Traditional Chicken Mole (Dona Maria)
Ingredients:
6-8 Pieces of Chicken (Drumsticks or thighs)
1 Jar (Dona Maria Mole)
1/4 Cut Yellow Onion
2 Cloves of Garlic (Whole)
1 Tbsp. Knorr Chicken Flavor
1 Tsp. Salt
Method:
1. Boil chicken in about 4-5 cups of water. Combine the onion, garlic, salt, and the Knorr seasoning and cook for 25 minutes and chicken reaches above 165 degrees.

1 Tsp. Salt
Method:
1. Boil chicken in about 4-5 cups of water. Combine the onion, garlic, salt, and the Knorr seasoning and cook for 25 minutes and chicken reaches above 165 degrees.
2. Preheat a Sauce pan in medium heat and pour in the entire jar of the Dona Maria Mole.
3. Add about 4 cups of chicken broth to the sauce pan from the cooked chicken by using a strainer and stir until the Mole chunks is melted into the broth.
4. In a separate casserole pan, preheat to medium heat and pour in the Mole sauce. Also combine the cooked chicken and simmer for about 10 minutes.
Serve with Spanish rice and a warm tortilla. Enjoy!

Lynn demonstrates how to make a very simple Chicken Mole Enchilada recipe adapted from Food Network's Marcela Valladolid. This is one of my favorite dishes and I was very happy to find a simple recipe. Mole sauce is typically a very long process to make, so this is a great, easy recipe for Chicken Mole Enchiladas.
Chicken:
2 chicken breasts
Kosher salt and freshly ground black pepper
1/2 cup olive oil
Mole:
5 dried ancho chiles, stemmed and seeded
Two 6" corn tortillas
2 Tablespoons olive oil
1-1/2 medium onions, chopped
Kosher salt
2 cloves garlic, minced
2 Tablespoons smooth peanut butter
1 teaspoon dried oregano
1-3/4 cups chicken stock
One 3.1 ounce disk Mexican chocolate, chopped
Freshly ground pepper
Enchiladas:
Preheat oven to 350°. Spray a casserole dish with cooking spray and set aside.
Olive Oil, as needed
Twelve 6" corn tortillas
1/4 cup sour cream or Mexican crema
3/4 cup queso fresco or milk feta
Cilantro, chopped onion and sesame seeds for garnishing.
For the chicken: Preheat oven to 375°. On a baking sheet, sprinkle the chicken with salt and pepper and drizzle with the olive oil. Bake until cooked through, 10-15 minutes. Set aside to cool, then shred into small bite-sized pieces.
For the mole: Reconstitute the dried chiles by soaking them in 1-1/2 cups hot water for 15 minutes. Then drain and set aside. Toast the corn tortillas in a dry skillet until dry, crisp and golden. Tear into pieces and set aside. In the same skillet, heat the oil over medium heat. Add the onions, season with a little salt and sauté until translucent about 3 minutes. Then add the garlic and cook 2 minutes more. Transfer the onion and garlic mixture to a blender with the chiles, tortillas, peanut butter and oregano. Pour the chicken stock over and blend until very smooth. Then transfer the sauce to a medium sauté pan and bring to a boil over high heat. Reduce the heat to medium, cover and simmer 20 minutes. Stir in the chocolate. Season the mole with salt and pepper. Reserve 1 cup of the mole for garnishing the enchiladas, the rest will be used for dipping the tortillas.
To assemble the enchiladas: Dip the corn tortillas in the mole sauce and then put chicken down the middle. Roll up and place in the prepared casserole dish, seam side down. Pour reserved cup of mole sauce over the top of the enchiladas. Place in the 350° preheated oven and bake until the sauce is bubbly and the enchiladas are heated through, about 20-25 minutes. To serve, drizzle with the Mexican crema or sour cream, queso fresco or mild feta. Sprinkle with a little chopped onion, sesame seeds and cilantro.

Spicy and satisfying, chili is the perfect autumn dish. Everything goes in one pot to meld into the perfect stew. This chili recipe features a dry stout, beef sirloin, and mole powder (basically a dry form of the classic mole sauce). The chili comes out spicy, rich, and with hint of cacao flavor.

- 16 oz. stout

- ¼ cup mole powder
- 2 TBSP olive oil
- 1 large red onion, sliced
- 4 cloves garlic, chopped
- 1 TBSP ground cumin
- 1 TBSP dried oregano
- 1 15 oz. can diced tomatoes
- 1 15 oz. can black beans, drained and rinsed
- 1 15 oz. can chili beans
- 1 cup corn tortilla chips, crushed
Directions
1. Add the olive oil to a large Dutch oven over medium-high heat
2. Add beef and brown
3. Add the onions and saute until soft, about 4 minutes
4. Add the garlic and saute until just fragrant
5. Stir in the mole powder, cumin and oregano
6. Cook for about 2 minutes
7. Add the stout and stir up any browned bits on the bottom of the pan
8. Bring to a simmer, and then add the diced tomatoes and beans
9. Simmer on medium-low for 2 hours, stirring on occasion
10. Add crushed tortilla chips during the last 15 minutes of the simmer
11. Top with shredded cheese and sour cream before serving

• Add to crock pot (slow cooker) over night or 8 hours.
• Drain excess liquid and lightly oil baking sheet.
• Spread jackfruit evenly over baking sheet.
• Place in oven for 35 minutes.
Meanwhile:
• Add olive oil, onions, the Doña Maria paste, the Chocolate Abuelita, and the tiny bit of bouillon cube.
• Mix well and add vegetable stock as needed. The result sauce should be smokey, sweet and savory.
Take jackfruit out of the oven, then pair with your favorite side dish. I like wild rice with corn.
Add the mole sauce on top of the jackfruit and serve with corn tortillas to make little tacos. Also add avocado slices if you like!

This Quick Chicken Mole is inspired by America's Test Kitchen. It made enough for a couple of meals, so prepare to keep half for a super fast dinner another night! Freezes great. :-)
1 onion, chopped
1 T oil
1/2 C raisins (I know!)
2T chili powder
2 T unsweetened cocoa powder
salt & pepper
1/12 C chicken broth
1 can (14.4 oz)diced tomatoes (I didn't drain, but should have. To thicken up, remove lid after chicken is fully cooked.)
2T peanut butter (I know!)
4 boneless, skinless chicken breasts (mine came straight from the freezer, so I let them cook a bit longer, but it's totally doable.)
1/4 C minced cilantro
Microwave onion, oil, raisins, chili powder, cocoa powder, and 1/2 t of salt in large bowl, stirring occasionally, until onion is softened, about 3 minutes.
Add tomatoes, broth and peanut butter to the large bowl and whir it up with an immersion blender for about a minute.
Transfer half of this mixture to a large skillet.
2. Season chicken with walt and pepper, and add the chicken to the skillet. Cover and simmer gently until chicken is fully cooked through. Remove lid and reduce until sauce is thickened, about 10 minutes.
Season with salt and pepper, top with chopped cilantro and toasted sesame seeds.

Microwave onion, oil, raisins, chili powder, cocoa powder, and 1/2 t of salt in large bowl, stirring occasionally, until onion is softened, about 3 minutes.
Add tomatoes, broth and peanut butter to the large bowl and whir it up with an immersion blender for about a minute.
Transfer half of this mixture to a large skillet.
2. Season chicken with walt and pepper, and add the chicken to the skillet. Cover and simmer gently until chicken is fully cooked through. Remove lid and reduce until sauce is thickened, about 10 minutes.
Season with salt and pepper, top with chopped cilantro and toasted sesame seeds.

Mole is a thick sauce made from an mixture of chillies, nuts, spices, pumpkin seeds and turkey.
And, surprisingly, it also includes chocolate.
This festival celebrating the "mole" has been going on for 20 years.
San Pedro Atocpan is renowned for its mole production - an estimated 18-thousand tonnes a year.
The town was founded between 12-hundred and 14-hundred and the land around it is extremely fertile - its residents say this is essential for the ingredients of mole.
Most foreigners think tortillas are the most typical Mexican food.
But those at the festival say if you visit Mexico you have taste mole.

Iterations on this legendary liquid are endless, and even those recipes closely associated with a particular region—such as Puebla, birthplace of the chocolate-laced mole poblano—vary from household to household, generation to generation.
Seeing that mole's rich history involves so much variation, it's not all that iconoclastic to cook it in a pressure cooker. We love using pressure cookers to develop deep flavors quickly, so we figured why not try it to cut down on the total time it takes to make this most mesmerizing sauce? From our first batch—complex and delicious after only 30 minutes on the stove!—we knew we'd landed on the right equipment. Though the recipe took a little more tweaking (finding the right combination of peppers and chocolate is no easy task), we eventually landed on that, too.
Use it for Carnitas Tacos (recipe available as part of our Cooking Sous Vide: Beyond the Basics class) or enchiladas, pour it over leftover chicken thighs or pulled pork, or mix it with black beans and rice. However you serve it, this lip-smacking, sweet-and-spicy sauce is sure to impress.

Mexican cuisine is primarily a fusion of indigenous Mesoamerican cooking with European, especially Spanish, elements added after the Spanish conquest of the Aztec Empire in the 16th century. The basic staples are native foods such as corn, beans and chili peppers. Europeans introduced a large number of other foods, the most important of which were meats from domesticated animals (beef, pork, chicken, goat and sheep), dairy products (especially cheese) and various herbs and spices.
While the Spanish initially tried to impose their own diet on the country, this was not possible and eventually the foods and cooking techniques began to be mixed, especially in colonial era convents. African and Asian influences were also introduced into the mixture during this era as a result of African slavery in New Spain and the Manila-Acapulco Galleons.
Over the centuries this resulted in regional cuisines, based on local conditions such as those in Oaxaca, Veracruz and the Yucatán Peninsula. Mexican cuisine is an important aspect of the culture, social structure and popular traditions of Mexico. The most important example of this connection is the use of mole for special occasions and holidays, particularly in the South and Center regions of the country. For this reason and others, Mexican cuisine was inscribed in 2010 on the Representative List of the Intangible Cultural Heritage of Humanity by UNESCO
Despite the introduction of wheat and rice to Mexico, the basic starch remains corn in almost all areas of the country. While it is eaten fresh, most corn is dried, treated with lime and ground into a dough. This dough is used both fresh and fermented to make a wide variety of dishes from drinks (atole, pozol, etc.) to tamales, to sopes and much more. However, the most common way to eat corn in Mexico is in the form of a tortilla, which accompanies almost every dish. Tortillas are made of corn in most of the country, but other versions exist, such as wheat in the north or plantain, yuca and wild greens in Oaxaca.[
The other basic ingredient in all parts of Mexico is the chile pepper. Mexican food has a reputation for being very spicy, but its seasoning can be better described as strong. Many dishes also have subtle flavors.Chiles are used for their flavors and not just their heat, with Mexico using the widest variety. If a savory dish or snack does not contain chile pepper, hot sauce is usually added, and chile pepper is often added to fresh fruit and sweets.
The importance of the chile goes back to the Mesoamerican period, where it was considered to be as much of a staple as corn and beans. In the 16th century, Bartolomé de las Casas wrote that without chiles, the indigenous people did not think they were eating. Even today, most Mexicans believe that their national identity would be at a loss without chiles.
Many dishes in Mexico are defined by their sauces and the chiles those sauces contain, rather than the meat or vegetable that the sauce covers. These dishes include entomatada (in tomato sauce), adobo or adobados, pipians and moles. A hominy soup called pozole is defined as white, green or red depending on the chile sauce used or omitted. Tamales are differentiated by the filling which is again defined by the sauce (red, green, chile pepper strips or mole). Dishes without a sauce are rarely eaten without a salsa or without fresh or pickled chiles. This includes street foods such as tacos, tortas, soups, sopes, tlacoyos, tlayudas, gorditas and sincronizadas.For most dishes, it is the type of chile used that gives it its main flavor.
The main contributions of the Spanish were meat and cheese, as the Mesoamerican diet contained very little meat besides domesticated turkey, and dairy products were completely unknown. The Spanish also introduced the technique of frying in pork fat. Today, the main meats found in Mexico are pork, chicken, beef, goat, and sheep. Native seafood remains popular especially along the coasts.
Cheesemaking in Mexico has evolved its own specialties. It is an important economic activity, especially in the north, and is frequently done at home. The main cheese making areas are Chihuahua, Oaxaca, Querétaro, and Chiapas. Goat cheese is still made, but it is not as popular and is harder to find in stores.
In most of Mexico, especially in rural areas, much of the food is consumed in the home with the most traditional Mexican cooking done domestically based on local ingredients.Cooking for family is considered to be women’s work, and this includes cooking for celebrations as well. Traditionally girls have been considered ready to marry when they can cook, and cooking is considered a main talent for housewives.
