The crash of the Indian plate into Asia is the biggest known collision in geological history, and it continues today. The result is the Himalaya and Karakoram - one of the largest mountain ranges on Earth. The Karakoram has half of the world's highest mountains and a reputation as being one of the most remote and savage ranges of all. In this beautifully illustrated book, Mike Searle, a geologist at the University of Oxford and one of the most experienced field geologists of our time, presents a rich account of the geological forces that were involved in creating these mountain ranges. Using his personal accounts of extreme mountaineering and research in the region, he pieces together the geological processes that formed such impressive peaks.
Continental collision is a phenomenon of the plate tectonics of Earth that occurs at convergent boundaries. Continental collision is a variation on the fundamental process of subduction, whereby the subduction zone is destroyed, mountains produced, and two continents sutured together. Continental collision is known only from this planet and is an interesting example of how our different crusts, oceanic and continental, behave during subduction.
Continental collision is not an instantaneous event, but may take several tens of millions of years before the faulting and folding caused by collision stop. Collision between India and Asia has been going on for about 50 million years already and shows no signs of abating. Collision between East and West Gondwana to form the East African Orogen took about 100 million years from beginning (610 Ma) to end (510 Ma). Collision between Gondwana and Laurasia to form Pangea occurred in a relatively brief interval, about 50 million years long.
The process begins as two continents (different bits of continental crust), separated across a tract of ocean (and oceanic crust), approach each other, while the oceanic crust is slowly consumed at a subduction zone. The subduction zone runs along the edge of one of the continents and dips under it, raising volcanic mountain chains at some distance behind it, such as the Andes of South America today. Subduction involves the whole lithosphere, the density of which is largely controlled by the nature of the crust it carries. Oceanic crust is thin (~6 km thick) and dense (about 3.3 g/cm³), consisting of basalt, gabbro, and peridotite. Consequently, most oceanic crust is subducted easily at an oceanic trench. In contrast, continental crust is thick (~45 km thick) and buoyant, composed mostly of granitic rocks (average density about 2.5 g/cm³). Continental crust is subducted with difficulty, but is subducted to depths of 90-150 km or more, as evidenced by ultra-high pressure (UHP) metamorphic suites. Normal subduction continues as long as the ocean exists, but the subduction system is disrupted as the continent carried by the downgoing plate enters the trench. Because it contains thick continental crust, this lithosphere is less dense than the underlying asthenospheric mantle and normal subduction is disrupted. The volcanic arc on the upper plate is slowly extinguished. Resisting subduction, the crust buckles up and under, raising mountains where a trench used to be. The position of the trench becomes a zone that marks the suture between the two continental terranes. Suture zones are often marked by fragments of the pre-existing oceanic crust and mantle rocks, known as ophiolites.

On Day 4 in Manila, Sofitel Philippine Plaza in Manila invited us to go to their Spiral Sunday brunch / lunch buffet. What exactly is a baati chokha? Well to be honest with you, when I stopped by this street food vendor I had absolutely no idea what they were - and that's exactly the reason why I felt compelled to stop and try some. Though the vendor's mouth was packed full of paan mouth chew, I could make out him telling me that they were round rotis. So imagine a roti, which is similar to a tortilla, or just a blob of dough, rounded up into a small ball about the size of a golf ball and grilled. Within the ball were a mix of spices called garam masala. And if that doesn't already sound tasty enough, it was served with an outstanding green chili sauce, a slice of green chili, and a wedge of red onion.
To eat a baati chokha (round roti), you simply tell the vendor how many of the little guys you want and he will place them right off the grill onto your plate. From there he added a scoop of unknown sauce which happened to be delicious, and the extra few condiments. I was actually surprised at just how good these little roti balls were - partly it was the garam masala sauce and partly it was the delicious sauce. Anyway, I really enjoyed these baati chokha's so much that I ended up eating a few of them, amazed at the flavors from such a simple filling treat.
This little Indian street food vendor in Varanasi is located right along the main burning ghat funeral lane. Though I didn't know at first, as soon as I ordered and started to eat, a funeral procession came marching down the lane as I ate. It was quite an exciting and unique street food snack to be eating while funerals marched past every few minutes.
If you visit North India, you should by all means try to sample some round roti baati chokha. They are filling and delicious, and I think they make a fabulous snack or even would be a wonderful breakfast.

The restaurant itself is about a century old. It is run by the Kohinoor family of the Parsi community. They have a simple philosophy that there is no love greater than the love of eating. "Britannia Restaurant has been in existence from 1923. When I was born my father started the restaurant". The late Mrs. Kohinoor's Berry Pulao is exclusive to this restaurant. Now the berries are imported all the way from Iran and they are cooked with long green basmati rice with marinated meat, and then garnished with fried onions and dry fruits. It is an entire meal in itself and the recipe is a well guarded secret.
"And this berry, my wife brought the recipe from Iran. Here she has improvised by adding a little special masala and kabab. And next comes the Khansak, the Sali Boti. Khansak, which is chicken or mutton served with brown rice and lentils. Or you could try the Sali Boti. Now, boti is mutton served with gravy and is garnished with thin fries. This goes very well with Indian bread or roti.
Britannia also has some seafood option, you could try the Bomil fry or the fried Bombay duck and also the patrani-mach. "Patrani Machi, in Parsi language, 'patra' means leaf. And now this pomphret fish is cut into big pieces and they are wrapped in banana leaves. There are chutney added to that, and then they are wrapped in banana leaves and steamed. So this becomes Patrani Machi".
You can also ask for some raspberry soda to complement your meal, but make sure you leave some space in your tummy for some home-made Caramel Custard. "During World War II, these premises were requisitioned by British Army. So, in 1947 when I got back the place, I just painted it plain. It might surprise some people that South Mumbai is doted with Quaint Irani joints, which are known as Iranian restaurants. And these restaurants serve Parsi food. The Parsi community or the Zoroastrians, they came to India from Iran a few centuries back. The most popular among these Parsi restaurants is this, the Britannia, located at Ballard estate. This building was designed by George Wittet, the architect of the Gateway of India amongst others. The heritage of this building is very apparent and the interiors make it even more quaint.

Spiral Buffet: The Most Amazing Buffet I've Ever Seen! (Manila Day 4)

On Day 4 in Manila, Sofitel Philippine Plaza in Manila invited us to go to their Spiral Sunday brunch / lunch buffet. Since I had already heard about it from others, many of whom said it was the best and grandest buffet in the Philippines, and maybe in Asia, I was pretty excited to have the chance to try it out.
We arrived right as the sunday lunch buffet started, right at 12 noon, and we first met the manager who showed us around the buffet, and explained the philosophy of the buffet. At Spiral Buffet in Manila they have 21 different food ateliers, which is French means artisan workstations - so at the buffet they mean different types of cuisine and stalls. So there are basically 21 different types of cuisine to choose from, French, Indian, Filipino, Thai, and a full cheese room, and fresh cold Japanese section as well. As soon as we sat down, we were poured a glass of champagne to begin with. There are two different prices for the sunday brunch buffet - you can either go with unlimited alcoholic beverages (champagne and wine) or you can go without alcohol. If you’re interested in drinking, the former option is a great option.
I had no clue where to start eating, so I just went with the food that was the closest to our table - the cold Japanese atelier - including a full tuna sitting and waiting to be sliced by the piece. After my plate of sushi and sashimi and caviar, I then had a plate of Filipino food including crocodile adobo and the infamous balut - a fertilized boiled egg - all of which were pretty good. I then had a plate of Indian food, French food, and some Japanese hot food too.
What I really liked about Spiral Buffet at Sofitel Manila is that even though it was so incredibly grand and so extensive, the food was cooked in small batches, so it wouldn’t sit too long before being finished off. This way, the food remained fresh, and hot, and though it was a buffet, the quality was truly top notch. I haven’t been to too many hotel buffets in my life, but this was easily one of the best buffets I’ve ever seen or eaten at.
