Sauerkraut Recipe
INGREDIENTS:
1 large head cabbage
1 cup grated beet
1 T juniper berries
2 T Kosher salt
PROCESS:
1. Chop up the cabbage.
2. In a large bowl, sprinkle cabbage with salt and massage until there is plenty of liquid and the cabbage softens (about 10 minutes)

This week Laura gets her hands dirty showing us how to make some homemade sauerkraut. FULL RECIPE BELOW.
Sauerkraut Recipe
INGREDIENTS:
1 large head cabbage
1 cup grated beet
1 T juniper berries
2 T Kosher salt
PROCESS:
1. Chop up the cabbage.
2. In a large bowl, sprinkle cabbage with salt and massage until there is plenty of liquid and the cabbage softens (about 10 minutes)
3. Mix in one cup of grated beets for every 5 cups of cabbage and add in juniper berries.
4. Stuff the cabbage into your sanitized container, pressing the cabbage underneath the liquid. (If necessary, add a bit of water to ensure sufficient liquid). All the cabbage should be submerged under the liquid.
5. Use a small jar filled with beans (or any other clean, weighted item) to press the cabbage under the liquid. Cover the jar with cheesecloth and secure with a rubber band or twine.
6. Allow the sauerkraut to culture for 3 to 10 days at room temperature or until it's bubbly and tangy to your liking. Transfer to cold storage.

Many, if not most of us, have imbalanced bacteria in our bowels, and that why many people spend much more time in the bathroom than they should, or have to RUN to the bathroom all of a sudden. It's a sensitive subject, but one that we all know. Fermented veggies will cure this. It has for many that I know, and it will for you too. It only takes a few hours for it to work, so try it, and correct me if I'm wrong.

What's cool about this recipe is that you don't have to chop up a bunch of green cabbage and ferment it in a big crock or bucket. This recipe uses mason jars, which allows you to experiment with different sauerkraut recipes. I like to add caraway seeds. Be sure to use filtered water if you tap water has chlorine in it.

Sauerkraut Salad
1 796ml (28 fl oz) Organic Sauerkraut
1 onion finely diced
1-2 carrots finely shredded
2 celery stalks diced
1 red pepper diced
1 tsp mustard seeds
1/4 cup sugar
1/4 cup olive oil
1/8 cup apple cider vinegar
Combine all ingredients in a glass bowl, cover and chill. You can eat right away or you chill for a couple days in the refrigerator so the flavours can meld.

German sauerkraut recipe made with our homegrown Irish cabbages (with inspiration from the wonderful Christine - who is neither German nor Irish).
Those probiotic capsules can be bought online (of course) but we get ours from a local wholefood shop.
Sauerkraut is a bit of an aquired taste, it seems. Sort of sour-tasting but refreshing at the same time. Sandra acquired her taste for it growing up in Germany. Some of us less fortunate people have to acquire it in small steps with plenty of bread and butter. Undoubtedly it is full of good bacteria and breimming with healthiness – so we’d recommend it for sure!
The trick to making this successfully is to keep the cabbage under the liquid, so the air can’t get at it. If in doubt, throw it out.

Once you have filled the mason jar up to the shoulder, fold the whole leaves that had been set aside initially and put them on top of the cabbage mixture, using them as a weight to keep the mixture submerged under water.
Put the lid on loosely and let it sit at room temperature for any time between 1 week and 1 month.
Notes:
The next few days, gas will be released from the sauerkraut and liquid may spill. Just, open the lid, push the veggies down and cover it again loosely.
The vegetables must be covered in liquid at all times during the fermentation process, it can be their own juices or if needed add filtered water.
Cabbage can stain clothes!

How to Make kimchi and kaktugi (radish kimchi)
Ingredients:
2 medium size napa cabbages and 2 Korean radishes, salt, sweet rice flour, sugar, water, 4-6 cups of hot pepper flakes, fish sauce, white onion, fresh garlic, ginger, green onions, Asian chives, fresh oysters (optional)
How to handle cabbages and radish:
1. Cut the cabbages in half, and then slit each half through the core, but not through the rest of the leaves.
2. Soak each piece in cold water and sprinkle some salt (about ½ cup of salt per 1 medium size cabbage), and then set it aside for 2 hours.
*tip: the stems should get more salt than the leaves
3. Skin 2 radishes and cut them into 1 inch cubes. Do this by cutting them into several disks, and then cutting horizontally, and then vertically. Put them in a big bowl and sprinkle them with ½ cup of salt. Then set these aside, too.
4. 2 hours later, turn the pieces of cabbage over so they get salted evenly. Turn the radishes as well.
5. Another 2 hours later, you will see the cabbage look softer than before, and it should have shrunk.
*the total salting process will take 4 hours
6. Rinse the salted cabbage and radish with cold water 3 times.
Making kimchi paste:
Make porridge
1. Put ½ cup of sweet rice flour (you can replace with plain flour) and 3 cups of water into a skillet and mix them up. Then cook over medium-high heat, stirring constantly.
2. When you see some bubbles, pour 1/4 cup of sugar into the porridge and stir one more minute. Then cool it down.
3. Place the cold porridge into a big bowl. Now you will add all your ingredients one by one.
4. Add 1 cup of fish sauce, 4~6 cups of hot pepper flakes (depending on your taste), 1 cup of crushed garlic, 1 tbs of minced ginger, 1 medium size minced onion
*tip: it's much easier to use a food processor.
5. Add 7 diagonally-sliced green onions, 2 cups of Asian chives (cut into 2 inches in length), and 2 cups of shredded Korean radish.
6. Add 2 cups of frozen oysters, but this is optional. (I found out lots of people can't eat them.)
7. Mix all ingredients well and your Kimchi paste is done.
8. Are you ready to spread our paste on the leaves and make your kaktugi?
* I recommend you wear rubber gloves so that you don't irritate your skin.
9. Spread the kimchi paste onto each leaf of the cabbage, and make a good shape out of the leaves by slightly pressing with both hands.
Put it into an air- tight sealed plastic container or glass jar.
Mix your leftover paste with your radish cubes (this is kaktugi).
That's all!
You can eat it fresh right after making or wait until it's fermented. Put the Kimchi container at room temperature for 1 or 2 days and keep it in the refrigerator.
How do you know it's fermented or not?
One or 2 days after, open the lid of the Kimchi container. You may see some bubbles with lots of liquids, or maybe sour smells. That means it's already being fermented.
