Step 1
Halve oranges and cut across into 1/2cm thick slices.

Step 2
Cook orange slices in simmering water for 30 seconds, drain and repeat 2 more times.

Step 3
Bring 1 cup water and 1 cup of sugar to a gentle simmer, add oranges and cook for 10 minutes. Drain oranges on a rack in a warm place or a low oven overnight to dry.

Step 4
Melt good quality dark chocolate in a bowl set over a saucepan of boiling water, dip orange slices in chocolate, let set and serve.
Choose oranges with rich, unmarked glossy skin.
