Sea urchins or urchins (/ˈɜːrtʃɪnz/), archaically called sea hedgehogs, are small, spiny, globular animals that, with their close kin, such as sand dollars, constitute the class Echinoidea of the echinoderm phylum. About 950 species of echinoids inhabit all oceans from the intertidal to 5000 m deep. The shell, or "test", of sea urchins is round and spiny, typically from 3 to 10 cm (1.2 to 3.9 in) across. Common colors include black and dull shades of green, olive, brown, purple, blue, and red. Sea urchins move slowly, and feed on mostly algae. Sea otters, starfish, wolf eels, triggerfish, and other predators hunt and feed on sea urchins. Their roe is a delicacy in many cuisines. The name "urchin" is an old word for hedgehog, which sea urchins resemble.
Sea urchins are members of the phylum Echinodermata, which also includes sea stars, sea cucumbers, brittle stars, and crinoids. Like other echinoderms, they have five-fold symmetry (called pentamerism) and move by means of hundreds of tiny, transparent, adhesive "tube feet". The symmetry is not obvious in the living animal, but is easily visible in the dried test.
A hunter-gatherer is a human living in a society in which most or all food is obtained by collecting wild plants and pursuing wild animals, in contrast to agricultural societies, which rely mainly on domesticated species.
Hunting and gathering was humanity's first and most successful adaptation, occupying at least 90 percent of human history. Following the invention of agriculture, hunter-gatherers have been displaced or conquered by farming or pastoralist groups in most parts of the world.
Only a few contemporary societies are classified as hunter-gatherers, and many supplement their foraging activity with horticulture and/or keeping animals.
In the 1950s, Lewis Binford suggested that early humans were obtaining meat via scavenging, not hunting. Early humans in the Lower Paleolithic lived in forests and woodlands, which allowed them to collect seafood, eggs, nuts, and fruits besides scavenging. Rather than killing large animals for meat, according to this view, they used carcasses of such animals that had either been killed by predators or that had died of natural causes. Archaeological and genetic data suggest that the source populations of Paleolithic hunter-gatherers survived in sparsely wooded areas and dispersed through areas of high primary productivity while avoiding dense forest cover.
I didn't see any good information on cleaning the shells and teeth so I did some experimenting and made a tutorial. Yes there are better ways of opening them to eat. Do you really need a video to show you how to break something in half? This is for saving the shells and teeth for display. This is not a video for cleaning gourmet urchin for eating. But writing this is probably pointless as most of you don't seem to be able to read.

Eating live sea urchin sashimi off the street! At this street stall, sea urchins are still alive when it is cracked open and prepared for the customer. The uni has a wonderful, creamy texture, and has a fresh sweetness that rival the uni you would find at any sushi restaurant. There is a disclaimer here, however. Sea urchins feast on kelp, and if you’ve ended up with one who happened to snack on a bitter batch, it could have a slightly bitter, undesirable flavor. This video is for uni lovers who want to learn how to open a live sea urchin for the it's flesh/uni inside. It will show you how I like to obtain the uni and eat it as sashimi at home. BTW, I have tried to open a sea urchin the CORRECT way (split open in half with knife) but I found my method to be less dangerous. Also I don't need to touch it in any way. All the black stuff stays mostly in the shell, so I don't need to see it or have it spill all over counter top/inside my sink.
