Moffat toffee is not a traditional toffee but a boiled sweet made in the Scottish town of Moffat.
The confection is notable for its tangy but sweet centre which gives the sweet its unusual flavour.
The Moffat Toffee old family recipe is thought to have been used for the first time commercially by present owner Blair Blacklock’s great-grandmother, Janet Cook Johnstone, around the late 19th century. The toffee was made by hand in batches of about 7 lbs (3 kilos) at the time. It was sold mainly in uncut flat rounds of varying sizes. It is still made in Moffat and over 300 kilos are made of the sweet every week. Moffat Toffee can be found in many sweet shops, garden centres and other retail outlets in Scotland including the Moffat Toffee Shop.

Moffat (Scottish Gaelic: Am Magh Fada, "The Long Plain") is a former burgh and spa town in Dumfries and Galloway, Scotland, lying on the River Annan, with a population of around 2,500. It was a centre of the wool trade and a spa town.
The Moffat House Hotel, located at the northern end of the High Street, was designed by John Adam. The nearby Star Hotel, a mere 20 ft (6 m) wide, boasted a record in the Guinness Book of Records as the narrowest hotel in the world. Moffat won the Britain in Bloom contest in 1996.
Moffat is the home to Moffat toffee.
The town is held to be the ancestral seat of Clan Moffat. The Devil's Beef Tub near Moffat was used by the members of Clan Moffat and later the members of Clan Johnstone to hoard cattle stolen in predatory raids.
From 1633 Moffat began to grow from a small village into a popular spa town. The sulphurous and saline waters of Moffat Spa were believed to have healing properties, specifically curative for skin conditions, gout, rheumatism and stomach complaints. In 1730 these were complemented by the addition of iron springs. During the Victorian era the high demand led to the water being piped down from the well to a tank in Tank Wood and then on to a specially built bath house in the town centre (now the Town Hall).

As part of his residency at the V&A;, Matt Smith visited the Spode factory site in Stoke-on-Trent. Acquired by Josiah Spode in 1776, ceramics were produced there until the factory closed in 2008 but the plaster moulds used by the factory still remain on site. Smith took casts from 31 of the moulds and assembled them into new forms. Hearing each cast as a note being sung by the formerly silent moulds meant that when brought together, the new works created a ‘soundscape’, a visual melody singing to the current state of the factory. A collaboration with composer Dimitrios Skyllas has resulted in an aural composition based on this new work.
