When pickling, cucumbers with fewer seeds and thinner skins work best. Choose small Kirby cucumbers or larger European ones.

3 cups white vinegar 1 1/2 cups sugar 2 teaspoons coarse salt 1/2 teaspoon mustard seed 1/2 teaspoon celery seed 2 to 4 small red chiles (optional) 1/8 teaspoon ground turmeric 1 1/2 cups fresh dill fronds (about 1 bunch) Prepared Vegetables
DIRECTIONS
STEP 1
In a medium saucepan, combine white vinegar, sugar, salt, mustard seed, celery seed, red chiles (optional), and ground turmeric. Bring to a boil, stirring to dissolve sugar. Arrange prepared vegetables and dill fronds in one or more jars. Pour hot brine into jar to completely cover vegetables and seal jar. Refrigerate until cool, about 2 hours (or up to 1 week).

2 tablespoons pickling spices
1/4 teaspoon turmeric
3-5 garlic cloves, peeled and smashed
2 Serrano chiles, sliced (include seeds for extra heat)
1 teaspoon salt
1/4 cup sugar
fresh herb (tarragon, rosemary or thyme)
VEGETABLES:
Choose an assortment of baby carrots, sliced cucumbers, radishes, cauliflower, broccoli, etc.
DIRECTIONS:
In a saucepan, combine all the ingredients for the brine. Bring to a boil and let simmer for 3-5 minutes until the sugar is completely dissolved. While the brine is on the stove, prepare your vegetables of choice, stuffing them into a washed and sanitized quart jar. If your vegetables are large, you can slice or cut them into chunks so they fit into a jar easier. Pour the simmering brine into the jar, directly over the vegetables. Let cool slightly, cover with a lid and place in the refrigerator. The vegetables can be eaten as soon as four hours after preparing, but are best after a few days so the brine can fully flavor the vegetables!

All good things must come to an end (as our very own @MC4Lynn found out recently when he was eliminated) and sadly today is the final episode of Pickle Week. After delivering so many mouthwatering and unique pickle recipes we decided that we couldn't leave you without knowing exactly how to pickle your very own vegetables at home. It's a lot easier than you think so DO NOT be afraid to try! Just remember to be patient - you don't want to pull one of your jars too early and find out that the seasonings and spices hasn't properly done their job yet.

Pickling is the process of preserving, even expanding the lifespan of food by either anaerobic fermentation in brine or immersion in vinegar. The resulting food is called a pickle or "pickled [insert word here]". This procedure gives the food an interesting twist in flavor. In East Asia, vinaigrette (vegetable OIL and vinegar) is used as the pickling medium.[1]
Another distinguishing characteristic is a pH 4.6 or lower,[2] which is sufficient to kill most bacteria. Pickling can preserve perishable foods for months. Antimicrobial herbs and spices, such as mustard seed, garlic, cinnamon orcloves, are often added.[3] If the food contains sufficient moisture, a pickling brine may be produced simply by adding dry salt. For example, German sauerkraut and Korean kimchi are produced by salting the vegetables to draw out excess water. Natural fermentation at room temperature, by lactic acid bacteria, produces the required acidity. Other pickles are made by placing vegetables in vinegar. Unlike the canning process, pickling (which includes fermentation) does not require that the food be completely sterile before it is sealed. The acidity or salinity of the solution, the temperature of fermentation, and the exclusion of oxygen determine which microorganisms dominate, and determine the flavor of the end product.[4]
When both salt concentration and temperature are low, Leuconostoc mesenteroides dominates, producing a mix of acids, alcohol, and aroma compounds. At higher temperatures Lactobacillus plantarum dominates, which produces primarily lactic acid. Many pickles start with Leuconostoc, and change to Lactobacillus with higher acidity.[4]
History[
Pickling began 4000 years ago using cucumbers native to India.[citation needed] It is called "achar" in southern India. This was used as a way to preserve food for out-of-season use and for long journeys, especially by sea. Salt pork and salt beef were common staples for sailors before the days of steam engines. Although the process was invented to preserve foods, pickles are also made and eaten because people enjoy the resulting flavors. Pickling may also improve the nutritional value of food by introducing B vitamins produced by bacteria.[5]

The term pickle is derived from the Dutch word pekel, meaning brine. In the U.S. and Canada, and sometimes Australia, the word pickle alone almost always refers to a pickled cucumber,[citation needed] except when it is used figuratively.
