Ingrédients pour le bouillon :
1 kg de viande de veau
3 tomates
2 oignons
1 c. à soupe de concentré de tomate
8 cl d'huile de tournesol
1 c. à soupe d'épices Bio Dar CHOUMICHA pour Couscous http://www.darchoumicha.ma/produits/d...
Sel
3 litres d'eau
120 g de pois chiche trempés
2 petits bouquets de coriandre
350 g de navet blanc
350 g de navet jaune
500 g de carotte
500 g de choux
500 g de citrouille
1 piment fort
Pour le couscous :
750 g de couscous moyen
1 c. à soupe d'huile de tournesol
1 c. à thé de sel
1 litre d'eau
1 c. à thé de beurre rance "Smen" http://www.youtube.com/watch?v=Q21Fo7...
Préparation :
Découper la viande en morceaux et la faire revenir dans une marmite sur feu doux avec l'huile, l'oignon, 2 tomates et le concentré de tomate. Mouiller avec l'eau et ajouter les épices Dar CHOUMICHA® pour Couscous, les pois chiches et un bouquet de coriandre. A la mi-cuisson de la viande, ajouter les quartiers de choux, les carottes et les navets. Lorsque la viande est presque cuite, ajouter la citrouille, la tomate restante et le piment. Lorsque la viande et les légumes sont cuits, retirer du feu. Dresser le couscous fumant sur un plat de service, creuser un puits au milieu. Arroser le couscous de bouillon chaud avant de disposer la viande et les légumes au centre. Servir le couscous très chaud.
Préparation du couscous :
Placer le couscous dans un grand plat et l'arroser avec un grand verre d'eau . Travailler avec les mains pour bien humidifier les grains de couscous et les séparer. Couvrir avec un torchon propre et laisser reposer quelques minutes, le temps que le couscous absorbe bien l'eau. Enduire l'intérieur du haut du couscoussier avec un peu d'huile, y disposer le couscous. Placer celui-ci sur la marmite du couscoussier à demi-remplie d'eau en ébullition. Quand la vapeur commence à passer à travers le couscous, compter 15mn, retirer le couscoussier et renverser le couscous dans le grand plat. L'enduire d'huile et l'arroser avec un grand verre d'eau salée. Travailler avec les doigts pour séparer les grains. Laisser reposer quelques minutes, pour que le couscous absorbe bien toute l'eau. Répéter cette opération deux fois de suite jusqu'à ce que le couscous gonfle, cuise et devient tendre. Enduire le couscous chaud de beurre rance avant de le dresser dans le plat de service.

Recette :
Pour le couscous :
700 g de couscous moyen ou fin
2 c. à soupe d'huile d'olive
1 c. à thé de sel
1 litre d'eau
2 c.s d'huile d'olive ou 1 c. c de beurre rance "Smen"
Pour le bouillon :
1 kg de viande de veau
2 oignons
4 tomates
90 ml d'huile de tournesol ou huile d'olive
Sel
3 litres d'eau
100 g de pois chiche trempés ou en conserve
1 bouquet de coriandre et persil (plus de coriandre que de persil)
300 g de navet blanc
300 g de navet jaune
350 g de carotte
300 g de céleri rave ou de choux
un blanc de poireaux
400 g de citrouille
1 piment fort (facultatif)
Épices (1 c.c de poivre, une bonne cuillère à café de curcuma, 1/2 c.c de gingembre, Sel, quelques pistils de safran)
For the couscous:

Spices (1 teaspoon pepper, a good teaspoon turmeric 1/2 tsp ginger, salt, some saffron)

1 كيلو لحم
2 بصل
4 الطماطم
90 مل زيت عباد الشمس أو زيت الزيتون
ملح
3 لترات من الماء
100 غرام حمص منقوع أو معلب
1 باقة من البقدونس والكزبرة (الكزبرة أكثر من البقدونس)
300 غرام كرفس أو الملفوف
1 الكراث الأبيض
300 غرام من اللفت الأبيض
1 الفلفل الحار (اختياري)
التوابل (1 ملعقة صغيرة من الفلفل، وهو جيد ملعقة صغيرة من الكركم 1/2 ملعقة شاي الزنجبيل والملح وبعض الزعفران)
300 غ من اللفت الأصفر
350 غرام الجزر

There is plenty of recipes on how to prepare Couscous. Here is one, but this is is different, or shall I say its the original. This is how we, Moroccan prepare our world famous dish. I understand that there is might be differences in the details but in all this is how we do it :)
INGREDIENTS:
2 Pounds of couscous grains
1 and 1/2 Cups of warm water
2 Teaspoons of salt
1/2 Cup of vegetable or olive oil
3 Tablespoons of ghee, fermented butter, or soft butter.
INGREDIENTS OF THE STEW
2 Pound of meat
1 Cup of soaked overnight garbanzo beans, or freshly shelled fava beans
A bunch of cilantro and parsley
One whole big onion
Spices: 2 tablespoon of salt, 1 teaspoon of turmeric,1 teaspoon of ground ginger, 1,2 teaspoon of black pepper.
1/2 Cup pf olive oil
VEGETABLES
2 Pounds of peeled carrots and cut on half lengthwise
2 Pounds of peeled Turnips
1 Pound of Pumpkin
1 medium size head of cabbage
6 pieces of Zucchini
HOW TO PREPARE
In a large deep plate pour your couscous grains. Mix the warm water with the salt and pour over the couscous making sure all the grains are coated. Then, pour over the vegetable oil and also make sure that it is evenly distributed.
in pressure cooker pot or a heavy bottom pot pour the olive oil, add the chopped onion, the meat, and the spices and let get golden brown for about 5 minutes. Add the garbanzo beans, the parsley and the cilantro and cover with warm water. let cook till the meat is tender and the beans are cooked all the way.
Transfer the meant mixture to the bottom of a couscousier or a steamer. Add the vegetables except the cabbage and the zucchini. Cover with water .
On top part of the steamer add the couscous grains. Cook on a medium heat stove top till steam start coming out the top part of the couscousier. Carefully remove the top part where the couscous is and dump it a large deep plate.
let cook for few minutes and start spreading it with your hands and separating the grains from each other. Add about 1/4 of warm water while working on the grains.
Place the couscous grains back in the steamer top and place back to steam for about 20 minutes.
Repeat the last step but this time add the ghee or the fermented butter, Smen, and work the grains between your fingers till they are separated completely from each other.
Place the couscous to steam for one last time.
serve the dish as shown in the video.

1 kig de cuscus
600 ml de agua para mojar el cuscus al principio
4 C à S de aceite d'oliva
1 C à C de mantequilla rancia (Smen)
1 kg de carne de cordero
1 kg de carne vaca
2 cebollas de tam grande
4 tomates
2 nabos blancos
2 navos amarillos
4 zanahorias
1 medio col cortado en dos
1 patata dulce (Boniato)
4 calabacines de dos tipos (es facultativo)
1/2 kg de garbanzos , yo he utilizado los de concerva
1 manojo de perejil
1 buen manojo de cilantro
60 gr de mantequilla es para lo ultimo a quien no le guste la mantequilla puede remplazara con el aceite de oliva
1 CC de mantequilla rancia (Smen)
1 sobre de azafrán, sal al gusto
1 CS de pimentón
1 CS de jengibre
1 CS de curcuma
1 CP de cúrcuma para poner en el agua que vamos a humedecer con ella el cuscus
1 CS de tomate concentrada se me olvido mencionarla en el video
4 CS de aceite de oliva para la segunda cocción de cuscus
Aqui tenéis el link de la receta de Tfaya ( cebolla caramelizada con pasas) tipico Marroquí : https://www.youtube.com/watch?v=ajjgSsFTAcI
Chicos ! cuando mojéis el cuscus al principio dejar que absorbe bien toda el agua y no olvidéis de abrir los granos frotándolos entre los manos de vecen cuando para que se separen los granos y no se queden como una masa. Cuando veáis que los granos están secos del todo allí empezar la primera cocción.
Se empieza a contar el tiempo de cocción en el momento en que veíais el vapor salir entre los granos desde allí contar 15 minu y así es para todo el proceso , cualquier pregunta dejármela en comentarios y estaré dispuesta a ayudaros.

Couscous aux sept légumes
Seven Vegetables Couscous
Suggestion de préparation par Choumicha avec du Couscous de blé moyen Dari. Cette recette peut également être préparée avec d'autre types de Couscous Dari.
Preparation by Choumicha using Dari medium durum wheat Couscous. This recipe can be also prepared using any other type of Dari Couscous.
Recette pour 8 personnes
Ingrédients :
750 g de Couscous de blé moyen DARI
1 c. à thé de beurre rance S'men (facultatif)
Pour la sauce :
1,5 kg de viande de veau
1 c. à thé de gingembre
1 c. à thé de curcuma
1 c. à thé de poivre
Sel
2 tomates râpées
2 gros oignons émincés
2 petits bouquets de persil et de coriandre
8 cl d'huile
2 l d'eau
100 g de pois chiches trempés depuis la veille
1/2 chou
6 carottes
6 navets
2 aubergines
6 courgettes
250 g de fèves écossées
500 g de citrouille
2 tomates coupées en quatre
1 piment fort
Préparation :
Déposer la viande dans une marmite, ajouter le sel, le poivre, le gingembre, le curcuma, les deux tomates râpées, un bouquet d’herbes, l’huile, l’oignon et l’eau.
Placer les pois chiches dans une mousseline, la nouer et la déposer dans la marmite. Couvrir la marmite et la placer sur le feu. A ébullition, baisser le feu et laisser mijoter jusqu’à la mi-cuisson des pois chiches. Rajouter les carottes, le chou, et les navets. Continuer la cuisson pendant 20 à 25 mn environ. Ajouter les fèves, le 2ème bouquet d’herbes, les aubergines, les courgettes, la citrouille, le piment, les quartiers de tomate, le sel et le poivre. Cuire le Couscous à la vapeur comme indiqué dans la recette de base. Au terme de la cuisson des légumes retirer la marmite du feu. Enduire le Couscous chaud de beurre rance “Smen” ou de beurre et le disposer dans un plat. Arroser le Couscous chaud de bouillon et le garnir de viande et de légumes. Servir le plat très chaud.

Chicken Couscous Recipe
It's off to Northern Africa for the inspiration behind this fabulously simple dish which uses the worlds smallest pasta and a whole chicken.

It's off to Northern Africa for the inspiration behind this fabulously simple dish which uses the worlds smallest pasta and a whole chicken.
Ingredients:
1 whole chicken
8 cloves garlic (chopped)
2-3 tbsp extra virgin olive oil
2-3 tbsp lemon juice
1 cup fresh parsley (chopped)
1 cup fresh coriander or mint (chopped)
Salt and Pepper
Method:
Cut the chicken down the middle of the back, so that it can be laid out flat (or get your butcher to do this for you.)
Combine the other ingredients to make the marinade. Rub the mixture all over the chicken and allow to marinate for at least 2 hours.
Bake in the oven at 180C for about an hour, depending on size. Finish off under the grill for 5-10 minutes to crisp the skin.
Couscous Ingredients:
1 packet instant couscous
1 onion finely diced
3 or 4 cloves garlic
1 red capsicum (diced)
2 tsp lemon rind
2 or 3 tbsp toasted almonds
2 tbsp fresh parsley (chopped)
2 tbsp fresh coriander (chopped)
2 tbsp fresh mint (chopped)
Method:
Cook couscous in hot water or a vegetable or chicken stock according to instructions on the packet.
Saute onion, garlic, red capsicum and lemon rind in a little olive oil for four or five minutes. Once onion is cooked, stir mixture through the couscous and add the parsley, coriander and mint.
Season to taste.
To serve: Put some of the couscous mixture onto a serving plate, place the chicken pieces on top, with the roasted almonds and slices of lemon.
Note: Both the chicken and the couscous keep well in the refrigerator for a couple of days.
Wine suggestion: Semillon Sauvignon Blanc

But my favorite part is that it's the perfect thing to pack for lunch tomorrow, too. Half the trouble, double the fun. Oh, and did I mention it's pretty darn delicious? To get the ingredients for this meal, you'll definitely want to start in the produce aisle: Carrots, cauliflower, lemons, scallions, and arugula are all included in this veggie-heavy recipe. Chickpeas are a great meatless form of protein, and olive oil, cumin, and whole-wheat couscous round it out.

Hi guys! So I attended a dinner that night where everyone had to bring a vegan dish and this is what I decided to whip up :) That also explains why I made so much! Feel free to halve the ingredients if you're only making it for yourself/a couple of people. The bowl ended up being empty by the end of the night so I guess it I'd deem this recipe to be a success? Hehe ENJOY!
