I followed the recipes exactly but the batter was extremely dry and required that I add nearly 3/4 cup of milk. Still dry I added some more butter - about 2 melted table spoons. After baking it was still extremely dry and required something to drink while eating it. Slightly disappointing but I will try again to see if if I made a mistake.

Such a tasty and easy recipe. I had run out of the brown sugar so I substituted it with caster sugar this time and made them in little muffin pans. Taste fantastic still! Very quick and easy.

Very nice. Baked it yesterday afternoon and there's only half a loaf left! Didn't add the walnuts though...only because I didn't have any.

After reading the previous comments I used 1 cup SR flour and 3/4 cup plain and left out the bicarbonate but left in the baking powder. I also used macadamia oil instead of butter and only 2/3 cup of sugar. 160C for 45 mins ff oven. Really tasty and light. My 6 DD & 11mo loved it for afternoon tea. Seems quite a foolproof recipe with good results.

I really like this recipe. It doesn't last long at our house. The only thing I change is that I add dark chocolate chips and leave out the nuts (so the kids can take it to school).

This recipe is great! Made it for the first time. Stuck to the original recipe minus the walnuts as I didn't have any. This was delicious!!! I wouldn't change a thing. Just to confirm, in my fan-forced oven, I baked it for 1hr at 160 degrees celcius.
5lizzyf added this comment at 09:14pm Sun 12th February, 2012
Turned out fantastic. Whole family agreed it was delicious. Made a few changes - added 2 extra tsp baking powder (in addition to existing 1 tsp) to make up equivalent of 1 cup SR flour & 3/4 cup plain flour. Made it rise beautifully - nice & high. Also, as per variety of previous suggestions, cut down cinnamon & sugar a little, added extra banana & didn't bother with walnuts - added a couple of handfuls of frozen mixed berries instead (sensational!). Ended up just a little crumbly, so next time would also add an extra egg as per other suggestions. Favourite banana bread recipe ever! :o)

Nice, substituted the butter with dairy free spread. You can also add peeches or steamed pear too. If wanting to add chocolate have a look for some dairy free dark chocolate. The higher the cocoa content the less dairy milk content.

Delicious! I was determined to not have to buy any ingredients so I substituted the walnuts for a handful of saltanas. I also used 1 cup of self raising flower and 1 cup of almond meal, added an extra banana and egg (only had medium sized on hand). It was a hit with the family.

I have had the same banana bread recipe for about 20 years and this one has just replaced it as my favourite! Divine - but glad I took the advice of others and put foil over at the halfway mark. Many many thanks.

Pretty good, a little dry. I added some foil after half an hour on top to stop it burning, I would perhaps add some more liquid next time. http://www.hoangmccourt.com/garysblog/2011/07/sunday-morning-breakfast/

This is a beautiful, moist bread (more like cake really). I did have to cover with foil half way through cooking to avoid over browning on top. Tastes great fresh out of the oven with honey drizzled over. I used ground hazelnuts instead of pecans which tasted wonderful. Best banana bread i have made by far!

I had some dates sitting in my cupboard so i added a handful of them to the recipe. Tasted great and some of my friends have asked for the recipe. Some have said if you leave the cinnamon out you can really taste the banana.

I used 1 cup s.r and 3/4 cup plain flour as others recommended. also ran out of baking paper and used aluminium foil instead and had no problems, used normal brown sugar as it was all I had in the cupboard.great for lunch boxes and snacks

I substituted the plain flour for Orgran Gluten Free flour as I have a gluten allergy and the recipe still turned out fanastic, really moist and absolutely delicious. Some members had remarked that it browned quicker on top than it cooked in he middle so I put my loaf tin lower in the oven and that way I didn't have to cover it to stop the browning process. Best banana bread ever!

This is the best banana bread recipe i've made. It doesn't turn out stodgy and heavy but i was quite careful not to overmix. I added a chopped up block of chocolate to the mix which was really nice. It would be great with nuts but then the kids wouldn't be able to take it to school so no nuts this time!

This recipe is great! I have made it numerous times and everyone always loves it and asks for the recipe. Although I do make a minor adjustment. I use natural pistachios (de-shelled and crushed) in place of walnuts. I think this gives it an amazing flavour and a touch of colour! Making it all the more enjoyable :D

This banana bread is YUM! I took everyones advice and used 1 cup SR and 3/4 plain and it rose beautifully. I used 4 bananas and extra large eggs. Mine took an hr and a half to cook. Top started to brown half way through and inside still raw so covered top with foil. It is super moist and super flavoursome. My hubby loved even though he hates anything made with banana. Will be making again and again. Especially nice to take to a morning tea with family and friends!

YUM! This was fantastic, i did as others suggested and used 1C SR flour and the rest plain and used 4 bananas. I received many complements

This was TERRIBLE! I followed the recipe but added one extra banana and finally took it out of the oven after 90 mins and it STILL wasn't cooked. The outside was really tough and the inside was gooey and uncooked. I can't figure out what went wrong, I have a new, fan-forced oven and I'm normally pretty handy at baked goods. There just doesn't seem to be enough flour in this recipe. Never again!

    michele3011 replied at 08:01am Sat 24th April, 2010
The extra banana would have made it significantly more moist, hence the need for extra flour and a longer cooking time.
    Jojo9 replied at 01:47pm Sun 1st August, 2010
If the fan was on while this was cooking, it may have caused the outside of the loaf to cook faster, while the inside remained raw. I always turn the fan off for baking - good for roasting, though.

I altered this quite a bit; I eliminated the sugar completely and replaced it with 1/2 cup sour cream and a couple of spoons of honey. Results in a nice moist cake. Agree that SR flour would help it rise more, but still tastes fab.

I took some of sfigroupie's suggestions and used 1 cup self raising flour to 3/4 cup of plain, used x-large eggs and I used 10 small bananas. I did use mixed spice though instead of cinnamon and added sultanas (as others did) and slivered almonds. I made a double batch also as I wanted to take some of it to work for morning tea and save some for my banana bread mad partner. It was surprisingly easy and very delicious and I will definitely make it again.

This is the second time I've made this. With the addition of an extra banana, 1/3 cup of canola oil, nutmeg, vanilla essence and a small sprinkling of sultana's it turned out alot better. I also whisked the liquid mixture quit a bit by hand and sieved the flour & demerera sugar twice. It turned out so much lighter and moister. Also mine took over an hour, but then I do have an old oven which takes longer to cook everything. Will make this again for a nice mid morning snack :)

This recipe was a great starting point, I read what other people had to say and since then have made loads of variations on this recipe. Tip 1: Definitely use self raising flour. I mainly do 1cup SR & 3/4cup plain. Tip 2: Use larger eggs. Recently I tried massive eggs, they had a fantastic result, it was my best banana bread so far. Tip 3: don't only try walnuts. I have tried almonds and choc chips and sometimes both together. I love toasting slices of this bread under the grill with butter yummo....

Great recipe! I used 4 bananas as suggested, and had to cook the bread for almost an hour and a half (due to an old electric oven), but it came out beautifully. The bread was nicely moist, and the walnuts provided a nice crunch, I also sprinkled some sliced almond over the top, before placing it in the oven, for decorative purposes. Cooked for guests (as I don't eat banana bread!) and have had requests for the recipe and for it to be baked again =) Highly recommended!

Great banana bread! My husband doesn't get excited about new recipes/food etc, but this banana bread got a "wow, this is really good" - without prompting too! Will be saving this recipe. I didn't have walnuts this time and substituted with sultanas and was fine. I think I finally discovered the secret of banana bread tho....really over ripe bananas.

This banana bread turned out just like they have in the cafes. It was dense and moist and super easy to make. The added walnuts make this banana bread stand out. Thanks Taste.com.au!

Yummie!!! Madethis for my nephew who loves banana bread and buys it all the time....he said it was just as good and better...super easy to make, I did add 1 extra banana as suggested and sprinkled the top with cinnamon sugar before baking...will be making this all the time..but will have to make 2 loafs, one for my nephew and one for the rest of the family.....mmmmm

Unfortunatley i undercooked mine. At 50mins of baking i tested it with a skewer and it came out clean but when it came time to cut it still had a slightly doughy centre. But it still tasted great. Next time i'll know to leave it in just that little extra

Absolutely delicious! A perfect, dense, cafe style banana bread. Will just add a little more brown sugar next time, or an extra banana. Next time I will make two loaves, one to freeze!

Best banana bread i've ever made. My ovens a little old so needed over the hour, and was still a little undercooked. But, nonetheless..fabulous recipe!

One word, DELICIOUS ! Very easy to make and very, very tasty... we fought for the last slice. I was recently at a cafe that served banana bread with philly cheese and then a spread of jam, so I tried it with this and it was gorgeous! Will definitely be making this again.

I used White Wings gluten free plain flour and it worked. It didn't rise as much as the one in the picture but that seems to be normal for GF. I'd probably reduce the amount of baking power as it has left an aftertaste. Other than that, it was spot on. It was SO NICE to have banana bread again! I've missed it!

I am normally a terrible baker, probably because I don't follow the recipe 100%. But I followed this recipe to 99% and it was wonderful! Would make this again very soon.

this has to be the best thing i have ever tasted!!! i just used normal brown sugar and didn't find it very sweet at all, and i used 4 large bananas, and next time would use another one. tasted fantastic hot out of the oven with butter! i always take a baked good to work on fridays and this week i made the banana bread, everyones eyes were bulging out of their heads at how good it tasted... we even had people hiding it, cause they wanted to eat it all to themselves!!! truly amazing, you must try it!!!! 5 star recipe indeed!

Great recipe - it may be little too sweet for some people's liking. Avoid firmly packing in the sugar when measuring it (as suggested previously by someone else) if you don't have such a big sweet tooth. Overall, extremely easy and the smell of the cake baking is just heavenly!

So easy. So yummy. I always make it with the intention of freezing it for lunchboxes but it disappears before I get a chance. I use half a cup of brown sugar as it is naturally very sweet.

I made this last week, it was delicious, I didnt have walnuts so used pecans and extra banana also, cooked it slightly longer as well. Will definatelay make again. Tried it plain, cold, heated, with icecream and toasted with butter, all different ways were yummy!!

Another beauty (almost beats the 'delicious' hummingbird cake). I didn't have a loaf tin so made a cake version and worked perfect. I love any cake recipe that doesn't involve having to lug out the mixer so 5/5 from me! REALLY worth trying.

Made this today - but realised I had no baking powder - so I used SR flour instead. I had no walnuts and noted the macadamia nut comment - I had peanuts in the pantry so I ground a 100g of those and it worked really nicely - I dropped the sugar down to 1/2 a cup because I think ripe bananas are sweet enough. I think the macadamia's would be even nicer. Great texture.

For a little extra indulgence, I mixed 2tb brown sugar with some cinnamon to top the bread so it created a crispy sugar glaze whilst baking.

This was a very yummy and moist bread (cake). I used pecans as I also find walnuts bitter. I didn't find the cake too sweet - after reading other reviews I just measured out the brown sugar and didn't firmly pack it down. Just a hint - whenever I have bananas that get too ripe and I don't have time to use them, I place them in a freezer bag and freeze them. Then, when I need very ripe bananas for a recipe I thaw them out. Next time I cook this recipe I'll use macadamia nuts - just like they do in Hawaiin banana bread.

The second time I made this I made these changes. Wholemeal flour for plain flour. Chinese five spice powder for cinnamon.(a very good substitute) 1.5 tsp baking powder. 1 cup brown sugar. 4 bananas. Used a mixture of pecans and almonds in place of walnuts. Nuts are a must in this bread, I reckon. Next time, I will add some almond meal, as in 1 cup flour, 0.5 cups almond meal.
