When we met Han Chiang—owner of the Han Dynasty restaurant empire—at a shoot in Philly a few years ago, we knew he would eventually need to have his own episode of Chef's Night Out. Well, we finally got around to it—and Han absolutely delivers.
After heading out of his University City location a few beers deep, our first stop is the home of world-famous mosaic artist Isaiah Zagar. At his place, we enjoy a barbacoa feast cooked by Han's friends Ben Miller and Cristina Martinez. who run a weekend taco cart in South Philly. The next stop is Amis, where Executive Chef Brad Spence has prepared a whole roasted suckling pig. Brad lets Han have the honor of chopping the head off, and then they dice up some pork to top a pizza fresh out of the oven.
Then, it's off to Prime Stache in Old City for some wings and whiskey shots with Philadelphia Eagles starting center Jason Kelce. Finally, Han stumbles across the street to his Old City location to whip up more wings, and we enjoy a special hotpot with his staff.

The Qin empire was founded at end of a war between a few powers that had lasted for more than two centuries. And it was the result of a development that created a highly centralized bureaucratic state out of a loose feudal system. While the rule of the two Qin emperors endured not even two decades, it marks nonetheless the beginning of a more than two thousand years long history of a centralized state with an emperor being the head of thousands of officers in a state with a likewise uniform culture.
Literature, thought, religion and philosophy
Apart from his great achievements that were actually the base for the foundation also of the Han empire, the First Emperor was blamed to have burned the books (fen “burning” might be a writing error for the character jin “prohibiting”) and buried alive the (Confucian) scholars. The only books that were not forbidden, are writings about medicine, herbs, divining and agriculture. Inspite of later slanderings by Han time scholars which made him not only a murderer but also a bastard of a merchant, arts and thinking were still going on under the First Emperor and prepared the great flourishing of literature and philosophy under the Han Dynasty.
Although the practical polity of the Qin rulers was legist and thus severe, bureaucratic and austere, the inscriptions in the steles the First Emperor had erected, also show that Confucian thinking like filial piety, humanity and righteousness of the ruler was still going on. The emperor himself was very interested in Daoist practices to prolong his life or to gain immortality. He sent out an expedition to search for the islands of immortality called Penglai. Generations of scholars tried to find out what country was meant with “Penglai” , some say, Japan, some even argue Penglai was America. After the proclamation as the First Emperor, he changed the official colors to black according to the theory of the Five Elements and their cosmic influence. Metors, flood and drought was a heavenly hint to him as well as it has been to the former Zhou kings. A comprehensive anthology of philosophical thinking around 250 BC is the “Spring and Autumn collection of Master Lü” Lüshi Chunqiu, compiled by the chancellor Lü Buwei.
Like the Zhou Dynasty, the Qin Dynasty’s homelands were in the far west, between nomadic tribes, giving it probably more warfare energy than the people of the states in the Yellow River basin. One king of Qin is said to have died from an injury sustained during a contest in lifting a bronze vessel.
Hundred Schools of Thought
In the turbulent Spring and Autumn Period (770-476BC) and Warring States Period (475-221BC), many schools of thought were flourishing. The four most influential schools of thought that evolved during this period were Confucianism, Taoism, Mohism, and Legalism. There were also other schools like Yin & Yang, Eclectics, Logicians, Coalition persuaders and Militarism. The hundred schools of thought showed the fierce political and class struggles for survival among regional wars between the rising landed class and slaveholder class. The flouring thoughts intensified activities and debates in the intellectual and ideology system in ancient China and exerted great influence on Chinese culture.

Confucius was the founder of Confucianism. He advocated a set of moral code on basis of five merits: benevolence, righteousness, propriety, wisdom and trustworthiness. Among them, benevolence was considered as the cornerstone, which stands for faithfulness, filial piety, tolerance and kindness. He also requested people to keep in good harmony with each other and establish a community ruled by standard manners and behavior.
Mencius (372-289BC) was a Confucian in the Warring States Period (475-221BC). He repeatedly tried to convince rulers that the ruler should cultivate moral perfection in order to set a good example to the people and the ruler who governed benevolently would earn the respect of the people. He held the view that human nature was fundamentally good as everyone is born with the ability to recognize what is right and act upon it. He also believed that people were more important than rulers.

In March, 1907, Aurel Stein, a British explorer and adventurer, and his caravan make their way through the Taklimakan desert. Giant ruins grab their attention: it is the Jade Gate, the westernmost point of a more than two-thousand-year-old fortification system. The walls, once built with clay and straw, are barely identifiable in some parts, but the fortification must have had great significance in the past. Travel back in time to around 130 BC. For centuries, belligerent nomads from the north have been raiding, looting and pillaging Chinese settlements. The contrast could not be more pronounced: wild horsemen roaming the desert on the one side, on the other a population of settled farmers. Following a campaign against the "barbarians," Emperor Wudi of the Han dynasty decides to build a wall against the enemies. Construction starts near the location where Aurel Stein would find the ruins of the Jade Gate two thousand years later. Thousands of forced labour convicts were sent to the northwestern part of China, and thousands paid with their lives. Although the wall of the Han Dynasty crumbled into dust, subsequent dynasties built their own walls up to form the stone wall that became a monumental structure and a global icon.

Archeological finds of prehistoric toolmaking on the Korean Peninsula date back to 70,000 BC, and the first pottery is found around 8000 BC. Comb-pattern pottery culture peaked around 3500-2000 BC.
Legend has it that Korea began with the founding of Gojoseon (also called Ancient Chosun) by the legendary Dangun in 2333 BC. Archeological and contemporaneous written records of Gojoseon as a kingdom date back to around 7th-4th century BC. Gojoseon was eventually defeated by the Chinese Han Dynasty and its territories were governed by four Chinese commanderies. The political chaos following the fall of the Han Dynasty in China allowed native tribes to regain control of Korea and led to the emergence of the Three Kingdoms of Korea, namely Goguryeo, Silla and Baekje. Despite repeated attempts by China, namely the Sui Dynasty and later the Tang Dynasty, to conquer the Korean Peninsula, northern-based Goguryeo managed to repel them. Eventually, Goguryeo fell to a Silla-Tang alliance, which had earlier defeated Baekje. This unified Korea under the Silla dynasty. Even though Tang later invaded, Silla forces managed to drive them out, thus maintaining Korea's independence.
Unified Silla was replaced by the Goryeo (also called Koryo) dynasty, from which the modern name "Korea" derives. One highlight of the Goryeo dynasty was that in 1234 the world's first metal movable type was invented by a Korean named Choe Yun-ui (200 years before Gutenberg's printing press). Goryeo was replaced by the Joseon (also called Chosun) dynasty, after a coup by one of its generals. The Joseon dynasty ruled Korea from 1392 to 1910, being one of the longest actively ruling dynasties in world history. It was during the early part of the Joseon dynasty that Korean technological inventions such as the world's first water clock, ironclad ship, and other innovations took place. During the rule of King Sejong the Great, the world's first rain gauge was invented and the Korean alphabet known as hangul was created.

The Museum of the Mausoleum of the Nanyue King (Chinese: 西汉南越王博物馆; pinyin: Xī Hàn Nányuè Wáng Bówùguăn; literally: "Western Han Nanyue King Museum") houses the 2,000 year-old tomb of the Nanyue King Zhao Mo in Guangzhou, China. Zhao Mo ruled from 137 BC to 122 BC, and his tomb was discovered in downtown Guangzhou in 1983. The museum, which opened in 1988, showcases the tomb and its complete trove of artifacts. It was named a Major National Historical Site in 1996 and is renown for its rare assemblage of funerary artifacts representing the diffusion of cultures throughout the Lingnan region during the Han dynasty.

Xi'an is more than 3,000 years old and was known as Chang'an in ancient times. For 1,000 years, the city was the capital for 13 dynasties, and a total of 73 emperors ruled here. Xi'an is the undisputed root of Chinese civilization having served as the capital city for the Zhou, Qin, Han, and Tang dynasties. With so much history within the ground the city lies upon, it is no wonder that there are so many historical ruins, museums and cultural relics to be found here. It was already influencing the world outside of the Great Wall of China as the eastern terminus of the Silk Road(丝绸之路). Here traders from far and wide brought goods and ideas for sale and took goods and ideas back with them to their native countries. In present day Xi'an not much of its former glory remains within the city confines, due to the constant warfare and political changes that swept China particularly throughout the 20th Century. Today the city has a pleasant cosmopolitan flair to it and it is worth visiting for the famed Terracotta Warriors alone. It has often been said that, "if you have not been to Xi'an, you have not been to China!"

City Wall of Xi'an (西安城墙; Xīānchéngqiáng), . As the world's largest city wall, the Xi'an city wall has been restored and is 12m high, 18m wide is its base, 15m wide on the top, 13.7km long, and bikes (also bikes for two or three persons) are provided for renting, now it's ¥45 per 120 minutes/bike (or ¥90 for 120/2-person-bike) plus a refundable deposit. You can hire one at the top of all gates; you may return it to other stations on the wall. Be aware that bikes will not be rented if there is any chance of rain, because the top of the wall becomes slippery
Shaanxi Historic Museum This museum houses a collection of local artefacts that span the entirety of the province's history from the Neolithic through the Qing dynasty. In particular it contains fabulously well preserved pottery from nearby Banpo neolithic village (also worth a visit) and many excellent Shang Dynasty bronzes. Although some guidebooks call it "one of the best museums in China", its old fashioned pots-and-arrowheads-behind-glass format may appeal mainly to enthusiasts, though they also feature some well-made but glorifying high-definition movies in the exhibition halls.
Forest of Steles (碑林; Xīānbēilín), (Just inside the southern city wall, near the Wenchang Gate). This collection of 2,300 stone tablets (many written to provide an "official text" of the Chinese classics) and epitaphs is the largest and oldest of its kind in China.
This includes the famous Nestorian Stele, dating back to the 7th century. It depicts the coming of Nestorian Christianity to China. The Nestorian Stele is in Showroom Number 2 and is the first stele on the left. ¥50/¥25 Beilin Museum, foreign student cards not accepted (January 2012).
Wolong Temple (卧龙寺), (One block North and East of the Forest of Steles museum). This active Buddhist temple dates back to 200BC. Recently restored, the temple is vibrant and busy.
Big (Wild) Goose Pagoda (大雁塔; Dàyàntǎ), (At Ci'en Temple, take bus 41 or 610 from the main train station). Built by Emperor Gaozong Li Zhi(高宗李治) in 652AD. Emblem of the city of Xi'an. In the fountain in front of the pagoda there is a very nice water and music show sometimes during the day with pleasant parks and western eateries nearby. ¥50 to enter the temple complex, another ¥40 to enter the pagoda.
Little (Wild) Goose Pagoda (小雁塔; Xiǎoyàntǎ), (At Jianfu Temple). Completed in 709AD. To enter you will have to buy a joint ticket with the adjoining Xi'an Museum ¥30, Jul 11 (Note that the ticket still states the old price of ¥50, however ¥30 is charged).. edit
Bell Towers (钟楼; Zhōnglóu), (In the exact center of the city). ¥27 (or ¥40 including Drum Tower).
Drum Tower (鼓楼; Gǔlóu), (Just to the northwest within the Muslim Quarter). Performances at 9:10, 10:00, 11:00, 15:00, 16:00 and 17:00. ¥27 (or ¥40 including Bell Tower).
Grand Mosque (大清真寺; Qīngzhēnsì), (Behind Drum Tower). Built in a perfect mixture of Islamic and Chinese architecture styles with seating for 1,000 worshipers and the Muslim Street district (回民街 Huímín Jiē) around it. It is famous as the very first mosque ever to be built in China. It can be quite difficult to find through the winding back streets but is very well known to locals. Only Muslims are permitted entry to the actual mosque but there is plenty to see in the many accompanying courtyards. Ladies are asked to cover up with a scarf according to Muslim tradition. ¥25.
