Chili Oil: 2 tsp

The first thing we had to eat, although not technically Sichuan food, was a Chinese pastry, called huoshao, filled with a juicy, meaty, wonderful filling that was served fresh from the oven. We were super lucky to get the first ones right out of the oven after lining up for around 20 minutes. This place was found just behind Chunxi lu (Chunxi road) in Chengdu's downtown Core.
After feasting on that beautiful snack, we had to go for the real meal, the true authentic Sichuan food, Hot Pot. This is the first time I have showcased Sichuan Hot Pot in my videos. I was waiting for the right time to showcase it, and after searching for a good location and also a good partner to eat it with me (hot pot is not a one person meal), I was set to film!
Sichuan Hot Pot is basically a huge wok filled with hot chili oil and copious amounts of Sichuan chili peppers and Sichuan numbing peppers. You place raw ingredients like raw sliced beef and raw lotus root into this boiling chili oil, and then when it's ready to eat, they take on the flavour of the substance they are boiled in. It gets spicier over time. After 40 minutes of eating hot pot, you notice that it is much much spicier than it was when you first started eating.
As my friend points out in the video, eating hotpot at night with friends is the true lifestyle of Chengdu people. Eating hot pot is what you do when you want to go out with friends and relax after work and enjoy some beautiful food (美食). They literally do call it beautiful food here, that's the lifestyle!

Chinese street food and Chinese food in China is something so special to me. Eating Rabbit Head in Sichuan is a MUST do thing if you visit Chengdu, China. I also got to enjoy it with a local Chinese girl, a good friend of mine, one who also loves to eat, a wonderful experience!

The first thing we had to eat was this Chinese restaurant's specialty rabbit head, a Chinese favourite, covered in a spicy, numbing, Sichuan peppercorn flavour that was quite nice. This place was found just behind Wenshuyuan (文殊院) temple in Chengdu, near Chengdu's downtown Core.
Rabbit is not a true Chinese street food, but can be found on the street. We were lucky enough to try it right from the massive bowl on the street, as the chef had no problem with us eating it there. The chef at this Sichuan restaurant was super fun and happy. Actually, he gave the meal to us for free because we shot a video there, but I’ve added the proper prices in for your reference. I loved the true authentic Sichuan chopped cold rabbit salad. It was prepared with a whole roast rabbit, covered it in Sichuan chilies and peppercorns, peanuts, and cilantro. It was delicious, although a little dry.
Sichuan is famous for eating rabbit. Not all of the provinces in China eat rabbit. You can eat so many different types of rabbit dishes here, and to me, a good introduction into rabbit eating would be to chomp on a rabbit head and order up the dishes we tasted here. Yes, it can be a little nerve-wracking, but it’s something that you should try. In all honesty, I didn’t enjoy the head that much, as there isn’t much meat, but for the fun factor alone combined with the spicy numbing flavour makes it worth trying. After eating the rabbit for 20 minutes or so, we both realized that it was much spicier than the chef had told us, and that our mouths were numbing and burning from the heat, but still enjoyable.
As my friend points out in the video, the numbing and spicy flavour is a true characteristic flavour of Sichuan. Eating rabbit head is something that many locals enjoy, soaked in “Beautiful flavour” (美味).

Chinese Food in Sichuan has brought me so much joy! While living in China and eating local Chinese food every day, Dry hot pot is one of the top 5 Chinese foods you must try!

After living in China for the last year, I have tried a lot of different Chinese foods. Whether Chinese street food or local restaurants, Sichuan is a food lover's heaven. Sichuan is famous for spice. In particular, it's famous for it's Sichuan peppercorn, a numbing peppercorn that leaves your mouth tingling with electricity. These dishes were all "xiang la" flavour, meaning fragrant and spicy. The Sichuan pepercorn gives food a light florally flavour. Combine this with an abundance of dried red chilies and you have a mouthtastic explosion of spice and fragrance with every bite.
This was a famous dry pot restaurant in the upbeat district of Tongzilin in Chengdu. Not far away from the US Embassy, this place is popular amongst locals for their spicy dry pot. The restaurant is easy to find, below is the address:
锅锅香, 武侯区科华北路60号SOHO沸城112号力宝大厦对面(好又多及亚太广场)
In Pinyin: Wǔ hóu qū kē huáběi lù 60 hào SOHO fèi chéng 112 hào lì bǎo dàshà duìmiàn (hǎoyòuduō jí yàtài guǎngchǎng)
If you give this to a local taxi driver in Chengdu, he will surely bring you there. It's very near the US Embassy.
We also tried duck head and river fish. The duck head was extremely spicy and fragrant, and I can actually say that I somewhat enjoyed it. The highlight of this meal was the river fish. The flavours were unbelievable, so spicy and tender and no bones!!! The lack of bones was the absolute highlight of the fish, each bite was guaranteed pleasure!

After living in China for the last year, I have tried a lot of different Chinese foods. Whether Chinese street food or local restaurants, Sichuan is a food lover's heaven. Sichuan is famous for spice. In particular, it's famous for it's Sichuan peppercorn, a numbing peppercorn that leaves your mouth tingling with electricity. This duck is commonly found on the street, hanging on long bamboo poles throughout Sichuan. I was super lucky to be able to try it from a family run joint that has been making this duck for generations! The local snacks that I tried afterwards were just mind blowing, especially the cold chicken sliver noodles.
I had to leave Chengdu to find this local duck, in Pengzhou, where street food is plenty and ducks like this can be found all throughout the city, whether in family run shops like this, or hanging over the sidewalk ready to be served.

A fly restaurant is one that is not very clean, but the food is delicious. While the surroundings may not be very well kept, the food is prepared by expert chefs and the flavours are awesome. This Sichuan food is some of the best I've had so far.
The pig brain was actually pretty good! I've had pig brain a few times before and this version was prepared in a way that took away that gross factor and just gave it a nice, mushy, melt in your mouth, spice explosion that was also fragrant at the same time. Not too bad. Apart from that we ordered a massive carp simmering in thousands of chiles and sichuan peppercorns, a pork leg in a salty gravy, and these awesome red sugar puffy buns. So tasty!
Sichuan food is definitely some of the best in China, and if you're in Chengdu and looking for a real local place with delicious food, you need to come to Ming Ting, here is the address:

This is a MUST try Sichuan food! Believe me! In Sichuan, Food is the meaning of life. These Sichuan flavours brought brought joy to all.

I've been living in Sichuan for nearly a year now, and I've tried most of the famous Sichuan foods. Mapo Doufu, Twice cooked pork, Kung Pao chicken, all the snacks, all the noodles, and all classics that you try when you first get here. But I wanted something new, something delicious and exciting and life changing. I asked my local Chengdu friend Chuchu for her recommendation, and she pointed us in the direction of this amazing Sichuan Firewood Chicken AKA "Chaihuoji".
We took a bus ride about 45 minutes outside of Chengdu to an area they found that had the most classic Firewood Chicken. I was hesitant at first because there was no one eating there, but Chuchu assured me this was the best place, and that people usually don't come all this way outside on the weekends, but during the weekdays it's always busy.
The first thing you have to do is talk to the chef and choose a chicken that you like, and they will kill it for you. Unfortunately, they told us that the butcher who usually does that work was off for the afternoon so we had to choose a chicken killed earlier that morning. That was OK, but I was hoping to get it on footage to make for an interesting video.
They clean the chicken for you and then prepare all the classic Sichuan ingredients. Doubanjiang "Broad bean paste", dried chilies, fresh chilies, ginger, garlic, potatoes, taro, and bamboo shoots.
The essence of the flavour comes from the Doubanjiang paste, which is a little spicy and almost a little creamy when combined with the oil and all the other ingredients. The result was astounding. Never have I tasted something so satisfying as when I dipped that crispy yet gooey flatbread into the juicy heavens and then took a bite. It was mind blowing, something I have only dreamed of in Sichuan food. Although a little pricey for this meal (45$), this is a meal that I will keep coming back for during special occasions and gatherings with friends.
The address was a little hard to find, but if you're up for a Sichuan adventure you can give this address to the taxi, its a bit of a drive from Chengdu!

Day 9 in Taiwan, Ying and I decided to take a relatively easy day by going to a few museums, and doing something I’ve wanted to do for a long time, eat a Sichuan hot pot.
0:26 Miniatures Museum of Taiwan
The first place on our agenda for the day was a quick stop at the Miniatures Museum of Taiwan, a small private museum of models of famous buildings and architectures, especially European and English style. The museum was alright if you like to see models and the models were incredibly well detailed and very well done. Overall, it wasn’t really my style of a museum though, so we just spent a few minutes there and then it was time to eat lunch.
1;39 Old Sichuan Hot Pot - Incredible Meal
After a quick search, I noticed there was a Sichuan hot pot restaurant located just around the block from the Miniature Museum of Taiwan, and so we headed right there as they opened to have a Sichuan hot pot meal experience. The restaurant was very nice and well decorated, a real nice place. I wasn’t sure how expensive it was going to be, but we just decided to go for it and have lunch. Our water didn’t really speak English, so it was a bit of a challenge to order, but luckily they had pictures of the different plates to order, and from there they served everyone the same due of soups for the hot pot. Sichuan hot pot is a bit different from other types of hot pot because of the soup. The soup contained a lot of Sichuan pepper corns, which are little berries that have a numbing effect on the mouth and tongue as you eat them. Along with the boiling broth, we ordered a plate of beef, pork, and a plate of fish and vegetables. My first experience with eating a Sichuan hot pot was amazing, and my mouth stayed numbing and tinging for our entire meal. It for sure made me crave more Sichuan food and I can’t wait to visit Sichuan hopefully in the future. Our Sichuan hot pot meal was a bit on the expensive side, but the quality was fantastic and it was well worth it.
7:30 Confucius Temple
A few days before Ying and I had tried to visit the Confucius Temple, but unfortunately it was closed on the day we went. So since we weren’t too far, we decided to go back to the Confucius Temple. It was very quiet, and we just browsed around for a few minutes.
8:17 Taipei Fine Arts Museum
Our final stop of the day was a visit to the Taipei Fine Arts Museum, a museum showcasing contemporary Taiwanese art. The museum was quite interesting if you enjoy modern art, and for the price it was worth visiting.
Pretty tired and feeling amazing after that Sichuan hot pot, we went back to our hotel and called it a day. It wasn’t a very long Day 9, but it was very good - an amazing meal.

he area is about 60,000 hectares. Because of the inconvenient traffic, few people had visited the great mountains of the area. There're nine Tinbetans once lived here and this is why it is called Jiu Zhai Gou.
Jiu Zhai Gou is a deep valley of Mt. Minshan and looks like the letter "Y". The valley is about 40 kilometers long and its elevation is from 2000 to 3000 meters. Jiu Zhai Gou is near the another famous scenic area Huang Long Temple, actually both of them are called " the heavenly scenery on earth".
There're tens of graceful peaks around the valley and more than 20,000 hectares area of Primitive forest in it. There're 108 lakes in the valley which was called Hai Zi by the Tinbetans. Some lakes are more tens of meters deep but they are pretty clear that you can see their bottoms from the surfaces.
There're stones in the bottom which are the homes of the alga. In the sunshine, you'll find the images of the alga and trees become colorful on the surfaces of the lakes and are really beautiful!
Green lakes, colorful woods, a great many falls, ever snow peaks and the custom of the nine Tinbetan villages are the five attractions of Jiu Zhai Gou Scenic Area.

Pugong, a medicinal plant farmer, built the Puguang Hall on the Golden Summit in the 1st century AD. In the 3rd century, the Puxian form of Buddhism (which centers on devotion to the Bodhisattva Puxian, or Samantabhadra) became dominant on Emei and the Chinese monk Huichi built the Puxian Temple (now the Wannian Temple) at the foot of the Guanxinpo Terrace.
In the mid-9th century, the Song Emperor Zhao Kuangyin sent a Buddhist mission headed by Master Jiye to India. On his return he was authorized to build temples on Mount Emei, where he preached and translated the
Indian Buddhist texts. He was also authorized to cast a Puxian bronze statue, 62 tonnes in weight and 7.85 m high, now in the Wannian Temple.
Ever since, Mount Emei has been one of the most holy places of Buddhism. Extensive rebuilding during the Ming dynasty finally converted most of Emei's Taoist temples to Buddhism.
The natural beauty and sacred significance of Emei Shan has been drawing pilgrims and tourists for 2,000 years. It was designated a World Heritage Site in 1996.
What to See at Emei Shan
Emei Shan literally means "Delicate Eyebrow Mountain" — it derives its name from two peaks which face each other and look like the delicate eyebrows of a Chinese classic beauty.
Emei Shan is a UNESCO World Heritage Site featuring many temples, natural wonders and breathtaking scenery. The slopes incorporate several different climates and much wildlife, especially birds and trees. Some of the trees are more than 1,000 years old.
There are also monkeys, who are accustomed to tourists and assertive; they aren't dangerious but will beg for food and grab at bags as hikers walk along the trails. Many hikers carry walking sticks to shoo them away.
There are over 30 Buddhist temples on Emei Shan, 10 of which are large and very old. They are considered masterpieces of creative ingenuity in the way they adapt to the natural enviroment and beauty of the holy mountain.
At the mountain base is Baoguo Monastery, built in the 16th century. The monastery has serene gardens with rare plants, a library of sutras and a huge porcelain Buddha. In the stone staircase of the rear hall are figures of the Eight Immortals, betraying the temple's Taoist origins.
Further up the mountain lies the Crouching Tiger Monastery (Fuhu Si), Emei's largest temple. Once associated with the Taoist martial-arts master Zhang Sanfeng, today it is a Guanyin nunnery. Notable features include the 16th-century, 7m-high bronze Huayan Pagoda, which is engraved with 4700 Buddha images.
The Qingyin Pavilion, built against the mountainside at the foot of the Niuxin Ridge, is an ensemble of pavilions, towers, and platforms, the earliest dating from the early 6th century. Its location and the streams that run through it have earned it the name “The Mountain Garden.”
A few hours' walk or a cable car ride leads to the Golden Summit(Jinding), at 3077m. There are two temples here (the friendly Woyun Nunnery and the large Huazang Si) and thousands of padlocks inscribed with couples' names to symbolize eternal love.
Huazang Si on Jinding was founded as early as the 1st century as the Puguang Hall, later becoming the Guangxiang Temple and receiving its present royal name in 1614. It was extensively rebuilt and refurnished in the 1970s, but every effort was made to preserve its original appearance.
Jinding is the best place to experience the Four Wonders of Mt. Emei: the Buddha's Halo (rainbow-like rings that surround and move with your shadow), the Sea of Clouds, the Holy Lamp (or Divine Lights) and the Golden Summit Sunrise.
From the Golden Summit you can ride a monorail along the ridge to Wanfoding (Ten Thousand Buddha Summit), the true summit of Emei Shan.
