Step 1:

Run a small sharp knife along the orange to remove rind. Remove the pith. Cut the rind into thin strips.

Step 2:

Blanch the rind then add to sugar syrup. Simmer for 5-10 minutes or until the rind is slightly glassy.

Step 3:

Place a sheet of non-stick baking paper, or a wire rack, over a baking tray. Use tongs or a slotted spoon to transfer the rind from the syrup to the baking paper or wire rack. Set aside to cool and harden.
