Crab meat or crabmeat is the meat found within a crab. It is used in many cuisines across the world, prized for its soft, delicate, sweet taste. Brown crab (Cancer pagurus), blue crabs (Callinectes sapidus), blue swimming crabs (Portunus pelagicus), red swimming crabs (Portunus haanii) are among the most commercially available species of crabmeat globally. In some fisheries, crab meat is harvested by declawing of crabs. This is the process whereby one or both claws of a live crab are manually pulled off and the animal is then returned to the water. The practice is defended because some crabs can naturally autotomise (shed) limbs and then about a year later after a series of moults, regenerate these limbs. It is argued that declawing therefore provides a sustainable fishery, however, declawing can lead to 47% mortality and negative effects on feeding behaviour. Furthermore, once separated from the body, the claws will start to degenerate—usually, crabs are cooked moments after capture.
Crabs are decapod crustaceans of the infraorder Brachyura, which typically have a very short projecting "tail" (abdomen) (Greek: βραχύς / brachys = short,οὐρά / οura = tail), usually entirely hidden under the thorax. They live in all the world's oceans, in fresh water, and on land, are generally covered with a thick exoskeleton and have a single pair of claws. Many other animals with similar names – such as hermit crabs, king crabs, porcelain crabs, horseshoe crabs and crab lice – are not true crabs.
Crabs are generally covered with a thick exoskeleton, composed primarily of calcium carbonate, and armed with a single pair of chelae (claws). Crabs are found in all of the world's oceans, while many crabs live in fresh water and on land, particularly in tropical regions. Crabs vary in size from the pea crab, a few millimetres wide, to the Japanese spider crab, with a leg span of up to 4 metres (13 ft).
About 850 species of crab are freshwater, terrestrial or semi-terrestrial species; they are found throughout the world's tropical and semi-tropical regions. They were previously thought to be a monophyletic group, but are now believed to represent at least two distinct lineages, one in the Old World and one in the New World.
Meat is animal flesh that is eaten as food. Humans are omnivorous, and have hunted and killed animals for meat since prehistoric times. The advent of civilization allowed the domestication of animals such as chickens, sheep, pigs and cattle, and eventually their use in meat production on an industrial scale.
Meat is mainly composed of water, protein, and fat, and is usually eaten together with other food. It is edible raw, but is normally eaten after it has been cooked and seasoned or processed in a variety of ways. Unprocessed meat will spoil or rot within hours or days as a result of infection with and decomposition by bacteria and fungi.
Most often, meat refers to skeletal muscle and associated fat and other tissues, but it may also describe other edible tissues such as offal.Meat is sometimes also used in a more restrictive sense – the flesh of mammalian species (pigs, cattle, lambs, etc.) raised and prepared for human consumption, to the exclusion of fish, other seafood, poultry or other animals.

Removing meat from a crab is not as daunting as it looks. This video shows you how to do it with a spoon, a sharp heavy knife and your hands. Have a look at some delicious recipes that use crab http://togbc.com/crabrecipes Once cooked, remove the crab from the water and leave to cool completely before removing any meat. In the body of the crab, claws and legs it is mainly white meat with the brown meat found in the outer crab shell. When cracking the claw of the crab try not to crush the claw completely, as it is possible to remove the claw meat whole. Here I perform an instant kill and quickly clean the crab meat away from the carapace and guts. This allows me to steam instead of boil. This helps by reducing the time required to heat the water since I don't need nearly as much, plus I can fit more crab in there!
Try my delicious imitation crab salad for your next big party and watch it disappear; best served with a side of lemons and fresh sliced fruits.

Cleaning crab meat from blue crabs can be challenging, but is usually rewarded in the end. All I can recommend is to make sure and check the meat for any shells that may have gotten in there. Blue crabs are really good and are able to be caught in many locales. They can also be purchased from areas that are closer to the water as they really should be taken alive. 00:01 Getting everything together before you get started 01:46 - Removing the claws - remember this video is focused on removing all the crab meat in order to make crab cakes. If you want to leave the claws on and just take off the top and clean the insides then just move on to the appropriate steps. 02:57 - Removing the top crab shell and the insides of the blue crab. This is done at the same time during the entire process. ...
