With the intent of recreating Japanese dishes using local ingredients, Nikkei (Japanese descendants abroad) informally created Nikkei cuisine, a fusion popularized worldwide by Nobu Matsuhisa's empire. MUNCHIES flew to the Land of the Incas to interview three very different local and proud Nikkei chefs: Mitsuharu Tsumura (of Maido, a top 15 restaurant in all of Latin America), Toshiro Konishi (of Toshiro's, a favorite amongst Lima's Elite) and Toshi Matsufuji (of Al Toke Pez, a delicious hole-in-the-wall in one of Lima's working-class neighborhoods). Our skilled chefs took time from preparing entrées like ceviche with ponzu, dashi, and tempura seaweed to explain why the flavors of the far-flung nations pair so well.

This beef rump recipe was inspired by the process of making traditional Japanese binchotan charcoal from Japanese white oak. The edible leek charcoal that coats the beef in this dish is made with the same process that is used to make the binchotan, and in doing so captures the essence of charcoal.
Ingredients
• Japanese leeks (negi)
• Hida beef rump
• salt and pepper
• olive oil
• butter
• red wine veal jus, to serve
Cook's notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
Instructions
On a wire rack suspended high above a brazier of binchotan charcoal, very slowly dry and roast the leeks for at least 12 hours or until they are a brittle black charcoal. Allow to cool, then grind to a fine powder.
Season the beef. Heat oil and butter until in a heavy-based frying pan to about 60°C. Add the beef and slowly pan-roast over low to medium heat, while continuing to nappé (lightly spoon) the butter and oil mixture over the beef, for about 30 minutes or until it is cooked medium-rare all the way through.
Roll the beef in the leek charcoal and serve with a red wine veal jus.

Despite the reputation that sumos have for their huge statures, the recipe for chanko nabe is actually relatively healthy, low in fat and loaded with vegetables. This version uses only chicken – based on the old joke that eating an animal that walks only on two legs will help a sumo stay on his feet – but in reality there’s no fixed recipe for chanko nabe, and versions can contain beef, salmon, pork or anything else you like. In fact, the only qualification for something to be chanko nabe seems to be that it is made by, or for, a sumo.
Ingredients
• 1daikon
• 2carrots
• 10fresh shiitake mushrooms
• 1 kgchicken thigh fillets
• 2potatoes
• 300 genoki mushrooms
• 1 bunchgarlic chives (nira)
• 3Japanese leeks (negi)
• ½Chinese cabbage (hakusai or wombok)
• 2 blocksthick fried tofu (atsuage)
• ½ cupmiso paste (optional)
• 1 kgudon noodles
• 2 tbsptoasted sesame seeds, roughly ground
Miso tsukune (meatballs)
• 600 gminced chicken
• 4spring onions (scallions), finely chopped
• ¼ cupmiso
• salt
Soup base
• 2 litres(8 cups) dashi stock
• 2 tbspsoy sauce
• 2 tbspmirin
• 2 tbspsake

To make the meatballs, firmly mix all ingredients and a good amount of salt, for about 4-5 minutes or until the mixture starts to stiffen. Refrigerate for 30 minutes. Shape into balls about the size of golf balls.
Peel the daikon and carrot. Cut the daikon into bevelled rounds and chop the carrot into irregular chunks. Trim the stalks of the shiitake mushrooms, and cut a cross into the top of each one. Cut the chicken into 2.5 cm-square chunks. Peel the potatoes and cut into irregular chunks. Trim the enoki. Cut the garlic chives into 5 cm lengths.
Place the potato and carrot in a saucepan of cold water and bring to a simmer. Add the daikon, and simmer until nearly tender. Drain well and set aside.
To make the soup base, place the dashi stock in a saucepan and bring to a simmer. Add the seasonings, and taste and adjust if necessary. Add all of the ingredients, except the udon noodles and ground sesame seeds, and simmer until the chicken and meatballs are cooked through. Add the udon noodles, and simmer for another 1 minute or until the noodles are tender. If you like, you can blend through a little extra miso at the end, to give the nabe a boost in flavour. Adjust for seasoning and serve with roughly ground sesame seeds.

Add all of the ingredients, except the udon noodles and ground sesame seeds, and simmer until the chicken and meatballs are cooked through. Add the udon noodles, and simmer for another 1 minute or until the noodles are tender. If you like, you can blend through a little extra miso at the end, to give the nabe a boost in flavour. Adjust for seasoning and serve with roughly ground sesame seeds.

Ochazuke is a Japanese dish of cooked rice and flavourings, with hot green tea poured over. This recipe for a salmon and salmon roe version is a delicious and simple meal in itself. Japanese pickles are a perfect accompaniment, whether you make them yourself or buy them already made.
Ingredients
200 g salmon fillet
salt
1 tsp vegetable oil
2 tbsp salmon roe
1 tsp good-quality light soy sauce
2 tbsp Japanese green tea leaves, such as sencha or houjicha
500 ml (2 cups) hot water
Asazuke
¼ head Chinese cabbage (wombok)
1 carrot, peeled and cut into half-moons
1 small cucumber, partially peeled and cut into wedges
½ tsp salt
1 piece of kombu, snipped with scissors into strips
To serve
2 cups warm cooked short-grain rice
1 tsp toasted sesame seeds
few sprigs of mitsuba, roughly chopped (see note)
2 tbsp okaki (tiny rice crackers)
½ sheet nori, very finely sliced
assorted pickles (optional)
freshly grated wasabi
Cook's notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
Instructions
Pickling time 30 minutes
To make the asazuke, cut the Chinese cabbage into 3 cm pieces and place in a resealable plastic bag. Add the carrot, cucumber, salt and kombu. Massage the salt into the cabbage until well-distributed and you start to see droplets of liquid appear on the inside of the bag. Squeeze out as much air from the bag as possible, and seal the bag. Stand the asazuke in the fridge for at least 30 minutes before serving (but longer than 1 hour is better).
Score the skin of the salmon and season well all over with salt. Heat a little oil in a frying pan until very hot. Cook the salmon, skin-side down, for about 2-3 minutes or until the skin is very crispy. Turn and cook for a further 2-3 minutes or until the salmon is just cooked. Transfer to paper towel and rest for 1 minute, to soak up any oil. Using your hands, break the salmon and skin into large pieces.
Dress the salmon roe with soy sauce and mix through.
Place the tea leaves in a teapot and add the hot water. Stand to infuse for 2 minutes.
Place the rice in a bowl. Top with the sesame seeds, mitsuba, okaki, salmon flakes, salmon roe and nori. Serve with the pickles, wasabi and a pot of tea on the side. To eat, pour strained hot tea over the rice.
Note
• Mitsuba is a Japanese herb otherwise known as trefoil. If you can’t find mitsuba, you could use shiso leaves instead.
