How to cook the perfect prawns

Prepping prawns for the barbie is a breeze with these step by step instructions

You will need:

2 tbs rice flour, 1 tsp sea salt flakes, 1/2 tsp ground white pepper, 1/2 tsp Chinese five spice, 1 finely chopped birdseye chilli, 1.5kg green prawns

Peel the prawns

Preheat a barbecue grill or chargrill on medium. Combine the rice flour, salt, pepper, five spice and chilli in a large bowl. Carefully peel the prawns by removing the head first. Use your thumb to peel the legs away from the underside of the prawn, leaving the tail intact. Peel the body last.

Remove the vein

Place prawns, on sides, on a clean work surface. Starting from the tail, cut a little way through the back of a prawn to expose the vein. Use fingers to remove and discard vein.

Flatten prawn

Continue cutting through the back of prawn to deepen the cut (don't cut all the way through). Open prawn out flat.Repeat. Add prawns to the spice mix and toss to coat.

Get ready to grill

Cook on the grill in 3 batches, turning, for 3 mins or until prawns change colour. Add cooked prawns to a seafood platter or a fresh summer salad.
