SPICY BEET SEITAN (Baked or Steamed)
INGREDIENTS (US)
1 cup cooked beans, any kind
1 beet, peeled and chopped (about 4oz weight)
1 cube or 1 teaspoon mushroom/vegetable bouillon powder
2 cloves garlic
2 tablespoons maple syrup (or other liquid sweetener)
1 tablespoon balsamic vinegar
1 teaspoon ginger powder
1 teaspoon poultry seasoning (marjoram, sage, thyme, rosemary, etc)
1 teaspoon onion powder
1 teaspoon red chili flakes
1/2 teaspoon ground coriander
1/4 teaspoon black pepper
1/4 teaspoon white pepper
1/4 teaspoon cardamon
1/4 teaspoon cumin
1/4 teaspoon liquid smoke
1 cup vital wheat gluten
3/4 cup hot water
INGREDIENTS (Metric)
150g cooked beans, any kind
1 beet, peeled and chopped (about 120g)
1 cube or 5cc mushroom/vegetable bouillon powder
2 cloves garlic
30ml maple syrup (or other liquid sweetener)
15ml balsamic vinegar
5cc ginger powder
5cc poultry seasoning (marjoram, sage, thyme, rosemary, etc)
5cc onion powder
5cc red chili flakes
2.5cc ground coriander
1cc black pepper
1cc white pepper
1cc cardamon
1cc cumin
1cc liquid smoke
120g vital wheat gluten
175ml hot water
DIRECTIONS
Blend all the ingredients EXCEPT for the vital wheat gluten in a blender until fairly smooth.
Transfer the puree to a large mixing bowl and add the vital wheat gluten. Mix until it forms a dough
.
With clean hands, knead for one to two minutes. This step develops the gluten strands which creates texture in the final product. Steam or bake the seitan as below.
TO STEAM
Shape the dough into a log shape and wrap in parchment paper. Simply roll it up in the parchment and fold the two ends under the loaf.
Steam over high heat for one hour and fifteen minutes if you are cooking the whole batch in one loaf. For a half batch, steam for only one hour.
Remove from heat, remove the parchment and let cool until just warm. Then cool completely in the refrigerator before slicing or cutting into cubes. This seitan is now ready to eat or use in other dishes.
TO BAKE
Divide the dough into two pieces.
Prepare a sheet of aluminum foil by oiling the shiny side. Leave a couple inches at the side un-oiled. One piece of dough in the middle and roll it up in the foil. Fold the two sides under the roll and the edges to seal. Repeat with the other half of the dough.
Bake in a preheated oven at 350F or 180C for one hour on the middle rack, turning every 20 minutes to ensure even cooking.
Remove from the oven and let cool for a half hour. Then place in the fridge to cool completely.
Unwrap the foil before slicing or pulling apart to create chunky pieces. This seitan is now ready to put into stir-fries or toss with glaze and bake again to make the seitan a little crispy.
NOTES
This seitan is intended to be a starting point. Once you've prepared this, you can fry it, saute, glaze and bake or use another method to enhance it.
For maple glazed seitan "bacon," slice the seitan into strips. Then fry it in a little oil over high heat. Before flipping the pieces, brush on a thin layer of glaze made from one part maple syrup and one part barbecue sauce. Cook until browned or as crispy as you desire.

This hearty seitan has a dense bite and a fibrous texture which makes it perfect for stewing, grilling, stir-frying, roasting, or simply slicing up for sandwiches. It has a hearty flavour from mushroom stock and marmite that is reminiscent of beef but without the cholesterol, hormones, and that pesky killing business.
If you're new around here, you might wonder why vegetarians and vegans bother with "fake meat." To me, it's not fake. It's plant-based delicious food. In this case, the main ingredient is wheat. With this seitan, we can use lots of spice mixes, sauces, and cooking techniques that were once associated with meat in a cruelty-free way that's delicious and full of essential nutrients.
If you're avoiding gluten, avoid this recipe. There is no substitute for gluten in the recipe.

Beefy Beefless Seitan for Sandwiches, Grilling, or Stew
Makes about 3 cups cubed seitan (450g)

INGREDIENTS (US)
1 cup hot water
1/2 cup cooked kidney beans, rinsed and well-drained
1 cube mushroom bouillon (or 1 teaspoon powder)
1 teaspoon minced garlic
1 tablespoon balsamic vinegar
1 teaspoon Marmite (see notes for substitutions)
1 teaspoon onion powder
1/4 teaspoon ground black pepper
1 cup vital wheat gluten (gluten flour)
INGREDIENTS (Metric)
237ml hot water
75g cooked kidney beans, rinsed and well-drained
1 cube mushroom bouillon (or 5cc powder)
5cc minced garlic
15ml balsamic vinegar
5ml marmite (see notes for substitutions)
5ml onion powder
1.25cc ground black pepper
140g vital wheat gluten (gluten flour), about 237cc
DIRECTIONS
Blend all ingredients together except the vital wheat gluten.
In a large mixing bowl, combine the liquid with the vital wheat gluten.
Stir together until a dough forms.
Turn the dough out onto a clean surface and knead for one minute. Do not overknead. You should see the gluten strands develop and the dough should be firm and spring back easily.
Set up your steaming apparatus. Heat the water to a boil and oil the steaming basket so that the seitan doesn't stick. Place the seitan into the steamer, cover and steam over high heat for one hour. Do not let the water boil dry; check it regularly and add water if necessary.
After one hour, remove the seitan and let it cool before slicing into cubes.
This seitan can be used immediately, but the texture can be improved by searing the cubes on all sides, especially if using for stew.
In a large pan, heat a tablespoon of oil over medium high heat. When the oil is simmering, add the cubes. Cook until the bottom is brown, about thirty seconds, then turn the cubes and repeat until all the sides are nicely browned and a bit crispy.
Serve immediately, use for other dishes, or cool and store in the freezer or fridge for later use.

NOTES
After steaming, you can cool and store the seitan in an airtight container in the fridge for up to one week.
Frozen seitan will last for 2 to 3 months.
Instead of marmite, you can substitute 1 teaspoon of dark soy sauce or 1 tablespoon of miso paste.

It has a hearty flavour from mushroom stock and marmite that is reminiscent of beef but without the cholesterol, hormones, and that pesky killing business.
If you're new around here, you might wonder why vegetarians and vegans bother with "fake meat." To me, it's not fake. It's plant-based delicious food. In this case, the main ingredient is wheat. With this seitan, we can use lots of spice mixes, sauces, and cooking techniques that were once associated with meat in a cruelty-free way that's delicious and full of essential nutrients.
If you're avoiding gluten, avoid this recipe. There is no substitute for gluten in the recipe.

Beefy Beefless Seitan for Sandwiches, Grilling, or Stew
Makes about 3 cups cubed seitan (450g)

INGREDIENTS (US)
1 cup hot water
1/2 cup cooked kidney beans, rinsed and well-drained
1 cube mushroom bouillon (or 1 teaspoon powder)
1 teaspoon minced garlic
1 tablespoon balsamic vinegar
1 teaspoon Marmite (see notes for substitutions)
1 teaspoon onion powder
1/4 teaspoon ground black pepper
1 cup vital wheat gluten (gluten flour)
INGREDIENTS (Metric)
237ml hot water
75g cooked kidney beans, rinsed and well-drained
1 cube mushroom bouillon (or 5cc powder)
5cc minced garlic
15ml balsamic vinegar
5ml marmite (see notes for substitutions)
5ml onion powder
1.25cc ground black pepper
140g vital wheat gluten (gluten flour), about 237cc
DIRECTIONS
Blend all ingredients together except the vital wheat gluten.
In a large mixing bowl, combine the liquid with the vital wheat gluten.
Stir together until a dough forms.
Turn the dough out onto a clean surface and knead for one minute. Do not overknead. You should see the gluten strands develop and the dough should be firm and spring back easily.
Set up your steaming apparatus. Heat the water to a boil and oil the steaming basket so that the seitan doesn't stick. Place the seitan into the steamer, cover and steam over high heat for one hour. Do not let the water boil dry; check it regularly and add water if necessary.
After one hour, remove the seitan and let it cool before slicing into cubes.
This seitan can be used immediately, but the texture can be improved by searing the cubes on all sides, especially if using for stew.
In a large pan, heat a tablespoon of oil over medium high heat. When the oil is simmering, add the cubes. Cook until the bottom is brown, about thirty seconds, then turn the cubes and repeat until all the sides are nicely browned and a bit crispy.
Serve immediately, use for other dishes, or cool and store in the freezer or fridge for later use.

NOTES
After steaming, you can cool and store the seitan in an airtight container in the fridge for up to one week.
Frozen seitan will last for 2 to 3 months.
Instead of marmite, you can substitute 1 teaspoon of dark soy sauce or 1 tablespoon of miso paste.

VEGAN HOT DOG RECIPE
Makes 6
INGREDIENTS (US)
1 cup hot water
2 cloves garlic
1/4 cup chopped scallions (green onions)
1 cube / 1 teaspoon vegetable bouillon paste/powder
1/4 cup nutritional yeast
1 tablespoon apple cider vinegar (or your choice of vinegar)
1/4 cup cashew pieces
1 1/4 cup vital wheat gluten
INGREDIENTS (Metric)
235ml hot water
2 cloves garlic
10g chopped scallions (green onions)
1 cube / 5ml vegetable bouillon paste/powder
15g nutritional yeast
15ml apple cider vinegar (or your choice of vinegar)
30g cashew pieces
150g vital wheat gluten (aka gluten flour)*
SUPER-COMPLICATED DIRECTIONS
Blend all the ingredients, EXCEPT for the vital wheat gluten, until smooth. Transfer to a mixing bowl.
Add about a third of the vital wheat gluten flour and mix in with a fork. When it's totally incorporated, slowly add the rest of the flour until a soft dough develops. The dough should be fairly loose. Do not over mix or the dough may become overly stiff. Divide the dough into 6 even pieces.
Tear 3 pieces of aluminum foil, about 6-8 inches wide, from the roll. Cut/tear each one in half so that you have 6 wide rectangles. Grease each piece lightly with oil so that the sausages won't stick to them. Leave about an inch of ungreased space around the sides and top end (side farthest from you).
Place one piece of seitan dough in the middle of a greased foil sheet and roll up starting from the greased end closest to you, and roll up. See the video for demo. Secure the ends by twisting.
Steam the wrapped sausages over medium high heat for 45 minutes. Remove carefully with tongs.
Serve immediately or grill/fry to brown them. To store, let cool before placing in an airtight container in the refrigerator. They will keep for 5-7 days. You may also freeze the sausages.
NOTES
*Vital Wheat Gluten, also known as PURE gluten flour, is not the same as the wheat flour used in baking. It contains mostly protein and does not taste or behave the same way. This is the brand that I buy most often: http://www.bobsredmill.com/vital-wheat-gluten.html
Nutritional yeast can be found in many health food and bulk stores, as well as in many major grocery stores and online. It is NOT the same as baking yeast or brewer's yeast. If you cannot get nutritional yeast, 2 tablespoons of good quality miso paste makes a good substitute.
If grilling/frying, please be careful not to overcook. As there is not a huge fat content in these sausages, they will dry out faster than their non-vegan counterparts.

THANKSGIVING STUFFED SEITAN ROAST RECIPE
Makes 6-8 servings
INGREDIENTS
For the Dough:
1 cup hot water
2 cloves garlic, minced
1 teaspoon ginger, minced
1 cube/teaspoon vegetable bouillon powder (or use double strength vegetable broth instead of the water)
2 teaspoons onion powder
1 tablespoon poultry seasoning (herb mix containing sage, thyme, marjoram, rosemary, nutmeg and black pepper)
1 tablespoon vinegar (white, apple cider, rice, etc)
1 tablespoon sugar (or sweetener of choice)
1 1/4 cup vital wheat gluten (gluten flour)
1/4 cup chickpea flour (may substitute soy or other bean flour)
Glaze for basting:
1 tablespoon lemon juice
1 tablespoon oil or melted vegan butter (such as Earth Balance)
1 tablespoon brown sugar
1 clove garlic, minced
1/4 - 1/2 teaspoon salt
Stuffing:
1 cup worth of Classic Vegan Bread Stuffing (https://www.youtube.com/watch?v=byTDVnYEDm4)
