Growing Hot Peppers - Turn Up the Heat in the Vegetable Garden
When Wilbur Scoville first devised a means to test the heat of peppers, his hottest entry then came in at 20,000 units. Habanero and Thai chilies can go as high as 60,000. Compare that to the sweet bell pepper at zero. It is thought that all peppers, hot and sweet, developed from the wild chiltepin pepper of Central America. Although a perennial, they are widely grown as annuals. Columbus is credi

Watch our Chili Pepper Video for all the Amazing, Interesting, Fun Facts about Chili Peppers You Didn't know!
1. According to the Guinness book of records, the Bhut Jolokia of Assam is the world's hottest chilli pepper, with an official Scoville rating of 1,001,304 , nearly doubling the heat of the previous record holder, the Red Savina with a rating of just 577,000.
2. Wilbur Scoville developed a method for measuring the strength of capsaicin in chillies in 1912, which is the active irritant in chillies that causes that burning sensation. His method is known as the Scoville Organoleptic Test. This meant tasting a diluted version of a pepper and giving it a value. Mild bell peppers rate at zero and the jalapeño is mid range at 3,500ScU So the Bhut Jolokia is over 200 times as spicy as a jalapeno.
3. Seeds are actually not the hottest part of a chilli. It's actually the white pith that surrounds them, which runs in thick veins through the pod.
4. Chillis are the world's oldest condiment! That's right there is evidence that chillies were being eaten in central and south America as long ago as 7,000 BC, The tiny, round Chiltepin pepper still grows wild around the region and were used as one of the earliest tax payments, paid to Aztec Emporers.
5. The longest chilli-pepper string measured 1,395 m (4,576 ft 9 in) and was made by citizens of Suncheon City, South Korea.
6. Chillis can help fight off winter colds and eating them certainly releases endorphins that helps lift the spirits. In addition, Chillies are packed with vitamins, containing more Vitamin C than oranges, more Vitamin A than carrots and such high levels of Vitamin D that some athletes eat them prior to exercising to reduce the risk of injury.
7. The active ingredient capsacin has been also been known to reduce the amount of insulin the body needs to lower blood sugar levels after a meal by up to about 60% which could be of benefit to diabetics and the overweight.
8. Capsacin has been shown to fight cancer! Recent tests on rats with prostate cancer showed that large doses of capsacin caused the death of 80% of cancer cells.

The hot sauce industry is booming. With new strains of peppers are popping up all the time, more and more people are discovering that spice is nice.
You'll find more than 100 different kinds of hot sauce at the Heatonist, open only 3 months. Co-owner Noah Chaimburg started a Kickstarter campaign to bring the Heatonist to life.
Even people who've never loved hot sauce are changing their mind. Eleanor Glowiniski is French. She says most French people aren't fond of spicy food. But Noah helped convert her from a hot sauce virgin to a hot sauce lover.
The Heatonist only carries hot sauces that are organic and made in small batches. It has varieties from Japan, New Zealand, Sweden and elsewhere. One big trend is sweet and heat: pineapple habanero, ghost pepper and blueberry, and jalapeno and green apple.
If you're not sure how hot you can go, you may want to see where your pepper falls on the Scoville heat scale, invented in 1912 by American pharmacist Wilbur Scoville. It ranks chilies from mild to fiery hot. Since I love spice, I had to taste of what Noah calls his best sellers, starting with Mike's hot honey.

Columbus is credited with bringing peppers back to Spain, as a substitute for true pepper (Piper nigrum).
Latin Name:
Capsicum annum, C. baccatum, C. chinense, C. Pubescens, C. frutescens
Common Name(s): Hot Pepper, Chili (Chile, Chilli)
Zone:
Usually grown as annuals. Hardy in tropical zones (11 and above)
Size:
Varies with variety and climate. Most are about 1' W x 2-3' H. Some can grow as tall as 5'.
Exposure:
Full Sun
Days to Harvest:
Varies with variety. Most take at least 55 - 80 days from transplant.
Description:
Peppers are in the Solanaceae family, with tomatoes, eggplants and potatoes. The term ‘hot pepper’ is not a botanical classification. They are often grouped by their fruit shape and/or heat intensity. The most commonly grown variety is C. annum, which includes cayenne, paprika and jalapenos, as well as sweet peppers. The hottest are in C. chinense, which includes Habanero and Thai Chilies.
Harvesting:
You can keep your plants producing by harvesting regularly, once they reach an eatable size. Many gardeners like to allow their peppers to fully ripen and change color, but ripe fruits tend to lose some of their heat.
Cut the fruits from the plant, don’t pull. Hot peppers are best used within in days of harvest. They can also be canned or frozen.
Suggested Varieties:
‘Czechoslovakian Black’ - The plant is very ornamental and the tiny fruits pack a punch. Good for drying.
‘Habanero’ - Still the test for a hot pepper lover.
There are now several varieties of Habeneros available.
’Cherry Red’ - Small, round cherry bombs are thick skinned and nice for stuffing.
‘Hot Lemon’ - Lemon in color only, these have a nice balance of heat and flavor
’Robustini’ - Extremely prolific producers
Cultural Notes:
Peppers need warmth (at least 70 degrees F.), to grow and set flowers. However at extreme temperatures, 90 degrees F. and over and under 60 degrees F., they will drop their blossoms until conditions are more favorable. They can handle most soils and a neutral pH. A sprinkling of Epson salts at planting seems to help fruit set, as does crowding the plants in their bed.
Maintenance: Very few pests attack peppers. Aphids can be a problem. You may notice distorted leaves when aphids are present. There are some hardy caterpillars who will feast on the fruits.
