Cabernet Franc is one of the major black grape varieties worldwide. It is principally grown for blending with Cabernet Sauvignon and Merlot in the Bordeaux style, but can also be vinified alone, as in the Loire's Chinon. In addition to being used in blends and produced as a varietal in Canada and the United States, it is made into ice wine in those regions.
Cabernet Franc is lighter than Cabernet Sauvignon, making a bright pale red wine that contributes finesse and lends a peppery perfume to blends with more robust grapes. Depending on the growing region and style of wine, additional aromas can include tobacco, raspberry, bell pepper, cassis, and violets.
Records of Cabernet Franc in Bordeaux go back to the end of the 18th century, although it was planted in Loire long before that time. DNA analysis indicates that Cabernet Franc is one of two parents of Cabernet Sauvignon, Merlot, and Carménère.
Cabernet Franc is believed to have been established in the Libournais region of southwest France sometime in the 17th century, when Cardinal Richelieu transported cuttings of the vine to the Loire Valley. They were planted at the Abbey of Bourgueil under the care of an abbot named Breton, whose name became associated with the grape. By the 18th century, plantings of Cabernet Franc (known as Bouchet) were found throughout Fronsac, Pomerol and St-Emilion, making quality wines. As Cabernet Sauvignon grew more popular in the 18th and 19th centuries, the close similarity of the two grapes was observed and theories emerged as to the extent of their relationship. In 1997, DNA evidence emerged to show that Cabernet Franc had crossed with Sauvignon blanc to produce Cabernet Sauvignon.
The franc (₣) is the name of several currency units. The French franc was the former currency of France until the euro was adopted in 1999 (by law, 2002 de facto). The Swiss franc is a major world currency today due to the prominence of Swiss financial institutions. The name is said to derive from the Latin inscription francorum rex (Style of the French sovereign: King of the Franks) used on early French coins and until the 18th century, or from the French franc, meaning "free" (and "frank").
The countries that use francs include Switzerland, Liechtenstein, and most of Francophone Africa. Before the introduction of the euro, francs were also used in France, Belgium and Luxembourg, while Andorra and Monaco accepted the French franc as legal tender (Monegasque franc). The franc was also used within the French Empire's colonies, including Algeria and Cambodia. The franc is sometimes italianised or hispanicised as the franco, for instance in Luccan franco.
One franc is typically divided into 100 centimes. The French franc symbol was an F with a line through it (₣) or, more frequently, only an F. For practical reasons, the banks and the financial markets used the abbreviation FF for the French franc in order to distinguish it from the Belgian franc (FB), the Luxembourgish franc (FL or FLux) etcetera. (In the Luxembourgish language, the word for franc is Frang, plural form Frangen.)
Cabernet Sauvignon (French: [kabɛʁnɛ soviˈɲɔ̃]) is one of the world's most widely recognized red wine grape varieties. It is grown in nearly every major wine producing country among a diverse spectrum of climates from Canada's Okanagan Valley to Lebanon's Beqaa Valley. Cabernet Sauvignon became internationally recognized through its prominence in Bordeaux wines where it is often blended with Merlot and Cabernet Franc. From France, the grape spread across Europe and to the New World where it found new homes in places like California's Santa Cruz Mountains, Napa Valley, New Zealand's Hawkes Bay, Australia's Margaret River and Coonawarra regions and Chile's Maipo Valley and Colchagua. For most of the 20th century, it was the world's most widely planted premium red wine grape until it was surpassed by Merlot in the 1990s.
Despite its prominence in the industry, the grape is a relatively new variety, the product of a chance crossing between Cabernet Franc and Sauvignon blanc during the 17th century in southwestern France. Its popularity is often attributed to its ease of cultivation—the grapes have thick skins and the vines are hardy and naturally low yielding, budding late to avoid frost and resistant to viticultural hazards such as rot and insects—and to its consistent presentation of structure and flavours which express the typical character ("typicity") of the variety. Familiarity and ease of pronunciation have helped to sell Cabernet Sauvignon wines to consumers, even when from unfamiliar wine regions. Its widespread popularity has also contributed to criticism of the grape as a "colonizer" that takes over wine regions at the expense of native grape varieties.

Mitch has been making a 100% Cabernet Franc since 1985, perhaps longer than most, if not all producers, in the Napa Valley. Filmed at the Emmanuel Centre on 23rd March 2015. Among wine lovers, there is no greater divide than that between Burgundy and Bordeaux. These are the world’s most celebrated wine regions, different places producing different styles of wine. What separates them and why the great rivalry? Many wine buffs believe that Bordeaux is for beginners. It’s a wine that you enjoy before your palate has fully matured and you then move on to the more exquisite pleasures of Burgundy. Bordeaux, say its detractors, is cerebral, like algebra, and is dignified at best. Burgundy, on the other hand, is a wine that makes you dream. As Roald Dahl once wrote, “To drink a Romanée-Conti is like having an orgasm in the mouth and nose at the same time”. But others disagree. The best red Burgundy is made only from...

Our friend Beau joins us again to talk about his wines. We talked about his Tempranillo and Petit Verdot in an earlier show, and this week he brought along some wines he’s released since then. He’s continued to work with a number of different varieties of grapes and styles, and created interesting and delicious wines with all of them. For this show, we taste Random Wine Company’s 2013 Gamay Noir Rose, 2013 Gamay Noir / Pinot Noir Blend, 2013 Cabernet Franc, and the 2013 Syrah / Viognier blend.
