Peru (i/pəˈruː/; Spanish: Perú [peˈɾu]; Quechua: Piruw [pɪɾʊw];Aymara: Piruw [pɪɾʊw]), officially the Republic of Peru (Spanish:
República del Perú ), is a country in western South America. It is bordered in the north by Ecuador and Colombia, in the east by Brazil, in the southeast by Bolivia, in the south by Chile, and in the west by the Pacific Ocean. Peru is an extremely biodiverse country with habitats ranging from the arid plains of the Pacific coastal region in the west to the peaks of the Andes mountains vertically extending from the north to the southeast of the country to the tropical Amazon Basin rainforest in the east with the Amazon river.
Peruvian territory was home to ancient cultures spanning from the Norte Chico civilization in Caral, one of the oldest in the world, to the Inca Empire, the largest state in Pre-Columbian America. The Spanish Empire conquered the region in the 16th century and established a Viceroyalty with its capital in Lima, which included most of its South American colonies. Ideas of political autonomy later spread throughout Spanish America and Peru gained its independence, which was formally proclaimed in 1821. After the battle of Ayacucho, three years after proclamation, Peru ensured its independence. After achieving independence, the country remained in recession and kept a low military profile until an economic rise based on the extraction of raw and maritime materials struck the country, which ended shortly before the war of the Pacific. Subsequently, the country has undergone changes in government from oligarchic to democratic systems. Peru has gone through periods of political unrest and internal conflict as well as periods of stability and economic upswing.
Cape Town (Afrikaans: Kaapstad [ˈkɑːpstɐt]; Xhosa: Ikapa) is a city in South Africa. It ranks third among the most populous urban areas in South Africa, after Johannesburg and Durban, and has roughly the same population as the Durban Metropolitan Area. It is also the provincial capital and primate city of the Western Cape. It is the southernmost city on the African continent.
As the seat of the National Parliament it is also the legislative capital of the country. It forms part of the City of Cape Town metropolitan municipality. The city is famous for its harbour, for its natural setting in the Cape Floristic Region, as well as for such well-known landmarks as Table Mountain and Cape Point. As of 2014, it is the 10th most populous city in Africa and home to 64% of the Western Cape's population. It is one of the most multicultural cities in the world, reflecting its role as a major destination for immigrants and expatriates to South Africa. The city was named the World Design Capital for 2014 by the International Council of Societies of Industrial Design. In 2014, Cape Town was named the best place in the world to visit by both The New York Times and The Telegraph.
South Africa, officially the Republic of South Africa, is the southernmost sovereign state in Africa. It is bounded on the south by 2,798 kilometers of coastline of southern Africa stretching along the South Atlantic and Indian Oceans, on the north by the neighbouring countries of Namibia, Botswana and Zimbabwe, and on the east by Mozambique and Swaziland, and surrounding the kingdom of Lesotho. South Africa is the 25th-largest country in the world by land area, and with close to 53 million people, is the world's 24th-most populous nation. It is the southernmost country on the mainland of the Old World or the Eastern Hemisphere.
South Africa is a multiethnic society encompassing a wide variety of cultures, languages, and religions. Its pluralistic makeup is reflected in the constitution's recognition of 11 official languages, which is among the highest number of any country in the world. Two of these languages are of European origin: Afrikaans developed from Dutch and serves as the first language of most white and coloured South Africans; English reflects the legacy of British colonialism, and is commonly used in public and commercial life, though it is fourth-ranked as a spoken first language.
Peruvian cuisine reflects local practices and ingredients—including influences from the indigenous population including the Inca and cuisines brought in with immigrants from Europe (Spanish cuisine, Italian cuisine, German cuisine), Asia (Chinese cuisine and Japanese cuisine) and West Africa. Without the familiar ingredients from their home countries, immigrants modified their traditional cuisines by using ingredients available in Peru. The four traditional staples of Peruvian cuisine are corn, potatoes and other tubers, Amaranthaceaes (Quinoa, Kañiwa and kiwicha) and legumes (beans and lupins). Staples brought by the Spanish include rice, wheat and meats (beef, pork and chicken). Many traditional foods—such as Quinoa, kiwicha, chili peppers, and several roots and tubers have increased in popularity in recent decades, reflecting a revival of interest in native Peruvian foods and culinary techniques. Chef Gaston Acurio has become well known for raising awareness of local ingredients. The US food critic Eric Asimov has described it as one of the world's most important cuisines and as an exemplar of fusion cuisine, due to its long multicultural history.
A pisco sour is a cocktail typical of South American cuisine. The drink's name comes from pisco, which is its base liquor, and the cocktail term sour, in reference to sour citrus juice and sweetener components. The Peruvian pisco sour uses Peruvian pisco as the base liquor and adds Key lime (or lemon) juice, syrup, ice, egg white, and Angostura bitters. The Chilean version is similar, but uses Chilean pisco and pica lime, and excludes the bitters and egg white. Other variants of the cocktail include those created with fruits like pineapple or plants such as coca leaves.
The cocktail originated in Lima, Peru, and was invented by Victor Vaughen Morris, an American bartender, in the early 1920s. Morris left the United States in 1903 to work in Cerro de Pasco, a city in central Peru. In 1916, he opened Morris' Bar in Lima, and his saloon quickly became a popular spot for the Peruvian upper class and English-speaking foreigners. The pisco sour underwent several changes until Mario Bruiget, a Peruvian bartender working at Morris' Bar, created the modern Peruvian recipe of the cocktail in the latter part of the 1920s by adding Angostura bitters and egg whites to the mix.

There's so much to do here other than Machu Picchu. First I started off going to the other old cities in the North in Trujillo, spend a few days relaxing in Huachaco, and then a full blown hiking and climbing mountains in Huaraz for 2 weeks. Huaraz is by far the best place to do alpine trekking and mountaineering second to only the Himalayas. The alpines here are stunning and not too difficult to climb. In Huaraz, I went to Laguna 69, summited Mateo, trekked Santa Cruz independently and went way up to 5000m to see a glacier. I could spend like a month just in Huaraz. Open International de Sandboard 2012 in Huacachina Oasis, Ica Peru and travel to Nazca Peru to sandboard the biggest dune in the world called Cerro Blanco at 6791 ft./ 2070 m. 3 hr. hike to the summit, about a two min. ride down at about 40 mph and a 1.23 mile run. normally this guide is with a group of 5 or more, but I was lucky enough to do this with a Guide and me. So I had a great solo ride down, left him in the dust for the condors haha. The hike was very spiritual so I had to get a Nazca line condor tattoo.
