    Yea really nice! I used a bunch of chicken pieces instead of a whole chicken - worked a treat!

    My chicken was only in the fridge for around an hour with the marinade on it. Regardless, the chicken was SUPER moist and delicious. I had to tone back the chili for the hubby & 4yr old (unfortunately). I loved this & thought it would be awesome cooked on the BBQ or weber also.

    Divine, loved the chilli and lime, I didn't marinate it overnight, so can only imagine how much better it would have been.

    This recipe was delicious and easy, and it works very well in a Weber. It would be great to serve to guests as part of a BBQ.

    Love this recipe. Super super easy & very tasty. I got the chickens out the night before & had them defrost overnight then put the marinade on 1st thing in the morning, and that worked fine. Thought the chilli might be rather hot but it was perfect. Fantastic recipe!!!

    I love this marinade. I also made the recipe a while ago using tenderloins instead of full chickens, and it was delicious. I like that the recipe includes all the spices rather than "buy a jar of portuguese marinade" which you see in many other recipes. I served the tenderloins with spiced rice rather than the salsa, I threw some garlic, olive oil, paprika, coriander and oregano into the rice cooker with the rice and let it get hot before adding the water. It was delicious. A side of salad with a lime dressing to tie the flavours together. Magic.

    I have cooked this three times now, once for a casual dinner, once for a larger gathering and for an everyday meal. It is so easy to do, as long as you have the time to marinate.

    I made this as part of a buffet for a family lunch with all my inlaws using drumsticks instead of faffing about with whole chickens. Beautifully succulent, tangy and only mildly chilli hot (I could have used hotter chillis except not everyone can stand my level of heat). Everyone commented on how gorgeous it was and even enjoyed by my 5 year old son! I didn't make the salsa however!

    Question: When putting the chickens in the oven, are they placed in an oven proof dish or straight onto the rack? Also, when basting with the marinade, do you turn the chickens? and if so, how often?
