CLearn how to make this easy to make and amazing to taste recipe for Chinese steamed fish a great healthy recipe!
CHINESE STYLE STEAMED FISH
Ingredients
1 whole rohu fish
Sea salt to taste
Crushed black peppercorns to taste
2-3 tablespoons light soy sauce
3-4 fresh red chillies, cut into strips + for garnishing
2 inches ginger, cut into juliennes
1 stalk lemongrass, cut into thin strips

I love Chinese food! The best thing to do in Singapore is to eat. One of the best places to visit is Chinatown, which has so many places to eat your favorite Singaporean Chinese cuisine. In fact, my favorite place is the local hawker food court not too far from the metro. You can find affordable meals here that are so good you'll be surprised that they were cooked in tiny kitchens. There's not much language barriers as every place has pictures and the price clearly listed. Don't ask me for the prices of these dishes because I forgot. Some of the things I ate with Valerie included fish congee or porridge, wonton soup, fish ball noodles, and bbq pork, duck, and chicken rice combo dish. I also drank some sugar cane juice, which went down so smoothly on a hot Singaporean day. The feast was enough to feed a tour group or a village, but we managed to eat most of it. Let's just say we were incredibly hungry. The portions and proportions were wonderful. Lots to eat, and a good balance between starches and meats.

Chinese street food has been upgraded here. I find this all over the streets of Sichuan, but decided to go for a clean Chinese restaurant for this food and travel video. This famous Chinese food, known as Maocai, is very similar to hot pot, except with many more spices and flavourings, and is served individually. It’s a famous dish in Chengdu, Sichuan, China. I was looking for something spicy in Chengdu, China, where I’m living. This is very easy to accomplish, but I wanted something other than Chinese noodles or dumplings or fried Sichuan food. I didn’t want the regular. So I found this joint near my home and ordered up one of my favorite Sichuan foods, MAO CAI.
It’s basically a huge pot full of boiling spicy broth. You point and choose the ingredients you want them to cook for you. It’s really fun watching them cooking it. They then take them out and place them into a bowl full of garlic, chilies, sesame oil, chicken essence, and Sichuan peppercorn. They garnish the dish with some green onions and then you’re set to go.
It was a wonderful flavory that really brought me right up into heaven. Does Sichuan have the best food in the world? It's tourism is increasing and more and more tourists are discovering the beauty of Sichuan cuisine.

Number 5:
“On the paper fish” - 纸上烤鱼 “Zhi shang kaoyu"
This is a grilled fish “on the paper”, so that there is no charring of any ingredients and all the flavours of the spicy and garlicky broth are soaked into the fish. You also order additional ingredients, like eggs, lotus root, tofu, potato, cilantro, and greens. I ate this one in Chengdu. It’s a great Chengdu food to try.

This is the famous Leshan “sweet skinned duck”. It’s stewed in ginger, onions, sugar, salt, star anise, Sichuan peppercorn, cinnamon, fennel, cloves, and cardamom. It’s super easy and this is one of my favourite ducks in all of China.
Number 3 - Firewood Chicken - 柴火鸡 “Chaihuoji"
This was truly a magical experience. A whole chicken is chopped up and put into a wok heated by wood fire. It’s boiled in a wok full of Sichuan broad bean paste and dried chilies, making it super spicy, juicy, and salty. The wok is full of other vegetable ingredients that you personally order. I ordered potatoes to keep it classic. The best part of the whole meal is when they take a dough and place it on the side of the wok and put the lid over it, making these gooey and sticky and crispy on the outside. So satisfying. Another great Sichuan food to try in Chengdu.
Number 2 -Xinjiang food
Xinjiang food is a huge culinary world that I can’t say I’ve fully sampled. But what I did try in Urumqi was amazing. I had a meal at a traditional Xinjiang restaurant that was 3 main Xinjiang foods: Pumpkin and Lamb steamed buns, Xinjiang Lamb Kebabs, and A lamb and onion and black pepper “rounang” stuffed bread.
Number 1 - Tibetan food- “Xizang cai"
I tried this food at the four girls mountain range in Western Sichuan. This meal was so so satisfying and really rich and heavy. It consisted of spicy yak meat, fresh local potatoes, fresh local first growth forest hand picked greens fried up in a wok with yak butter, fresh tibetan “butter tea”, and blood sausage. Yet the best part of this meal was eating with the local people of the area. They were so welcoming and friendly and it really felt like a once in a lifetime experience to just sit down and chat with them in their little living room heated by a wood stove in the coldest part of the winter. What a try experience!

Chinese food. Chinese street food. I love you. The cuisine I sampled in the last year living in China was unreal. I’ve combined my top 5 Chinese food picks into one video. I mostly eat Sichuan food, so there may be some bias, but believe me, the food I ate this year, whether Chinese street food or Chinese market food or eating at nice Chinese restaurants, I’ve narrowed down into 5 delicious picks for you!

Number 5:
“On the paper fish” - 纸上烤鱼 “Zhi shang kaoyu"
This is a grilled fish “on the paper”, so that there is no charring of any ingredients and all the flavours of the spicy and garlicky broth are soaked into the fish. You also order additional ingredients, like eggs, lotus root, tofu, potato, cilantro, and greens. I ate this one in Chengdu. It’s a great Chengdu food to try.
Number 4 - Leshan duck - 甜皮鸭 “Tian pi ya"

CHINESE STYLE STEAMED FISH
Ingredients
1 whole rohu fish
Sea salt to taste
Crushed black peppercorns to taste
2-3 tablespoons light soy sauce
3-4 fresh red chillies, cut into strips + for garnishing
2 inches ginger, cut into juliennes
1 stalk lemongrass, cut into thin strips
8-10 garlic cloves, sliced
1 lemon
1 tablespoon sesame oil
1-2 stalks spring onion greens, cut into strips
Method
1. Preheat oven at 180ºC.
2. Clean the fish and make incisions diagonally on both sides of
the fish.
3. Place the fish on an ovenproof plate. Rub sea salt and sprinkle
crushed peppercorns on top. Drizzle half the soy sauce and
rub the ingredients well on both sides of the fish. Set aside to
marinate for 15-20 minutes.
4. Top the marinated fish with half the red chillies, half the ginger
juliennes, half the lemongrass, half the garlic, lemon zest and
juice of ½ lemon.
5. Cut the remaining half lemon into slices and place them on the
fish.
6. Put the plate on a baking tray and fill it with water. Put the tray
in preheated oven for 15-20 minutes or till the fish is
completely cooked.
7. Heat sesame oil in a non-stick pan till it smokes.
8. Combine remaining ginger juliennes, remaining lemongrass,
remaining red chillies, remaining garlic and remaining soy
sauce in a bowl. Add the smoking sesame oil and mix well.
9. Drizzle the sesame oil mixture on top of the steamed fish and
serve immediately garnished with spring onion greens and red
chilli strips.

Ying Tam, chef of Sydney's Ying's Seafood Restaurant, graciously shares his signature salt and pepper squid recipe with Food Safari's Maeve O'Meara. It makes more five-spice mix than you need, but you can store the rest in an airtight container for another day.
Ingredients
Five-spice mix
1 tbsp ground ginger
1 tbsp celery powder
1 tbsp chicken stock powder
1 tbsp salt
1 tsp five-spice powder
Squid
500 g fresh whole squid
2 tbsp self-raising flour
vegetable oil
cornflour
4 spring onions, chopped
2 garlic cloves, chopped
1 red chilli, chopped
½ tbsp rice wine
Cook's notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
Instructions
Combine the ingredients for the five-spice mix and set aside.
Clean the squid by pulling the tentacles from the body. Wash out the tube and remove the clear 'backbone’. Peel off the skin if desired. Cut the tentacles from the head and discard the head. Cut the tube into triangles, which helps the squid to curl during cooking.
In a bowl, mix the self-raising flour with 1 tbsp vegetable oil and a little water to make a paste. Add the squid pieces and tentacles and coat well. Sprinkle and toss with enough cornflour until the pieces are dry.
Heat enough vegetable oil in a wok for deep-frying. Add the squid, in batches, and cook until golden and crisp.
Remove with a wire basket or slotted spoon. When all the squid is cooked, drain most of the oil from the wok.
Add the spring onion, garlic and chilli to the wok. Stir-fry for 30 seconds, until aromatic. Return the squid to the wok, add 2–3 tsp five-spice mix and toss well. Add the rice wine, toss and serve immediately.
