Various of pots with mole STORYLINE: The Festival of the Enchilada is underway in the Iztapalapa District of Mexico City and runs from Wednesday 6 September until Sunday 10 September. The festival celebrates the classic Mexican dish with over 200 types of enchiladas from all regions of Mexico; enchiladas with red sauce, enchiladas with green sauce, Swiss enchiladas, and enchiladas ranchers to name a few. "In this festival you will find at every stand, a regional enchilada from all over Mexico. So, you will find more than 200 varieties of enchiladas," said Ignacio Valle, the Festival Organiser. The enchiladas are made with spices and ingredients native to the particular regions of Mexico. More than 60 thousand people will enjoy this popular Mexican food at an affordable price, the average order costing a mere two US dollars. During the fair, artisans will exhibit their handiwork and performers will participate in artistic and cultural spectacles. In addition to the classic enchilada, the menus will include soups, appetiser and a variety of Mexican desserts. Enchiladas are often filled with an assortment of shrimp, fish, carnitas (pork) and cured meat and are usually made with corn (maize) tortillas. The tortillas are fried for a short time in hot lard or oil to soften them and they are then dipped in the desired enchilada sauce. The tortillas are filled up with various ingredients and layered with sauce and possibly cheese and chopped onions.
