Syrah also known as Shiraz is a dark-skinned grape variety grown throughout the world and used primarily to produce red wine. DNA profiling in 1999 found Syrah to be the offspring of two obscure grapes from southeastern France, Dureza and Mondeuse blanche. Syrah should not be confused with Petite Sirah, a synonym for Durif, a cross of Syrah with Peloursin dating from 1880.
The style and flavor profile of wines made from Syrah is influenced by the climate where the grapes are grown with moderate climates (such as the northern Rhone Valley and parts of the Walla Walla AVA in Washington State) tending to produce medium to full-bodied wines with medium-plus to high levels of tannins and flavors of blackberry, mint and black pepper notes. In hot climates (such as Crete, and the Barossa Valley of Australia), Syrah is more consistently full-bodied with softer tannin, jammier fruit and spice notes of liquorice, anise and earthy leather. In many regions the acidity and tannin levels of Syrah allow the wines produced from the grape to have favorable aging potential.
Dustin Wilson from Eleven Madison Park talks to The Daily Meal about a varietal that is near and dear to him - Syrah! Dustin was born and raised just outside of Baltimore, MD. His interest in wine began in Boulder, CO where he took a job as a food runner and back waiter at Frasca Food and Wine to study wine under the venerable Bobby Stuckey, MS. In 2008 he left Boulder to go to Aspen as sommelier at the Grand Award winning 5 Star/5 Diamond restaurant Montagna at The Little Nell hotel. While there, Dustin was named 'Best New Sommelier' in Wine and Spirits Magazine, won the prestigious Chaine des Rotisseures Jeaune Sommelier competition for the Southwest Division and went on to take 3rd at the U.S. In 2010, he won the Inaugural TopSomm competition for the Southwest Region of the U.S. and wa...

Filmed in the shop's own temperature-controlled storage facility and shipping hub, so apologies for the noises of wines being boxed up!

In meinem Kopf dreht sich schon seit Tagen
ein fremder Klang
la?t mich nicht denken,
la?t mich nicht schlafen
so ein Gesang
ein Lied, das durch die Zeiten greift
ich hor sie rufen
ich kann sie horn
Flow my tears
fall from your springs
Exil'd for
ever let me mourn
Where
night's black bird her sad infamy sings
There let me live forlorn
in dieser Welt, wo alles grau verweht
grau verweht
klingt ihr Gesang in mir wie ein Gebet
wie ein Gebet
als wurde sie zu mir gehorn
ich hor sie rufen
ich kann sie horn
Down vain
lights shine you no more
No nights
are dark enough for those
That in
despair their last fortunes deplore
Light doth but shame disclose
in meinem Kopf dreht sich schon seit Tagen
so ein Gesang
und keiner kann die Kreise storn
ich hor sie rufen
