Jollof rice "Cameroon Style"
What is needed...
Rice, coconut milk, diced tomatoes, mixed vegetables, blended spices, maggi, salt, canola oil, shrimp, chicken live, & scallop.
The preparation method of the sauce is the same as that of my rotini pasta, the only difference is vegetables used.
Start by washing the rice 3/4 times then cook the with coconut milk, water & a pinch of salt using either a pressure cooker or stove.

Ingredients needed:
Okra, egusi (melon seed), cray fish/smoked fish, salt, maggi, pepper, palm oil and boiled meat.
First, you slice, chopped, or grate the okra, then you put the egusi or melon seeds into a bowl and mix with a cup of water.
Next, pour about 4/5 cups of water in the pot and add in the bowl of egusi; add salt, maggi & a little palm oil to taste.
Let it cook for 10 - 15 minutes

First, wash the meat with lime, let it sit for 10 minutes and rinse with fresh water.

What you need to prepare this special dish....
Cocoyams, cocoyam leaves, collard greens, spinach etc. or any leave, crayfish, smoked fish/ boiled meat, ground country onions, palm oil, maggi, salt, pepper & water. You can also do without the country onions; it just gives a different flavor.
First you peel the cocoyams, wash, and grate using a grater. Then you mix with half teaspoon salt and half a cup of water to get the texture like the one in the video. Next you wash and fix your leaves and start wrapping.
Put a little palm oil in the pot and rub all over, as you wrap, you place in the pot. When you are one quarter into the process, stop and put some of the spices/meat & boiled meat and continue with the wrapping process; then repeat the process again just as mentioned in the video.
When done wrapping, put the remaining spices/meat, palm oil and 3 -4 cups of warm water and cook for 45 min. - an hour low heat with gentle stir to taste.
Yum! Yum! Yum! This is my favorite food of all time...can't get enough.

Then, wash your bitter leaf or spinach and drain the water (just like the one in the video) also have your cook meat or cow skin ready.
Next, put the bitter leaf or spinach into the peanut together with your meat/cow skin, a cup of water and stir to taste. Cook again for another 10-15 minutes low heat with constant stirring.
Then, place a frying pan on the stove, pour some canola oil and when is hot and ready put some slice cut onion until crisp. You then put the oil in the ndole vegetable soup and stir (just like in the video).

Rice, coconut milk, diced tomatoes, mixed vegetables, blended spices, maggi, salt, canola oil, shrimp, chicken live, & scallop.
The preparation method of the sauce is the same as that of my rotini pasta, the only difference is vegetables used.
Start by washing the rice 3/4 times then cook the with coconut milk, water & a pinch of salt using either a pressure cooker or stove.

Ingredients needed:
Okra, egusi (melon seed), cray fish/smoked fish, salt, maggi, pepper, palm oil and boiled meat.
First, you slice, chopped, or grate the okra, then you put the egusi or melon seeds into a bowl and mix with a cup of water.
Next, pour about 4/5 cups of water in the pot and add in the bowl of egusi; add salt, maggi & a little palm oil to taste.
Let it cook for 10 - 15 minutes and put in your cut, chopped of grate okra and stir to taste. Cook for another 10 - 15 minutes, then put your boil meat, stir to taste & cook an additional 5 minutes or until the pieces of okra are soft or cooked.
Your okra soup is ready to be serve. You can eat it with garri, fufu, rice or any preference of your choice. Yum!

Red meat, bamboo skewer, fresh blended spices, salt, maggi cubes, onion, yellow & red pepper, and some club house spice.
First, wash the meat with lime, let it sit for 10 minutes and rinse with fresh water.
Next, marinate it with fresh blended spices, some salt, maggi, & club house spice. let it sit for 10 minutes then boil the meat.
Then, cut your yellow, red peppers, and onions into square like shapes, mix the vegetables with the boil meat to acquire the same taste as the meat, but do not boil the vegetables with the meat.
Last, put the meat and vegetable on the bamboo skewer just as shown in the video then bake at 330 degree for 10 minutes both sides and switch to broil to have the brownish color. Enjoy!

First you blend the egusi, mix with little water or juice from the meat, add cray fish, meat, vegetable oil, eggs, pepper and mix to taste. Ensure is pasty as the one in the video.
Tying process: Use with plantain leaf/fuel paper with cling wrap on top of it. And begin tying. As you tie, place in the pot of hot water until process is complete. Cover the pot with some leaves or fuel paper then lid to keep the pressure inside.
Prep method is 45 minutes to an hour and serve as usual. Enjoy!
