Confession: eggs benedict is one of my favorite brunch dishes, and after trying all the creative riffs on it (country style, crab cakes, over a waffle), I truly thought I'd seen it all. But then I found the deep fried eggs benedict, and I was demoted back into a breakfast food basic. This fried, crispy, gooey brilliance-on-a-plate puts all other benedicts to shame.
My first thought was—how is it even possible to deep fry a poached egg? (No, that's a lie, my first thought was OHMYGOD get in my mouth, but trying to maintain a sense of coolness, here). Turns out it is entirely possible, and it's exactly what our breakfast tables have been missing. Dude Foods let us in on the method: place just-poached eggs in ice water, cover in flour, an egg wash, and roll in bread crumbs, then drop them in the deep fryer. Sounds easy enough?
The end result is a crispy breading with a gooey yolk pouring out of it. Add the hollandaise and you'll basically be done for.
Not sure what it says about me that I might be more excited to wake up for this than Christmas morning.
