱湯で中華麺を茹でます。
《６》 器に盛り付けたら完成です。

This week's recipe is "Dan-Dan Noodles". Once you get all the ingredients, it is not so hard to make dan-dan noodles. Enjoy the recipe;)
【INGREDIENTS】
30g soy meat
1 tbsp oil
2 tsp tien mien djan
2 tsp soy sauce
2g dried shiitake
2g kombu
160g water
160g soy milk
2 tbsp sesame paste
2 tbsp soy sauce
1 tbsp chili oil
1 tsp vinegar
1/4 tsp Chinese pepper
chinese noodles
pak choi
【INSTRUCTION】
1. put shiitake, kombu and water into a pan and bring to a boil.
2. Add all ingredients of the soup and warm it up(Don’t bring it to a boil.)
3. Boil soy meat and strain well.
4. Fry the soy meat and add tien mien djan and soy sauce. Set aside.
5. Boil pak choi for about a minute then boil Chinese noodles.
6. Put everything together into a bowl.
