Tempeh (/ˈtɛmpeɪ/; Javanese: témpé, IPA: [tempe]), is a traditional soy product originally from Indonesia. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form, similar to a very firm vegetarian burger patty. Tempeh is unique among major traditional soy foods in that it is the only one that did not originate in the Sinosphere.
It originated in today's Indonesia, and is especially popular on the island of Java, where it is a staple source of protein. Like tofu, tempeh is made from soybeans, but it is a whole soybean product with different nutritional characteristics and textural qualities. Tempeh's fermentation process and its retention of the whole bean give it a higher content of protein, dietary fiber, and vitamins. It has a firm texture and an earthy flavor which becomes more pronounced as it ages. Because of its nutritional value, tempeh is used worldwide in vegetarian cuisine; some consider it to be a meat analogue.
Tempeh originated in today's Indonesia, probably on the island of Java. The earliest known reference to it appeared in 1815 in the Serat Centhini [The Book of Centini]. Three detailed, fully documented histories of tempeh, worldwide, have been written, all by Shurtleff and Aoyagi (1985, 1989, and 2001).

Ingredienti Ricetta
100 g di soia gialla
2 g di starter per tempeh
2 cucchiai di aceto
Preparazione Tempeh - Carne di Soia
1. Per prima cosa ammollare i semi di soia in acqua per 8-12 ore, cambiando eventualmente l’acqua di ammollo 2-3 volte.
2. Sciacquare i semi di soia per rimuovere tutti gli elementi antinutrizionali (fitati).
3. Con le mani, massaggiare i semi di soia per staccare il tegumento (pellicina che li circonda): la presenza del tegumento potrebbe infatti impedire il compattamento del tempeh e rallentare l’azione fermentante dello starter.
Come velocizzare questa fase?
Per velocizzare la rimozione delle pellicine, è sufficiente tuffare i semi di soia in una ciotola con abbondante acqua e strofinare i legumi tra le mani: i tegumenti, più leggeri, tenderanno ad affiorare, dunque sarà più semplice rimuoverli, con le mani oppure con un colino.
4. A questo punto, lessare i semi di soia in acqua ed aggiungere un cucchiaio di aceto di vino: la soia impiegherà circa 60-90 minuti per cuocersi.
5. Scolare i semi di soia in uno scolapasta e versarli nuovamente nella pentola. Unire un cucchiaio di aceto di vino bianco ed accendere la fiamma: il calore asciugherà i semi.
A cosa serve l’aceto?
L’aceto di vino è importante per abbassare il pH della soia e per impedire la crescita di batteri indesiderati.
6. Trasferire i semi di soia in una ciotola e lasciar intiepidire fino al raggiungimento dei 30-35°C.
7. Nel frattempo, forare un sacchetto di plastica resistente (si consigliano i sacchetti per il sottovuoto), aiutandosi con uno spillo oppure con la punta di un coltello.
Perché forare il sacchetto?
I fori servono per far traspirare la muffa (Rhizopus oligosporus) e per evitare l’eccesso di umidità.
8. Quando la soia ha raggiunto la giusta temperatura, unire lo starter (Rhizopus oligosporus): mescolare per un minuto per distribuire la muffa in modo uniforme.
9. Trasferire i semi di soia con lo starter nel sacchetto forato, avendo cura di pressarli e realizzare un rettangolo dallo spessore di 1-2 cm.
10. Lasciar fermentare la soia ad una temperatura compresa tra i 28 ed il 35°C per 36-48 ore.
Come mantenere la temperatura costante?
Il mantenimento della temperatura a circa 30°C è forse la parte più complicata della preparazione della ricetta.
Se il tempeh viene preparato in una calda giornata, si consiglia di lasciare il sacchettino (appoggiato sopra ad un piatto) in un balcone. Alla sera si può trasferire in casa, al riparo dalle correnti d’aria.
Se invece il tempeh viene preparato in una giornata di pioggia o durante l’inverno, si consiglia di lasciar fermentare la soia in una ambiente piccolo e chiuso (es. forno): in questo caso, riporre un pentolino con 2 cm di acqua calda in forno per creare un ambiente idoneo alla fermentazione. Si raccomanda inoltre di riscaldare leggermente l’acqua ogni 2-3 ore e di tener monitorata la temperatura con un termometro ambientale.
Si sconsiglia invece l’utilizzo della yogurtiera: i 40-50°C raggiunti dallo strumento potrebbero infatti uccidere la muffa, compromettendo permanentemente la fermentazione.
Dopo circa 12-15 ore, si può notare la formazione di alcuni miceli bianchi sulla superficie: durante questa fase - in cui la fermentazione produce calore - si consiglia di abbassare la temperatura proprio per evitare che l’aumento di calore possa compromettere l’azione fermentante della muffa.
11. Il tempeh è pronto dopo 36-48 ore di fermentazione: il panetto è pronto quando la superficie risulta completamente ricoperta di micelio bianco (muffa evidente).
12. Si raccomanda di non lasciar fermentare la soia troppo a lungo per evitare che la fermentazione produca muffe grigiastre o verdi: in questo caso, il tempeh può essere ugualmente consumato, ma l’aspetto ne verrebbe alterato in modo significativo.
13. Rimuovere il tempeh dal sacchetto di plastica: avrà assunto una consistenza solida e tutti i semi di soia saranno compattati. Consumare a piacere: si possono preparare insalate oppure rosolare in padella.
14. Il tempeh si conserva in frigo per 7 giorni oppure in congelatore per 3 mesi.

Wat heb je nodig? (voor 2-3 personen)
- 200 gram tempeh
- 1 prei
- 1 winterpeen
- 2 witte uien
- 2 handjes taugé
- 2 tenen knoflook
- paar takjes dille
- paar takjes peterselie
- paar takjes tijm
- zoute sojasaus naar smaak
- boter om in te bakken
- peper (en eventueel zout)
