* Lưu ý:
- Trong video mình dùng 1/2 định lượng công thức đăng tại blog
- Khuôn bánh của mình có kích thước 25 x 5 x 7 cm.

* Tool: 1 loaf pan 25 x 5 x 7 cm
* Ingredients:
• 270 gr bread flour - sifted
• 30 gr cake flour - sifted
• 5 gr instant yeast
• 15 gr milk powder
• 40 gr sugar
• 4 gr salt
• 25 gr egg
• 125 - 140 gr milk - cool
• 75 gr whipping cream (30 - 40% fat) - cool
* Note:
- If you don't have cake flour, you can substitute them with all purpose flour or bread flour (same quantity). The amount of milk, therefore, needs to be adjusted depending on the type of flour used (flour with higher protein ratio needs more milk/ liquid in general).
- To have 25 gr egg, lightly whisk one egg and measure 25 gr. The remaining egg can be used for egg wash.
- The instant yeast shouldn't touch sugar or salt or they will die.

Tên bánh là Hokkaido cupcake, chắc nhiều bạn sẽ nghĩ đến ngay xuất xứ của bánh từ Nhật Bản. Theo mình biết sơ sơ thì bánh được làm từ sữa bò vùng Hokkaido nên lấy luôn tên vùng để đặt cho bánh.
Không có sữa bò Hokkaido thì mình dùng sữa bò Việt Nam cũng được nè hihi ^^
Cốt bánh là dạng bánh bông lan, nhẹ xốp chứ không phải là dạng bông lan bơ, đặc và ít xốp. Nhờ cốt bánh bông xốp nên có rất nhiều lỗ khí trong bánh, giúp nhân khi được bóp vào bánh có thể len lỏi qua từng lỗ khí nhỏ và nằm trọn trong bánh.
Nhân bánh là nhân kem trứng - hay gọi là custard, thường thấy trong bánh su kem ^^. Đối với nhân bánh có 2 cách làm mà mình thường thấy:
- Cách 1: Whipping cream được đánh bông, sau đó trộn vào kem custard để kem được mềm hơn, béo hơn.
- Cách 2: Chỉ dùng kem custard để làm nhân bánh
Mình dùng cách 2, nhân sẽ đỡ béo hơn và đỡ tốn thời gian chuẩn bị whipping cream. Mặt khác, vì whipping cream ở Việt Nam giá thành cao và thời gian sử dụng ngắn mà chỉ dùng một ít để trộn với custard thì hơi phí :P
Nguyên liệu - 14 cupcake
+ Nhân kem trứng - custard
- 200ml sữa tươi có đường
- 2 lòng đỏ trứng
- 20gr đường
- 10gr bột bắp
- 5gr bơ
- 1/2 tsp vanilla extract
+ Cốt bánh bông lan
- 40gr bột mì
- 20gr bột bắp
- 1/2 tsp baking powder
- 45gr dầu ăn
- 60ml sữa tươi có đường
- 1/2 tsp vanilla extract
- 3 quả trứng (tách riêng lòng đỏ và trắng)
- 1 nhúm nhỏ muối
- 1/4 tsp cream of tartar/ nước cốt chanh
- 60gr đường

Ingredients - for 14 cupcakes
+ Custard
- 200ml milk (sweetened)

Hokkaido (help·info) (北海道, Hokkaidō?, literally "Northern Sea Circuit"), formerly known as Ezo, Yezo, Yeso, or Yesso, is Japan's second largest island; it is also the largest and northernmost of Japan's 47 prefectures. The Tsugaru Strait separates Hokkaido from Honshu, although the two islands are connected by the underwater railway Seikan Tunnel. The largest city on Hokkaido is its capital, Sapporo, which is also its only ordinance-designated city.
Hokkaido was settled by Ainu, Nivkh, and Orok 20,000 years ago. The Nihon Shoki, finished in 720, is often said to be the first mention of Hokkaido in recorded history. According to the text, Abe no Hirafu led a large navy and army to northern areas from 658 to 660 and came into contact with the Mishihase and Emishi. One of the places Hirafu went to was called Watarishima (渡島), which is often believed to be present-day Hokkaido. However, many theories exist in relation to the details of this event, including the location of Watarishima and the common belief that the Emishi in Watarishima were the ancestors of the present-day Ainu people.

• 270 gr bread flour - sifted
• 30 gr cake flour - sifted
• 5 gr instant yeast
• 15 gr milk powder
• 40 gr sugar
• 4 gr salt
• 25 gr egg
• 125 - 140 gr milk - cool
• 75 gr whipping cream (30 - 40% fat) - cool
* Note:
- If you don't have cake flour, you can substitute them with all purpose flour or bread flour (same quantity). The amount of milk, therefore, needs to be adjusted depending on the type of flour used (flour with higher protein ratio needs more milk/ liquid in general).
- To have 25 gr egg, lightly whisk one egg and measure 25 gr. The remaining egg can be used for egg wash.
- The instant yeast shouldn't touch sugar or salt or they will die.

Tên bánh là Hokkaido cupcake, chắc nhiều bạn sẽ nghĩ đến ngay xuất xứ của bánh từ Nhật Bản. Theo mình biết sơ sơ thì bánh được làm từ sữa bò vùng Hokkaido nên lấy luôn tên vùng để đặt cho bánh.
Không có sữa bò Hokkaido thì mình dùng sữa bò Việt Nam cũng được nè hihi ^^
Cốt bánh là dạng bánh bông lan, nhẹ xốp chứ không phải là dạng bông lan bơ, đặc và ít xốp. Nhờ cốt bánh bông xốp nên có rất nhiều lỗ khí trong bánh, giúp nhân khi được bóp vào bánh có thể len lỏi qua từng lỗ khí nhỏ và nằm trọn trong bánh.
Nhân bánh là nhân kem trứng - hay gọi là custard, thường thấy trong bánh su kem ^^. Đối với nhân bánh có 2 cách làm mà mình thường thấy:
- Cách 1: Whipping cream được đánh bông, sau đó trộn vào kem custard để kem được mềm hơn, béo hơn.
- Cách 2: Chỉ dùng kem custard để làm nhân bánh
Mình dùng cách 2, nhân sẽ đỡ béo hơn và đỡ tốn thời gian chuẩn bị whipping cream. Mặt khác, vì whipping cream ở Việt Nam giá thành cao và thời gian sử dụng ngắn mà chỉ dùng một ít để trộn với custard thì hơi phí :P
Nguyên liệu - 14 cupcake
+ Nhân kem trứng - custard
- 200ml sữa tươi có đường
- 2 lòng đỏ trứng
- 20gr đường
- 10gr bột bắp
- 5gr bơ
- 1/2 tsp vanilla extract
+ Cốt bánh bông lan
- 40gr bột mì
- 20gr bột bắp
- 1/2 tsp baking powder
- 45gr dầu ăn
- 60ml sữa tươi có đường
- 1/2 tsp vanilla extract
- 3 quả trứng (tách riêng lòng đỏ và trắng)
- 1 nhúm nhỏ muối
- 1/4 tsp cream of tartar/ nước cốt chanh
- 60gr đường

Tên bánh là Hokkaido cupcake, chắc nhiều bạn sẽ nghĩ đến ngay xuất xứ của bánh từ Nhật Bản. Theo mình biết sơ sơ thì bánh được làm từ sữa bò vùng Hokkaido nên lấy luôn tên vùng để đặt cho bánh.
Không có sữa bò Hokkaido thì mình dùng sữa bò Việt Nam cũng được nè hihi ^^
Cốt bánh là dạng bánh bông lan, nhẹ xốp chứ không phải là dạng bông lan bơ, đặc và ít xốp. Nhờ cốt bánh bông xốp nên có rất nhiều lỗ khí trong bánh, giúp nhân khi được bóp vào bánh có thể len lỏi qua từng lỗ khí nhỏ và nằm trọn trong bánh.
Nhân bánh là nhân kem trứng - hay gọi là custard, thường thấy trong bánh su kem ^^. Đối với nhân bánh có 2 cách làm mà mình thường thấy:
- Cách 1: Whipping cream được đánh bông, sau đó trộn vào kem custard để kem được mềm hơn, béo hơn.
- Cách 2: Chỉ dùng kem custard để làm nhân bánh
Mình dùng cách 2, nhân sẽ đỡ béo hơn và đỡ tốn thời gian chuẩn bị whipping cream. Mặt khác, vì whipping cream ở Việt Nam giá thành cao và thời gian sử dụng ngắn mà chỉ dùng một ít để trộn với custard thì hơi phí :P
Nguyên liệu - 14 cupcake
+ Nhân kem trứng - custard
- 200ml sữa tươi có đường
- 2 lòng đỏ trứng
- 20gr đường
- 10gr bột bắp
- 5gr bơ
- 1/2 tsp vanilla extract
+ Cốt bánh bông lan
- 40gr bột mì
- 20gr bột bắp
- 1/2 tsp baking powder
- 45gr dầu ăn
- 60ml sữa tươi có đường
- 1/2 tsp vanilla extract
- 3 quả trứng (tách riêng lòng đỏ và trắng)
- 1 nhúm nhỏ muối
- 1/4 tsp cream of tartar/ nước cốt chanh
- 60gr đường

北海道之旅最終回到札幌 Hokkaido The End

北海道之道東道北八日遊終於來到最終回！
倒數第二天其實趕著回札幌所以沒什麼景點停留, 除了十勝酒場稍作停留之外都在拉車, 而且越接近城市越多人煙～才終於有日本的感覺(不然呢?!)
然後到了札幌預定的舊道廳跟計時台也是在遊覽車上觀賞～有點可惜, 在鄉村六天一到城市大家就只想購物ＸＤ
最後一天的亮點-北海道神宮也是只停留3...
北海道之道東道北八日遊終於來到最終回！

I planned to stay for a couple of days earlier this month... but I ended up getting sick (and having to cancel). Luckily, they let me drop by later in the month to help out for the afternoon.

From the Tokyo Tower one can see only skyscrapers, palaces made of concrete and glass, multi-level highway junctions and monorail expresses. But under the neon lights there are still rickshaw runners pulling their carts and geishas walking in their wooden shoes. The ornamented pagodas, the Japanese gardens, the calm Shintoist sanctuaries tell us about the age of shoguns and ninjas. The digital cameras and the swords of the samurais can be found at the same store. In the restaurants one can have sushi, sukiyaki and tempura sitting on a tatami, using chopsticks. We can take a look at the masterpieces of ikebana and origami and the pictures painted on rice paper. The travelers can take a trip to the ancient city of Kyoto, to the giant Buddha of Kamakura, to the warm springs and to the Sacred Mountain, Fujiyama, where the cherry trees are blossoming at the foot of the hills.
