This moment of genius comes by way of our friend at Sally's Baking Addiction—who, in turn, learned it from Amanda Rettke, author of the fantastic book Surprise-Inside Cakes. (Both women are immensely talented, and we're big fans over here at Delish.)
The recipe for this Oreo cake is fantastic—the chocolate layers are light but deeply chocolaty—but the true genius is in the way Amanda uses the Oreos. She covers the bottom of two cake pans—each pan takes about 15 Oreos—and then she pours the chocolate batter on top. When baked, the layers come out with a full "crust" of Oreos on one side, like an upside-down cake.
What's even better: She then stacks the layers opposite each other—with a thick layer of cream in the middle—so that the Oreos are on the bottom of the cake and along the top. It, in essence, turns the entire layer cake into one giant, cakey Oreo cookie.
Her recipe is worth trying—there are chocolate chunks spread throughout the layers, and an Oreo crumble on the outside of the frosting (Amanda's book is filled with gems like this, and Sally's photos make you want to lick the screen). But you should also try this technique with your favorite cake recipe or box mix. It's the kind of trick you'll wish you thought of.
