The mum-of-three had tried Weight Watchers, Slimming World and Slimfast before adopting the frugal diet consisting of 'apricot' tart made with carrots and Lord Woolton's rolled oats pie. Carolyn, a social media administrator, weighed 25st at her heaviest and ate on average 5000 calories a day. Her new forties inspired diet - which Carolyn cooks from scratch - totals a healthier 2,000 calories.
