Bak chor mee, as I learned, is a true Singaporean dish. There are many similar dishes in parts of China and Malaysia, but the real bak chor mee is, from what many say, a true Singaporean food. So I was excited to try it for the first time. Since I was staying not too far from Hill Street Tai Hwa Pork Noodles, which happens to be one of the most legendary hawkers selling the dish, Ying and I decided to try it one afternoon. To my surprise, the line wasn’t very long when we arrived, and there were just about 5 people waiting in line in front of me. So it only took about 5 minutes before I got my bowl of noodles.
Bak chor mee, which is also called pork noodles, includes yellow egg noodles, which are tossed in a sauce of oil and chilies and vinegar, and then topped with a variety of different pork ingredients like minced pork, liver, and in this case a couple of meatballs and some wanton dumplings, and finished off with some green onions. I added in a few spoonfuls of diced bird eye chilies to the side of my bowl to kick the heat up a notch as well.
After mixing up the noodles and all the sauce, I took a bite of my first bowl of bak chor mee. I’m a huge egg noodle lover, so I immediately enjoyed the egg noodles, which were slightly chewy and fresh. I also enjoyed the sauce, which was slightly spicy from the sambal and chilies, and especially balanced nicely with vinegar to give it a sour touch. It was similar to a bowl of wanton mee, but it had a different taste to it as well. I can’t really speak for other days and how busy Hill Street Tai Hwa Pork Noodles will be, but on a weekday in the middle of the afternoon, it wasn’t bad at all. And they serve a bowl of noodles that I think are worth making a queue for.

#Smoked Paprika Mayonnaise
1/4 cup mayonnaise
1 tablespoon smoked paprika
1 teaspoon hot sauce (recommended: Sriracha)
--Preheat a flat top grill pan to medium-high heat.
--In a medium bowl, mix the ground pork, sausage, cheese, garlic, and salt and pepper, to taste. Form the meat mixture into small equal-sized patties.
Cook the burgers for 3 to 4 minutes on each side. Remove them from the pan and serve on split rolls with a half a slice of bacon, lettuce, tomato and Smoked Paprika Mayonnaise.
--Smoked Paprika Mayonnaise: Mix all of the ingredients together in a medium bowl. Cover with plastic wrap and refrigerate until serving, allowing the flavors to meld. Can be made a day ahead.

** This was actually my very first attempt at this Roasted Pork Belly. I wasn't going to film a video of it as I didn't know if it would be a success or fail. Fortunately, it turned out quite nice. =) So, please excuse the crappy unprofessional filming ~.~"
If you find it is too difficult to prick the pork skin when the pork is raw, you could follow the steps in the video exactly, EXCEPT wait until you have removed the thick layer of course salt, prick the pork skin before you put it back into the oven for the very last step (skin popping and crackling). The skin becomes much easier to handle (pricking holes) when the piece of pork is cooked.

: Japanese mayo
魚醤を使うといっきにエスニックな風味が出ました。魚醤がない方はポン酢で和風にしてみてはいかがでしょうか。ちなみに魚醤はほとんどのスーパーで手に入ります。
一人分で使った材料

Slow smoked pork shoulder. For this recipe, I started with a whole pork shoulder. Today I'm smoking the whole shoulder on an Ole Hickory MM.
I start by trimming the whole shoulder from 20lb to around 18lbs. I remove most of the skin and fat and anything that is a barrier to the bbq meat.
To season this whole pork shoulder, I start with a simple AP season, apply a layer of mustard slather and finish with The BBQ Rub. Next I inject with a pork injection and allow the pork shoulder to sit out and come up to room temp for about 1 hour while the smoker comes up to temp.
I smoke this whole pork shoulder at 225-230 degrees. For a whole shoulder it takes 1hr per pound - so expect a 17-18 hour cook. I smoke the pork shoulder with hickory wood until it gets a nice bark on the outside and hits around 150-160 internal. At that point I wrap the pork shoulder and cook until it hits 192 internal.
Once the pork shoulder hits 192 internal, I unwrap it and apply The BBQ Sauce as a glaze. I allow the glaze to set on the bbq shoulder while it come on up to the 195-198 internal temp I'm shooting for.
Once the glaze has set on my smoked shoulder, it's time to pull it and serve the bbq pork.

He reviewed a genuine U.S. MRE. It was Menu No.17 Maple Sausage. It was a great look at a U.S. MRE through the eyes of someone from another country. I wanted to make a review of the same menu myself to show the similarities and differences between our two takes on the meal. Unfortunately I wasn't able to get a 2012 Menu No.17 Maple Sausage MRE and had to settle for a 2010 Menu No.4 one that I had on hand. They're pretty similar menus though. This also serves as a comparison between the 2010 and 2012 versions of the Maple Sausage menu.

Making country style pork ribs in a smoker is easy. My video shows you step by step how to take a country style pork rib and turn it into a delicious meal that makes everyone come back for seconds.
Well lets take a look at what ingredients you are going to need:
1 Package of country style pork ribs
Six ounces of quality pineapple juice (I prefer Dole pineapple juice)
Barbecue Sauce that does not have “hickory” in it
BBQ Rub (I make my own check out my video on making your own BBQ Dry Rub)
Apple Wood
Equipment I used in my video
Masterbuilt Electric Smoker (I love it)
Disposable pan
Aluminum foil
Gas Grill (optional)
BBQ Sauce Mop
Smoked Country Style Ribs Recipe
Apply Dry Rub to country style ribs and let them sit in your refrigerator for about an 1 ½ hours before cooking
Heat Smoker to 275 degrees and add liquid to water pan during warm up
Place ribs in your smoker for about 1 ½ hours until meat is at 150 degrees
During first 1 ½ hours make sure to keep the smoke flowing
While ribs cooking make bbq sauce mixture in disposable pan
When pork ribs at 150 degrees place them in bbq mixture and cover with foil
Place the pan back into the smoker for an additional hour of cooking
Once the hour is done either place the ribs back into the smoker and cover with sauce to glaze them for about 5 minutes a side, or place them on your grill to caramelize them nicely like it did.
Once they are done simply take them off and enjoy.
