Lining cake pans correctly is an essential step to making perfect cakes.

Tip 1:

To line round pans, cut a wide strip of baking paper long enough to fit around pan. On 1 long side, fold a 5cm crease into paper. Cut up to this fold at 2cm intervals. Lightly grease base and side. Line side with the strip. Use base as a guide to cut out a circle of baking paper. Line base with circle, covering cut pieces.

Tip 2:

To line square, loaf or lamington pans, grease base and sides. Cut 2 pieces of baking paper, allowing extra for overhang (to help lift out cake). Line pan with paper, making sure corners are covered.
