Get all the details of Ethiopian gomen be siga here: http://migrationology.com/2014/01/gomen-be-siga-ethiopian-food/
There are lots of amazing things to eat when you visit Ethiopia, and one of the dishes I fell in love with was gomen be siga. Gomen is collard greens, and siga is beef, so together the dish is basically just collard green mixed with beef, but it's so much more tasty than that sounds.
You can find Ethiopian gomen be siga at many Ethiopian restaurants, but the best version I had was at the 7 Olives hotel in Lalibela, it was just simple and wonderful. It's not always served on a "derek" or a flaming ceramic hot plate, but this time it was, and that also made it extra good as the meat and vegetables were sizzling hot for my entire meal. The mix included small chunks of beef along with collard greens, onions, carrots, some cabbage, lots and lots of garlic, and finally a hefty amount of butter to cook it all in and wrap things up. I have to admit that this particular version was quite greasy and oily from all the butter they used, but at the same time, it was amazingly flavorful.
After a few bites of the gomen be siga, I decided to sample it with some awaze chili paste. And I'm very glad I did, because the awaze provided that extra kick of chili and flavor with the beef and collard green needed. Along with pieces of injera, beef, green, and awaze chili, the gomen be siga was amazing!
So there are plenty of wonderful Ethiopian foods to try when you visit, one of them is gomen be siga, with is very tasty.

There are not many Ethiopian sweets or desserts, but Pasti is for sure one of them. These sweet doughnuts are a firm favourite in Ethiopia. Give them a go and check out the video.
1 kg Plan Flour ( 2.2 Ilbs)
1 Tablespoons Sugar
2 Teaspoons Salt
2 Teaspoon Yeast
1 Teaspoon Baking Powder
1 1/2 to 2 pints Warm Water ( Just under 1 Litre )
200ml Olive Oil (US Cups just under 1)
And Oil for frying.
01 - Start by adding the yeast in a small bowl and mix with a little of the water, let it sit for 3 mins.
02 - In a larger bowl mix the olive oil, sugar, yeast, salt and 3/4 of the water.
03 - In a smaller bowl, just like we done with the yeast, add the baking powder and a little water, mix and set aside.
04 - Now you will need a big mixing bowl, add the flour and the baking powder and slowly add the yeast and oil water. You need to mix this and kneed for about 10 mins.
05 - Now we need to cover with a lid, a damp cloth or plastic wrap and leave in room temp for 2 hours.
06 - We now need to get our oil hot, you can use any type you wish for the frying. The oil needs to be hot but not super hot, we are not making french fries. If the oil is too hot we will end up with the past burnt on the outside and sticky in the middle.
07 - Form the dough into any size you please, the larger the more chance they will not cook in the middle. Now dust them with flour before you add them to the oil.
Depending on the size you need to cook these for around 6 mins as per the ones in the video

Gored gored is a raw beef dish eaten in Ethiopia. Like kitfo, it is widely popular and considered a national dish. Gored Gored is often served completely raw in chunks with injera, awaze (Chilli sauce), sanifitch (mustard) and lemon wedges. The fat is often left on and eaten. Gored Gored can also be made mixed with melted Nitre Kibbeh (Ethiopian Butter), salt and Mitmita (Chilli powder). Raw meat dishes are rare (excuse the pun), but there are several from around the world, that include….Ossenworst (English: ox sausage) is a raw beef sausage originating in Amsterdam. Bistec alemán or Crudo alemán (Crudo is Spanish for raw) is a typical German-Chilean dish similar to a steak tartare. It is made by putting finely chopped raw beef mince onto a piece of pre-sliced white bread and then adding lemon juice, chopped onions and a sauce made of yogurt and mayonnaise. Kachilaa (Newari/Nepali:कचिला) is a special meat delicacy of Newars, consisting of marinated raw minced water buffalo meat. Tiger meat is a raw beef dish. Recipes vary, but common ingredients include: raw beef, raw egg, onion, salt, pepper, and other seasonings. Preparation involves simply mixing the ingredients together in a bowl, and then serving it on crackers. It is closely related to steak tartare, and is common in Midwestern US states with significant German populations, such as North Dakota, South Dakota, Wisconsin and Minnesota. Yukhoe is a variety of hoe (raw dishes in Korean cuisine), which are usually made from raw ground beef seasoned with various spices or sauces. It is basically a Korean steak tartare. Usually the most tender part of beef will be used. The beef is thinly julienned with the fat removed, then mixed with seasoning.
Steak tartare is a meat dish made from finely chopped or minced raw beef. It is often served with onions, capers and seasonings (the latter typically incorporating fresh ground pepper and Worcestershire sauce), sometimes with a raw egg yolk, and often on rye bread. The name tartare is sometimes generalized to other raw meat or fish dishes. As part of the HOW TO COOK GREAT NETWORK -

Admit is a wonderful healthy drink, made in many way this hot winter drink is drank all over Ethiopia. Children and adults alike enjoy it. Atmit is a nutritional supplement used to fight famine in impoverished countries. The creamy, nutritious food is indigenous to Ethiopia and is now used to feed the severely malnourished and weakened adults and children. The word atmit originated in Ethiopia and refers to a kind of "thin, nourishing porridge." Traditionally, Atmit can contain over 20 different cereals and recipes can vary widely. Atmit is made from rolled oats, powdered milk, powdered sugar, vitamins, and minerals. It is easily digestible, high in protein and calorie content. Since severely malnourished people cannot eat solid food, atmit is an ideal way to get them essential nutrients. Marta Gabre-Tsadick, the first woman Senator from Ethiopia and the co-founder of Project Mercy, Inc., a Christian relief organization, adapted the recipe for production in the USA for shipment to Ethiopia and other African countries. During 1985 and 1986, Project Mercy sent 930 tons of atmit to Ethiopia, where World Vision relief workers used it to prepare millions of meals which they distributed among people weakened from the famine - As part of the HOW TO COOK GREAT NETWORK -

Carrots, cabbage, ginger, garlic, olive oil, pasta make up the mix. Great for Fasting or if you are vegan. Please enjoy. We will cook the Kosta or collards green first then set aside and once the other vegetables are done we will mix them together.
