'Delighting Memories' Nicolai Heidlas Music
A Tajine or tagine is a historically North African dish that is named after the type of earthenware pot in which it is cooked. A similar dish, known as tavvas, is found in the cuisine of Cyprus. This authentic flavor-rich Tajine recipe originates from the Mediterranean, Algeria to be precise. I hope you would give it a try, I promise that you would be so happy that you did! Nothing beats healthy, homemade comfort food made with love ^_^
Ingredients
6 cups boiling water
3 cups water
2 cups green olives
5 chicken drumsticks
3-4 bay leaves
2 tablespoons vegetable oil
2 tablespoons olive oil
1 tablespoon of vegetable ghee
1 finely chopped onion
7 medium sized carrots (sliced)
3 cloves of garlic
1 freshly squeezed lemon
2 tablespoons of flour
Chicken spices:
2 teaspoons salt
1 teaspoon of ginger powder & cinnamon powder
½ teaspoon black pepper
¼ teaspoon saffron powder/ flakes or curcuma
Garnish: 1 tablespoon of parsley either fresh or dry flakes ( just needs to be small)
Note. I’m using a hut-like pan, but if this is not available to you, you can use any kind of pan and this dish will cook just fine. The trick is cooking it on a low heat simmer and keeping the cover on the pan to retain as much of the water as possible.
1) In a small pot Boil green olives in 3 cups of water and simmer for 20-30 minutes. After that, drain them & set them aside.
2) In a medium sauce pan boil 6 cups of water
3) drizzle olive oil on chicken and massage chicken drumsticks. Then sprinkle spices on top and massage drumsticks some more. Cover & set aside
4) Finely chop your onion & fry with some vegetable oil & vegetable ghee (the vegetable ghee is optional but I like it) frying it on medium high heat
5) after the onions become translucent stir in the chopped garlic & gently mix
6) add in the drumsticks, 2 cups of your boiling water, salt & bay leaves and simmer for 20 minutes with the lid on
7) while your chicken and onions and garlic are simmering, cut your carrots into slices
8) take care to mix the pan contents from time to time to ensure everything gets cooked evenly.
9) Once 20 minutes are over, add the olives, the carrots and 2 & ½ cups of boiling water to the pan. Give it a good gentle mix.
10. Bring the pan to a full boil, then decrease the heat to minimum & let it cook for 25- 30 minutes.
11. once everything is cooked, the chicken and the carrots are soft, do a salt taste and make necessary adjustments if need be to the saltiness per your desire.
12. Remove the chicken drumsticks from the pan
13. Remove ¼ cups of the sauce from the pan onto a small bowl, add 2 tablespoons of flour to it & mix it until it is lump-free. Then add in the freshly squeezed lemon juice (taking care to remove any of the seeds)
14. Bring the pan to a full boil once more and drizzle the lemon & flour mixture onto the pan. Mix it well. Turn off the heat. (This step is optional, but adds a whole new richness to the flavors and everything comes together in perfect harmony)
Garnish with some parsley flakes or fresh minced parsley before serving
15. In a medium bowl whisk together 1 egg, 2 tablespoons of bread crumbs and ½ teaspoon salt.
15. On medium high heat pan, drizzle some olive oil. Dip the drumsticks in egg mixture and fry them until golden brown
16. Remove drumsticks from frying pan onto a plate lined with paper towels to soak any excess oil
17. Serve while both are warm

Ingredients
Une poignée de pois chiche trempée la veille
1 chou-fleur
Des morceaux de poulet ou viande d'agneau (j'ai pris de la viande d'agneau)
1 oignon
sel et poivre noir
½ cuillère a café de cannelle
du persil haché
un demi citron pressé
l’huile pour friture
Pour les beignets :
1 ou 2 œufs ou deux selon la grosseur du chou-fleur
1 demi cuillère à café de levure chimique [facultatif]
2 cuillère à soupe de farine
1 cuillère à soupe de persil haché
poivre noir, sel
Instructions
Commencer par rincer le chou-fleur sous l'eau froide afin de retirer les traces de saletés et d'insecticides en frottant le légume avec les doigts.
Porter a ébullition une casserole d'eau. Ajouter le chou-fleur et cuire durant 3 minutes après ébullition de l'eau (le chou fleur doit être cuit mais reste ferme).
Égoutter le chou-fleur et réserver.
Faire revenir les morceaux de viandes de tous les cotés dans une marmite avec de l'huile.
Ajouter l'oignon haché et faire revenir quelques minutes.
Ajouter le sel, poivre et la cannelle. Mouiller avec ½ l d'eau.
ajouter les pois chiche trempes la veille. Laisser cuire a couvert.
Entre temps on prépare les beignets de chou-fleur en mélangeant dans une une assiette creuse les oeufs, la farine un peut de levure (une pincée mais facultative), persil ciselé, sel et poivre. Battre le tout.
Chauffer l'huile dans une poêle. Plonger les bouquets de chou-fleur dans la préparation oeuf et les cuire dans l'huile chaude.
Les retourner des qu'ils prennent une couleur dorée, les égoutter sur du papier absorbant. Réserver.
Quand la viande se détache facilement, réduire la sauce et rectifier l'assaisonnement.
Au moment de servir arroser la sauce d'1/2 citron et de persil ciselé. Dresser un plat avec la viande au centre et les bouquets de chou-fleur autour. Saupoudrer de persil ciselé.

Shakshuka (Arabic: شكشوكة; Hebrew: שקשוקה) (also Shakshouka Chakchouka) is a dish of eggs poached in a sauce of tomatoes, chili peppers, onions, often spiced with cumin.
It is believed to have a Tunisian origin.
Shakshuka is a staple of Tunisian, Libyan, Algerian, and Moroccan cuisines traditionally served up in a cast iron pan with bread to mop up the sauce. It is also popular in Israel, where it was introduced by Tunisian Jews.
Shakshuka is Israel's hottest breakfast dish
this is the best way to prepare shakshuka, the spicy, warming, vegetable and egg dish that is a regular part of the Israeli diet and is usually served as a cooked breakfast or a light lunch.
The mix of tomato, garlic, herbs and spices, traditionally topped with sunny side up egg, is reputedly a fine hangover cure.
Israelis argue that only the version prepared over the years by their mothers or grandmothers can be described as truly authentic.
Regardless, most other Middle Eastern people will argue the same.

That took me back memory lane 23 years, and I remembered this traditional Israeli Breakfast.
So after a little practice, it all got back to me, kind of like riding a bike...

בגרסה המסורתית והמקובלת, המוגשת במסעדות פועלים רבות, חלמון הביצה נותר בשלמותו בתבשיל, בדומה לביצת עין.
גרסה שונה היא זו בה החלמונים מעורבבים בחלבונים, כמו בביצה מקושקשת.
פירוש השם בשפה הברברית הוא "תערובת".
במרוקאית נקראת השקשוקה "צ'קצ'וקה", ובשפות אחרות "תוקתוקה".
